Dark pumpernickel rye, heaped corned beef, drained sauerkraut and imported Swiss cheese make this sandwich something special.

¼ pound thinly sliced corned beef
3 ounces sauerkraut, drained

Steps:

  • Place bread on baking sheet or broiling pan. Layer corned beef, sauerkraut and cheese on top of bread slices.
  • Broil on high heat for 3 to 4 minutes, until cheese has melted. Serve hot with Thousand Island dressing.

1 package (6 ounces) sliced baby portobello mushrooms
2 tablespoons olive oil, divided
1 package (6 ounces) fresh baby spinach
8 slices marble rye bread
1/4 cup prepared Thousand Island salad dressing
8 slices process Swiss cheese
1 cup sauerkraut, rinsed and well drained
2 tablespoons butter, softened

Steps:

  • In a large skillet, saute mushrooms in 1 tablespoon oil until lightly browned; remove with a slotted spoon and set aside. In the same skillet, saute spinach in remaining oil until wilted. Remove from the heat., Spread bread slices with salad dressing and top with a cheese slice. Layer 4 slices with mushrooms, spinach and sauerkraut. Top with remaining bread. Butter outsides of sandwiches., In a small skillet over medium heat, toast sandwiches for 2-3 minutes on each side or until cheese is melted.

1 (1 pound) loaf cocktail rye bread
1 cup thousand island dressing
1 ½ pounds deli sliced corned beef
1 (16 ounce) jar sauerkraut, rinsed and well drained
1 pound sliced Swiss cheese

Steps:

  • Preheat the oven's broiler.
  • Arrange cocktail rye slices on a baking sheet. Top each one with about 2 teaspoons of thousand island salad dressing, then fold about 1/2 slice of corned beef to fit the bread, and lay over the dressing. Place a small amount of sauerkraut over the meat, then top with 1/4 slice of the Swiss cheese, or a slice about as big as the bread.
  • Broil for 3 to 5 minutes, until cheese is melted. Serve warm.

6 ounces corned beef
1/4 cup mayonnaise
3/4 cup shredded swiss cheese
2 (10 count) cans refrigerated biscuits
1/2 cup well-drained sauerkraut
1 egg white, beaten

Steps:

  • In a bowl, mash corned beef with a fork until fairly smooth; Stir in cheese, sauerkraut and mayonnaise mixing well.
  • Separate dough; Stretch and pat a piece of dough into a 4" circle; Place 1 tablespoon corned beef mixture on one side of the circle; Brush the edges of the circle with egg white; Fold dough circle over filling, pressing edges to seal; Crimp the edges with a fork; Place on a lightly greased cookie sheet; Just before baking recrimp edges with a fork to strengthen seals.
  • Bake 400 degrees for 8 to 10 minutes until golden brown.

1/2 cup thousand island dressing
1 lb sliced deli corned beef
1 (27 ounce) can sauerkraut, well drained
8 slices swiss cheese, long (12 ounces total)

Steps:

  • Preheat oven to 350 degrees.
  • Place the slices of bread on 2 baking sheets that have been covered with aluminum foil Spread the dressing evenly over the bread.
  • Divide the corned beef evenly over 4 slices bread.
  • Divide the sauerkraut evenly over the remaining 4 slices of bread.
  • Place a slice of Swiss cheese over each piece of bread.
  • Bake 8-10 minutes until cheese is melted and the corned beef is hot.
  • Carefully invert a sauerkraut slice on top of each corned beef slice and cut in half.
  • Serve immediately.

1 tablespoon ketchup
1 tablespoon sweet pickle relish
Coarse salt and ground pepper
1 tablespoon butter
8 slices rye sandwich bread
1/2 pound sliced corned beef
1 1/3 cups Quick Sauerkraut
4 ounces sliced Swiss cheese

Steps:

  • In a small bowl, combine mayonnaise, ketchup, and relish; season with salt and pepper. Set aside. Butter bread; place, buttered side down, on a work surface. Spread 4 slices with mayonnaise mixture; top with corned beef, sauerkraut, and cheese. Sandwich with remaining bread, buttered side up.
  • In 2 batches, cook sandwiches, covered, in a large skillet over medium-low, until bread is golden brown and cheese is melted, 2 to 3 minutes per side.
