MINI BACON WRAPPED MEATLOAF



Mini Bacon Wrapped Meatloaf image

Classic comfort food gets a major flavor upgrade! Bacon-wrapped meatloaf starts with a blend of ground beef, breadcrumbs and seasonings that are covered with bacon, brushed with a sweet ketchup glaze, and baked until crisp on the outside and tender on the inside!

1 tablespoon olive oil
1 cup chopped yellow onion
1 clove garlic, minced or pressed
2 tablespoons chopped fresh parsley ((or 2 teaspoons dried parsley flakes))
½ teaspoon chopped fresh thyme leaves ((or ¼ teaspoon dried thyme))
2 teaspoons kosher salt
½ teaspoon ground black pepper
1 tablespoon Worcestershire sauce
2 lbs. ground beef ((I use 85% lean))
½ cup plain dry breadcrumbs
⅓ cup milk
2 large eggs, lightly beaten
¼ cup ketchup
1 tablespoon light brown sugar
1 teaspoon cider vinegar
6 slices center-cut bacon (not thick-cut)

Steps:

  • Preheat oven to 400°F.
  • Heat olive oil in a skillet over medium-low heat. Add the onion, garlic, parsley, thyme, salt and pepper. Cook, stirring frequently, until the onions are translucent (about 7-10 minutes). Remove from the heat and stir in the Worcestershire sauce. Set aside to cool slightly.
  • In a large bowl, use a fork to gently combine the ground beef, onion mixture, breadcrumbs, milk and eggs.
  • Divide the mixture into 6 equal portions and shape into oval balls. Wrap each ball with one strip of bacon.
  • Arrange bacon-wrapped meatloaves on a parchment-lined or foil-lined rimmed baking sheet that has been lightly coated with nonstick spray.
  • In a small bowl, stir together ketchup, brown sugar and vinegar. Brush a light coating of the ketchup mixture on top of each meatloaf, reserving extra glaze for later.
  • Bake until the fat from the bacon has rendered, about 20 minutes.
  • Increase the oven temperature to 425°F. Brush meatloaves with remaining ketchup mixture. Continue to bake until the meatloaves are cooked through and the bacon is crisp, about 15 more minutes. If using an instant-read thermometer, the meatloaves should reach an internal temperature of 155-160°F. Serve hot.

This is a recipe my dad has been making for years. Great for the cheese and bacon lover-- it's a huge hit with crowds, even kids! And it's a great comfort food!

2 pounds ground beef
2 eggs
2 tablespoons ketchup
1 cup dry bread crumbs
1 tablespoon Parmesan cheese
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon ground black pepper
1 small yellow onion, diced
6 slices bacon
8 ounces sharp Cheddar cheese, cut into quarters
1 tablespoon ketchup

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. Lay 3 of the 4 pieces of Cheddar cheese across the center of the meat, lengthwise. Cover the cheese with the second half of the meat mixture and mold the meat into a loaf shape. Pull the ends of the bacon up and around the loaf. Spread 1 tablespoon of ketchup thinly over the loaf.
  • Bake in the preheated oven until no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven.
  • Cut the final piece of Cheddar cheese into slices and place on top of the meat loaf. Return the meat loaf to the oven and continue baking until the cheese is melted, about 5 minutes. Remove from the oven and allow the meat loaf to rest for 5 minutes before serving.

1 medium onion, finely chopped (1 cup)
2 garlic cloves, finely chopped
1 tablespoon olive oil
1 cup fresh bread crumbs (from 2 slices firm white sandwich bread)
3/4 cup whole milk
2 large eggs, lightly beaten
3 tablespoons finely chopped fresh flat-leaf parsley
1 1/2 tablespoons Worcestershire sauce
1/2 teaspoon Tabasco
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 1/2 lb meatloaf mix or equal parts ground beef chuck, pork, and veal
1/4 cup ketchup
2 tablespoons distilled white or cider vinegar
4 bacon slices, cut into 1 1/2-inch pieces

Steps:

  • Put oven rack in middle positionand preheat oven to 400°F. Line a shallow baking pan with foil.
  • Cook onion and garlic in oil in a 10-inch skillet over moderate heat, stirring frequently, until just softened, about 4 minutes.
  • Stir together bread crumbs,milk, eggs, parsley, Worcestershire sauce, Tabasco, salt, and pepper in a large bowl. Gently combine meat if necessary, then add to bread-crumb mixture along with onion mixture and gently knead with your hands until just combined. (Mixture will be moist. Wipe out skillet and reserve.)
  • Using a 1-cup measure, drop slightly rounded cups of mixture into baking pan and lightly pat to form 4 domes.
  • Stir together ketchup and vinegar and spoon over mounds. Bake meatloaves until center of each loaf registers 155°F on thermometer, about 25 minutes.
  • While meatloaves bake, cook bacon in skillet over moderate heat, stirring occasionally, until crisp, about 7 minutes. Transfer with a slotted spoon to paper towels to drain.
  • Turn on broiler and broil meatloaves 2 to 3 inches from heat until glaze is slightly caramelized, 1 to 2 minutes.
  • Serve meatloaves topped with bacon.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
