Whip up a quick breakfast for any size crowd with this easy recipe for Bacon, Egg and Cheese Toast Cups made with store-bought puff pastry.

12 strips uncooked bacon
All-purpose flour
1 (17.3-oz.) package frozen puff pastry (2 sheets), thawed
1 cup shredded cheddar cheese
8 large eggs
1/4 cup milk or heavy cream
2 Tablespoons chives, minced

Steps:

  • Divide the bacon slices between two large sauté pans set over medium-low heat and cook the bacon, draining the grease as needed, until it is almost fully cooked but still pliable enough to bend. Set the bacon aside.
  • Preheat the oven to 375°F.
  • Lightly flour your work surface then unfold each of the puff pastry sheets onto your work surface. Using a rolling pin, roll each sheet to seal together any creases.
  • Using a sharp knife, cut each sheet of puff pastry into nine squares. Add a puff pastry square to each muffin tin cup, pressing it firmly into the bottom and sides so that the edges hang over the sides of each cup. (You will have six extra squares, which can be re-frozen or used to make quick and easy Puff Pastry Cookies.)
  • Place a strip of cooked bacon inside each cup so that the ends stick out of the cups.
  • In a large bowl, whisk together the eggs with the milk and a pinch of salt and pepper.
  • Divide the cheese among the muffin tin cups then ladle the egg mixture into each muffin tin cup.
  • Bake the eggs for 18 to 22 minutes until the puff pastry is golden brown and the eggs are cooked through. Remove the egg cups from the oven and let them cool for 5 minutes before using a knife to loosen them around the edges.
  • Sprinkle the egg cups with the chopped chives and serve immediately.

3 tablespoons unsalted butter, melted
8 slices white or whole-wheat sandwich bread
6 slices bacon
6 large eggs
Coarse salt and ground pepper

Steps:

  • Preheat oven to 375 degrees. Lightly butter 6 standard muffin cups. With a rolling pin, flatten bread slices slightly and, with a 4 1/4-inch cookie cutter, cut into 8 rounds. Cut each round in half, then press 2 halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup. Use extra bread to patch any gaps. Brush bread with remaining butter.
  • In a large skillet, cook bacon over medium, until almost crisp, 4 minutes, flipping once. (It will continue to cook in the oven.) Lay 1 bacon slice in each bread cup and crack an egg over each. Season with salt and pepper. Bake until egg whites are just set, 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately.

1/2 lb extra-sharp white Cheddar, coarsely grated (2 cups)
1/2 lb cold sliced lean bacon, finely chopped
1 small onion, finely chopped (1/3 cup)
1 1/2 tablespoons drained bottled horseradish
1/2 teaspoon salt
1/4 teaspoon black pepper
14 very thin slices firm white sandwich bread

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Stir together cheese, bacon, onion, horseradish, salt, and pepper in a bowl with a rubber spatula until blended well.
  • Spread about 1 1/2 tablespoons mixture evenly to edges of each slice of bread with a small offset spatula or butter knife. Arrange slices in 1 layer on a large baking sheet and freeze, covered with wax paper, until firm, about 15 minutes.

6 slices bacon
6 large eggs
5 slices American cheese
1/2 teaspoon dried parsley

Steps:

  • Preheat oven to 375 degrees. Spray the bottom side of a cupcake pan with cooking spray.
  • Flatten each dough round to 1/4-inch thickness. With the cupcake pan turned upside down, place each dough circle over the back of each cupcake cup. Press the dough around the cup to form a bowl. Bake for 12 minutes. Remove from the oven and allow to cool for 5 minutes.
  • Carefully turn the biscuit bowls up-side down onto a baking sheet. Set aside until ready to assemble.
  • Meanwhile, cook the bacon in a large skillet over medium heat until crispy, about 8 minutes. Remove the bacon and drain on paper towels. Discard half of the bacon grease from the pan.

  • Arrange the breakfast bowls. Place the cooked eggs evenly in each biscuit bowl. Crumble the bacon over the eggs and top with American cheese.

Next morning, slide the whole shebang into the oven and watch it puff up dramatically into a sliceable feast.

1 loaf sandwich bread (about 1 pound), cut into 10-to-12 slices (3/4-inch-thick)
1 cup cherry tomatoes, halved (or left whole, if small)
1 tablespoon extra-virgin olive oil, plus more (or softened unsalted butter) for baking sheet
Kosher salt (we use Diamond Crystal) and freshly ground pepper
6 strips thick-cut bacon (6 ounces total)
8 large eggs
1 2/3 cups whole or 2 percent milk
2 tablespoons chopped fresh parsley leaves
3 ounces sharp cheddar, grated (3/4 cup)

Steps:

  • Spread bread on a rimmed baking sheet and let dry out, 4 to 6 hours. Preheat oven to 375°F. Toss tomatoes with oil; season with salt and pepper. Spread on one side of a parchment-lined 12 1/2-by-9 1/2-inch rimmed baking sheet (quarter sheet pan). On other side, arrange bacon in as close to a single layer as possible (it's okay if slices overlap slightly).
  • Roast until tomatoes are wrinkled and beginning to soften and bacon is about three-quarters cooked, 20 to 25 minutes. Remove from oven; transfer tomatoes and bacon to a plate. Discard fat and remove parchment. Wash sheet, then brush with oil or butter.
  • In a bowl, whisk together eggs, milk, 1 teaspoon salt, and 1/2 teaspoon pepper. Dip bread slices one at a time in egg mixture, turning to coat, then arrange on sheet in shingled, overlapping layers (we arranged ours in three rows of four).
  • Pour remaining egg mixture evenly over top (it will pool on top and sink through to bottom, but will be absorbed as it sits). Sprinkle with parsley and cheese, then top with bacon and tomatoes. Refrigerate, covered, at least 1 hour and up to 24 hours.
  • Preheat oven to 375°F. Bake French toast, uncovered, 15 minutes, then reduce temperature to 350° and continue baking until puffed and cooked through, 20 to 25 minutes more. Let cool slightly before serving.
