GRILLED BACON-WRAPPED DATES



Grilled Bacon-Wrapped Dates image

These bacon-wrapped dates are stuffed with manchego and almonds and grilled to perfection.

Provided by Food Network Kitchen

Yield 24 dates

Number Of Ingredients 5

24 whole dates
4 ounces Manchego cheese, cut into 24 pieces
24 whole salted almonds
24 slices bacon
Kosher salt and freshly ground black pepper

Steps:

  • Prepare an outdoor grill for medium indirect heat.
  • Slice into the dates lengthwise, just deep enough so that you can pull out the pits with your fingers. Discard the pits. Fill each date with a piece of cheese and an almond. Wrap a slice of bacon around each date, trim all but an inch of overlap and secure with a toothpick. Season with salt and black pepper.
  • Grill, on the indirect side, flipping occasionally, until the bacon is cooked through and crispy, about 10 minutes. Transfer to a platter. Serve warm or at room temperature.

These are delightful, easy appetizers. Adapted from a recipe I found on www.wholefoodsmarket.com. As the recipe states, these are the perfect party starter served up with a glass of sparkling wine. These are also on the menu at a St. Louis tapas restaurant as a desert. . .interesting thought! These are very rich, so plan on 2 per person. One more note, these CAN be made without bacon if need be for a special diet.

24 pitted dates
1/3 lb manchego cheese
12 pieces bacon, cut in half

Steps:

  • Preheat broiler (high setting).
  • Cut your cheese into small rectangles just large enough to fill the cavity of your pitted date.
  • Stuff 1 piece of cheese into each date.
  • Wrap each date with a piece of bacon.
  • Place on baking sheet, seam side down, and broil for 4 minutes. Turn dates over and broil another 4 minutes.
  • Serve hot.
  • NOTE: you can put a toothpick in each AFTER cooking for the convenience of your guests (but they won't look as pretty).

  • Preheat oven to 375 degrees F. Prepare a rimmed baking sheet with parchment paper, or spray with cooking spray.
  • Slice the dates along the side so that they open flat for stuffing. Fill the date with about a teaspoon (more or less) of blue cheese, then wrap it with a slice of bacon so that the blue cheese opening is completely sealed and the bacon overlaps underneath. Seal the stuffed date with a toothpick, and place on the baking sheet. Repeat with remaining dates.
  • Bake for 15-25 minutes, or until the bacon is cooked and the cheese is lightly browned, turning the dates halfway through so that they crisp up evenly on all sides. Remove and serve warm.
