- In a large skillet, saute mushrooms in 1 tablespoon oil until lightly browned; remove with a slotted spoon and set aside. In the same skillet, saute spinach in remaining oil until wilted. Remove from the heat., Spread bread slices with salad dressing and top with a cheese slice. Layer 4 slices with mushrooms, spinach and sauerkraut. Top with remaining bread. Butter outsides of sandwiches., In a small skillet over medium heat, toast sandwiches for 2-3 minutes on each side or until cheese is melted.

- Preheat the oven's broiler.
- Arrange cocktail rye slices on a baking sheet. Top each one with about 2 teaspoons of thousand island salad dressing, then fold about 1/2 slice of corned beef to fit the bread, and lay over the dressing. Place a small amount of sauerkraut over the meat, then top with 1/4 slice of the Swiss cheese, or a slice about as big as the bread.
- Broil for 3 to 5 minutes, until cheese is melted. Serve warm.

- In a bowl, mash corned beef with a fork until fairly smooth; Stir in cheese, sauerkraut and mayonnaise mixing well.
- Separate dough; Stretch and pat a piece of dough into a 4" circle; Place 1 tablespoon corned beef mixture on one side of the circle; Brush the edges of the circle with egg white; Fold dough circle over filling, pressing edges to seal; Crimp the edges with a fork; Place on a lightly greased cookie sheet; Just before baking recrimp edges with a fork to strengthen seals.

- Preheat oven to 350 degrees.
- Place the slices of bread on 2 baking sheets that have been covered with aluminum foil Spread the dressing evenly over the bread.
- Divide the corned beef evenly over 4 slices bread.
- Divide the sauerkraut evenly over the remaining 4 slices of bread.
- Place a slice of Swiss cheese over each piece of bread.
- Bake 8-10 minutes until cheese is melted and the corned beef is hot.
- Carefully invert a sauerkraut slice on top of each corned beef slice and cut in half.
- Serve immediately.

- Real Talk: The key to getting a big, light, puffy rise is to make sure the flour is thoroughly incorporated into the egg mixture. Whisk your arm off until zero, absolutely zero, clumps remain.
- Place a 10" cast-iron skillet in oven; preheat to 425°. Whisk eggs, milk, and 1 tsp. mustard in a medium bowl until smooth. Whisking constantly, gradually add flour, whisking until smooth; season with salt. Stir in half of cheese and ½ tsp. pepper.
- Carefully remove preheated skillet from oven and add butter; swirl skillet to coat. Drape half of pastrami into skillet (it’s okay if it bends and folds over itself); season with salt and pepper. Pour egg mixture over. Return skillet to oven and bake until Dutch baby is puffed and golden brown, 12–15 minutes.
- Remove skillet from oven and heat broiler (do not fear the broiler). Drape remaining pastrami over Dutch baby; top with remaining 2 oz. cheese. Broil until cheese is melted, about 3 minutes.
