PECAN AND WILD BOAR BACON WAFFLES WITH SYRUP
For Mark Miller, the former owner of the Coyote Cafe in Santa Fe, the ranch breakfast ''was the central meal of the working day. People went out before dawn, worked a few hours, and came together around a huge breakfast table.'' These waffles, which he served at home to weekend guests, are a Southwestern rendition of traditional American fare.

Steps:
- To make the syrup, bring the sugar and water to a boil in a saucepan and stir until all the sugar is dissolved. Continue to boil, without stirring, until the syrup thickens slightly and its surface becomes shiny. Pour the syrup into a stainless steel bowl and stir in the pecans. Carefully add the whisky and the vanilla. Keep warm to be served over the waffles.
- Chop the bacon into small pieces and cook in a frying pan with the butter. Beat the egg yolks with the milk and add the cooked bacon and butter from the frying pan. Chop the pecans to a medium-coarse consistency. Mix together with the cornmeal, flour, salt and baking powder and stir into the egg yolk mixture. Beat the egg whites until they form soft peaks, then gradually fold them into the batter. Cook in a hot waffle iron until brown, but still moist inside.

Steps:
- To prepare the waffles, cook bacon and butter in a skillet until crisp.
- In a bowl beat egg yolks with the milk and then add the butter and bacon the the yolk/milk mixture.
- Chop the pecans.
- In a bowl combine pecans, cornmeal, flour, salt and baking powder. Stir dry ingredients into the wet ingredients.
- Beat egg whites until the reach the soft peak stage and then fold them into the batter.
- Cook waffles in a hot waffle iron until brown. If desired serve with bourbon syrup (recipe below).
- To make the Bourbon syrup:.
- In a saucepan bring the water and sugar to a boil, stirring until sugar is dissolved. Continue to boil without stirring until syrup thickens slightly and surface is shiny. Pour syrup into a serving bowl, and stir in pecans. Stir in whiskey and vanilla. Keep warm.

- Spray a waffle iron with nonstick cooking spray and preheat it.
- Sift together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
- Beat the egg yolks with the milk and butter in a large bowl. Add the flour mixture, stirring until just blended. Fold in the beaten egg whites.
- Place 2 halves of a bacon slice in each waffle grid and close the cover. Cook for 1 minute and then add a scant 1/2 cup batter to each waffle grid. Bake until golden brown, about 5 minutes. Serve with maple syrup.
CANADIAN BACON WAFFLES
Steps:
- In a small bowl, combine the biscuit mix, eggs and oil. Add club soda and stir until smooth. Gently fold in the bacon, cheese and chives. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown.

- Mix brown sugar, yeast, and 1/3 cup warm water in the bowl of a stand mixer fitted with a dough hook until yeast dissolves. Let sit until foamy, 5-10 minutes. Whisk flour and salt in a medium bowl.
- Mix eggs into yeast mixture. With mixer on low speed, add dry ingredients and mix until dough comes together into a ball. Gradually add 1 cup butter, pausing often to allow dough to fully incorporate butter before adding more. Increase speed to high and mix until dough is smooth, elastic, and pulls away from the sides of the bowl (dough will still be very soft and somewhat sticky), 5-10 minutes longer. Transfer to a buttered medium bowl and cover with plastic wrap; let sit in a warm spot until doubled in size, 1 1/2-2 1/2 hours.
- Just before dough is ready, bring syrup and cacao nibs to a simmer over low heat in a small saucepan and cook 5 minutes. Let cool.
- Sprinkle pearl sugar over dough and mix in with a wooden spoon. Divide dough into 8 pieces. Heat a Belgian waffle iron until very hot; coat with nonstick spray. Place a piece of dough over each well (keep remaining pieces covered). Cook until waffles are golden brown and sugar is caramelized in spots, about 5 minutes. Transfer to a wire rack; repeat with remaining pieces of dough. Let waffles cool slightly. Serve topped with bacon, plums, ricotta, and almonds and drizzled with cacao-nib syrup.

I adapted this recipe one night after having seen a peanut-bacon brittle on TV. It is sooooo good. I have trouble waiting for this stuff to cool before eating!

- Bring sugar, water, corn syrup, and maple syrup to a boil in a large skillet over medium-high heat, stirring constantly. Heat to 250 degrees F (120 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.
- Stir pecans and vanilla into syrup mixture until mixture begins to turn brown; add bacon. Cook until bacon mixture turns light brown, 1 to 3 minutes. Remove from heat and stir baking soda into bacon mixture.
