BEER-BATTER CHICKEN FINGERS



Beer-Batter Chicken Fingers image

A delicious finger food. Eat your's first 'cuz the mob will devour the rest without saving any for the cook.

1 cup flour
1 cup beer
1/2 cup water
1 egg yolk
1 egg white, beaten until stiff
2 chicken breasts, skinless,boneless,cut into large strips
1/4 teaspoon salt
2 tablespoons Worcestershire sauce
2 tablespoons your favorite hot sauce
peanut oil (for deep frying)

Steps:

  • Mix together flour and salt.
  • Add the beer.
  • Using a whisk, mix well and then add water and mix until smooth.
  • Add the egg yolk and mix well.
  • Add the beaten egg white and mix well.
  • Place into refrigerator for at least 2 hours.
  • Mix the Worcestershire sauce and hot sauce together and add chicken strips.
  • Allow chicken to marinate for at least 10 minutes.
  • Roll chicken in your batter.
  • Deep fry until golden brown, then drain on a paper towel.
  • Serve with your favorite dipping sauce.

1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/8 teaspoon salt
1/2 lb chicken breast tenders
1/4 cup fresh cilantro stem
2 tablespoons parsley sprigs
2 tablespoons blanched slivered almonds
1/2 garlic clove
1/2 serrano chili pepper, seeded (wear plastic gloves when handling)
1/16 teaspoon salt
1 tablespoon lime juice
1 tablespoon extra virgin olive oil
1 tablespoon water
1 sprig fresh cilantro, for garnish

Steps:

  • Coat a grill rack or broiler-pan rack with cooking spray. Preheat the grill or broiler.
  • In a cup, combine the chili powder, cumin, and salt. Cut two 1/2"-deep slashes in each side of the chicken tenders. Rub
  • the spice mixture over the chicken, pressing it into the slits. Place the chicken in a baking pan and coat completely with cooking spray. Let stand for 10 minutes.
  • In a food processor, combine the cilantro, parsley, almonds, garlic, chile pepper, and salt. Process until chopped. While
  • the processor is running, add the lime juice and oil through the feed tube, stopping the machine once or twice to scrape
  • down the sides of the container, until the sauce is smooth. Pour the sauce into a bowl. Stir in the water, cover, and chill until ready to serve.
  • Place the chicken on the prepared rack and grill or broil 6" from the heat, turning several times, for 15 minutes or until a thermometer inserted in the thickest portion registers 170°F and the juices run clear. Serve with the sauce and garnish

My son LOVES these! I found it on wholesomebabyfood.com and I am posting it here for safe keeping. These are really simple to make, don't cost a lot and kids will inhale them! They are recommended for babies that are 6 months and older, but they also advise speaking to your pediatrician before starting your baby on solids. Also, remember to follow the RULE OF FOUR (wait 4 days after introducing new foods) and make sure your baby has had no allergic reactions to any of the foods in this recipe before serving it!

1 (16 ounce) package frozen broccoli, cooked, drained and chopped
1 cup seasoned bread crumbs (I used store bought crumbs but you could probably use homemade)
1 1/2 cups real cheddar cheese, shredded (avoid using processed cheese food)
3 large eggs (check with your pediatrician before feeding eggs to a baby under 1 year or see note at end of recipe) or 5 egg yolks (check with your pediatrician before feeding eggs to a baby under 1 year or see note at end of recipe)

Steps:

  • Preheat oven to 375.
  • Lightly coat a baking sheet with olive oil and set aside.
  • Combine all remaining ingredients and mix well.
  • Before mixing, add seasonings if you like - garlic powder, pepper, basil & oregano for example.
  • Shape mixture into nuggets or fun shapes such as squares or squigglies etc.and place on baking tray.
  • Bake for 20 to 25 minutes, turning nuggets over after 15 minutes. Serve warm.
  • Be sure to crumble these if your baby needs.
  • (Note: If your baby cannot have eggs, you can substitute a jar of vegetable puree. Carrot works well).
  • These may also be frozen for up to a week. Reheat in oven the same way you prepared them and allow plenty of time to cool before serving them to your little one.

Crispy Chicken Fingers With Ontario Apple

Have fun with your food with fresh roasted apple fries and cornflake crusted chicken fingers. Kids will love preparing the 'fries' and coating the chicken. Serve in rolled newspaper for an authentic 'chippy' feel.

2 cups apple cider, 500 ml
2 tablespoons butter, 30 ml (or non-hydrogenated margarine)
1 teaspoon coarse salt (optional)
4 apples, peeled, cored and cut into 8 wedges (Empire or Spy)
1 tablespoon chopped fresh thyme, 15 ml
1 cup crushed corn flakes, 250 ml (or crushed whole grain flakes)
1/2 teaspoon salt (optional)
2 tablespoons chopped fresh parsley, 30 ml
1 lb chicken breast, sliced into strips 500 g
2 tablespoons sweet chili sauce, 30 ml

Steps:

  • In large saucepan over medium-high heat, boil cider until reduced to 1/3 cup (75 mL), about 20 minutes (will have a syrupy consistency). Remove from heat; whisk in butter and salt.
  • Preheat oven to 400 F (200 C). In bowl, toss apples with 2 tbsp (30 mL) of the glaze and 1/2 tbsp (7 mL) of thyme. Arrange in a single layer on a rimmed baking sheet. Set aside.
  • In bowl combine corn flake crumbs, salt and parsley. Set aside. Dip chicken strips in sweet chili sauce and then coat with corn flakes. Arrange in a single layer on a greased baking sheet.
  • Place chicken on the top third and the apples on the bottom third of the oven. Roast for 10 minutes. Turn chicken, drizzle apples with remaining glaze and switch baking sheets so the apples are now on the top third of oven. Continue to roast for 10 minutes and remove chicken from oven. Let chicken fingers cool while apples finish caramelizing, about 5 to 10 minutes more.
  • Sprinkle apples with remaining thyme and additional salt if desired.

  • Peel and grate the carrot, apple, garlic and onion.

  • Add the beaten egg yolk, breadcrumbs, thyme and black pepper. Mix well.
  • Take small balls of the mixture and roll into 8 little "sausages".
  • Place on a grill pan (broiler) and heat under the grill for 10 mins on each side.
  • Allow to cool.
  • Serve, or store some in the freezer for future use (if you haven't already eaten them!).
  • Younger babies may need them broken into smaller pieces or even mashed a bit before serving.
