CLASSIC BACON AND CHEESEBURGER
Classic bacon cheeseburger with lettuce, tomato and a good slather of mayo makes this the perfect addition to your 4th of July party.

Steps:
- Fry the onion in a large frying pan in a splash of olive oil until golden brown. Add the garlic and fry for another 30 seconds then remove from the heat. Allow to cool to room temperature.
- Mix the cooled onions with the beef, parsley, breadcrumbs, egg, salt and pepper. To test the seasoning, fry a teaspoon-full of the mixture in the pan you cooked the onions in. Adjust the seasoning to taste.
- Divide the mixture into 5-6 (depending on how you big you want the patties), and form patties with wet hands.
- Place on a tray lined with baking paper and place in the fridge to chill for 30 minutes.
- When the patties have rested, heat a large cast iron pan/griddle pan until hot then cook the burgers until charred and cooked to your preference. (You can also cook the burgers on a braai/barbecue.)
- Remove from the heat, top with the cheese and cover with foil for 2 minutes.
- Top the buns with a generous spoonful of mayo, lettuce, tomato, the patty with cheese and finally bacon.
- Serve immediately.

BACON CHEESEBURGERS
This takes a little more effort than the average cheeseburger, but is well worth it! Serve on buns with your favorite condiments.

- Preheat a grill for high heat.
- Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
- Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

BACON CHEESEBURGERS
Simple is often best, as in this cheeseburger with chopped bacon added to the beef, topped with lettuce and tomato.

- Pulse the bacon in a food processor, or chop with a knife, until ground. (If using a knife, freeze the bacon for a bit first to make the chopping easier.)
- Combine the bacon and beef in a bowl, mixing lightly. Divide the mixture into four equal portions. Gently flatten into 1-inch patties and make a thumb-size divot in the middle of each.
- Heat a griddle or large cast-iron pan over medium-high heat. Evenly sprinkle the patties all over with salt and pepper. Griddle the burgers, turning when the bottom forms a dark brown crust, about 4 minutes. Add 1 ounce of cheese on top of each burger and cook for 2 minutes. Cover the pan and turn the heat off. Allow to sit, covered, until the cheese melts, about 1 minute. Place the burgers on the buns and top with lettuce and tomato. Cover with the top buns and serve.

- In a large bowl combine ground beef with salt,pepper,garlic,worcestershire sauce,mustard seed,onion soup mix,oregano,red pepper and bacon bits.Mix Well.
- In a seperate bowl mix Jack Daniels Sauce,steak sauce and ketchup.
- Form ground beef into 2, four ounce, one inch thick patties.

INSIDE-OUT BACON CHEESEBURGERS
Steps:
- Preheat the oven to 400 degrees F.
- Put the bacon strips on a rimmed baking sheet lined with parchment paper or aluminum foil and fitted with a wire rack. Bake until cooked through, about 20 minutes. Allow to cool, then chop or crumble.
- Preheat the oven to broil.
- Divide the ground beef into eight patties. Pile the bacon and cheese on top of four of the patties. Cover each filled patty with a plain patty and press together at the edges to tightly seal. Create a divot in the center of each patty with your thumb.
- Heat the safflower oil in a cast-iron skillet over medium-high heat. Season the patties liberally with the salt and pepper before adding them to the skillet. Cook the patties until cooked through and cheese is melted inside, about 5 to 6 minutes per side.
- Meanwhile, put the split buns on a rimmed baking sheet and broil until toasted, 1 to 2 minutes.
- Serve the burgers on the toasted buns with your favorite burger toppings.

- Grilling Method: Direct/Medium Heat
- Mix the ground chuck and the ground sirloin together with a fork or with your hands. Season it lightly with salt and pepper, and mix just to combine. You do not want to over-mix the meat.
- Gently shape the ground meat into six burgers of equal size and thickness (about 3/4-inch-thick). Brush both sides of the burgers with oil and season lightly with salt and pepper.
- Place burgers on cooking grate and grill until meat is to the desired level of doneness. The USDA recommends cooking all ground meat until no longer pink, about 10 to 12 minutes, turning once halfway through cooking time.
- Top each burger with a slice of cheese during the last couple of minutes so the cheese will melt. Remove from grill and top each burger with 2 pieces of bacon. Let the burgers rest 2 to 3 minutes to reabsorb the juices.
- Serve hot on the buns with lettuce, tomato, and the traditional burger condiments (mayo, mustard, ketchup) if desired.
EGG-IN-A-HOLE BACON CHEESEBURGERS

- Stir mayonnaise and Thousand Island dressing together in a small bowl. Set spread aside.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 8 to 10 minutes. Transfer to a paper towel-lined plate to drain.
- Form ground chuck into 3 equal-sized patties. Use a small glass to cut out the center of each patty to create a donut-shaped burger. Combine excess meat to form a fourth donut-shaped burger. Season generously with salt and pepper.
- Heat a cast iron skillet over medium-high heat. Add butter and melt. Add burgers and cook for 2 minutes per side. Crack an egg into the center of each burger. Cover the skillet and cook until whites are set, 4 to 5 minutes.

We love how Freda incorporates the flavor of bacon right into the burgers themselves. We opted to use the beef broth and each burger turned out perfectly moist and savory. Next time we may try adding more kinds of cheeses... That's always a good idea, right?! Enjoy.

- Light your grill. (I prefer charcoal briquettes.) Allow coals to get nice and hot. Mix ingredients in order given. Shape into four patties. Make the patties flat, as they plump up when cooked.
- Place on hot grill and cook to preferred doneness.
