SWEET BLACKBERRY AND BRANDY SAUCE
This is a really easy sauce to serve over ice cream, cheesecake, or perhaps even pancakes. Serve it warm over vanilla ice cream or chill it, and serve over plain cheesecake.

Steps:
- Place the blackberries, sugar, and brandy into a saucepan, and place over medium heat. Slowly bring to a simmer, and cook until the blackberries have softened, about 10 minutes. Dissolve the cornstarch in the water, and stir into the simmering berries. Continue cooking and stirring until the sauce has thickened and reached your desired consistency, about 10 minutes.

CREAM CHEESE GELATIN WITH BLACKBERRY SAUCE
This is a delicious easy creamy dessert. You can substitute the blackberries for any fruit you like.

Steps:
- Sprinkle the unflavored gelatin powder in 1 cup of water. Let stand for 5 minutes.
- In a small sauce pan, heat the softened gelatin stirring constantly until it dissolves completely.
- In a blender, mix the cream cheese, half-and-half, condensed milk and 1 1/2 cups of water perfectly.
- Add the dissolved gelatin and stir well.
- Pour the mixture in a gelatin ring mold and refrigerate until set.
- Meanwhile, defrost the black berries and blend them with the sugar. Pass the mixture through a colander.
- Serve the gelatin with the sauce.

PEPPERED STEAKS WITH BLACKBERRY SAUCE
This is a refreshing way to eat a steak. I love to do this during the summertime when the blackberries are in season and you can stop down any dirt road and pick them fresh.

Steps:
- Combine lemon juice, oil, onion, and garlic in large plastic zip lock bag; mix well.
- Place steaks in bag and seal. Refrigerate for 6 to 24 hours, turning bag occasionally.
- When ready to cook, rub pepper around the edges of each steak. Preheat grill.
- In small saucepan add jam, vinegar, and onion powder. Cook over medium heat until jam is melted, stirring constantly. Remove from heat.
- Place steaks on gas grill over medium heat, or charcoal grill 4 to 6 inches from medium-hot coals. Cook 8 to 12 minutes or till desired doneness turning once halfway through cooking.
- To serve, spread steaks with sauce and top with fresh blackberries. steaks can also be cooked inside broiler oven by placing on broiler pan 4 to 6 inches from heat and broiling 7 to 10 minutes or until done.

Steps:
- Pick over the berries and reserve 1 cup of the smallest and most attractive.
- Puree the remaining 2 cups berries in a food processor with the brandy, orange juice and honey.
- Transfer the mixture to a sieve set over a medium bowl.
- Press the puree through the sieve and discard the seeds.
- Just before serving, stir in the reserved whole berries.
- NOTE: 1 serving = 2 tablespoons.

BOOZY BLACKBERRY SAUCE
It's getting to the end of the English Blackberry season, but this recipe uses frozen so can be enjoyed any time of the year. This blackberry sauce recipe comes from "Preserved" by Nick Sandler and Johnny Acton.
