SAUSAGE AND SAUERKRAUT
This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

Steps:
- Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
- Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
- Bake in the preheated oven until bubbling, about 1 hour.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Combine sauerkraut, tomatoes, sugar, bacon, and black pepper in a 9x13 inch casserole dish.
- Bake in a preheated 325 degrees F (165 degrees C) oven for 2 hours and 15 minutes. When finished cooking it should be bubbly around the edges and caramelized on top.

A wonderful twist on sauerkraut. A great side dish that goes with so many dishes. I do cut back on the brown sugar. I think it's a little too sweet with the whole cup.

- In a large skillet cook the bacon until crisp. Remove to paper towels and saute the onion in the drippings.

Steps:
- Combine the seasoning mix ingredients in a small bowl.
- Heat the oil in a 6 quart pot over high heat just until the oil begins to smoke, about 4 minutes.
- Add the onions and cook, stirring occasionally, until they start to brown, about 8 minutes.
- Stir in the cabbage, apples, garlic, and ginger and cook, stirring frequently, for 4 minutes.
- Add the vinegar and scrape up all the brown bits on the bottom of the pot.
- Stir in the wine, brown sugar, and the seasoning mix.
- Cover, reduce the heat to medium, and cook, stirring occasionally, until the cabbage is tender and cooked down very well, about 25 to 30 minutes.
- Can be served hot or cold, almost anytime, almost anywhere.
