Bacon-Wrapped Dates with Brie and Balsamic Honey image

Bacon-wrapped dates are just about the coziest bites of food you'll ever find. The bacon is crisp and savory, the dates are sweet and warm. This version has creamy brie tucked inside and is drizzled with balsamic-infused honey.This makes 20 dates. To adjust the servings in this recipe, click on the number next to servings.

20 Pitted Dates
4 oz Brie, sliced into 20 small pieces
10 strips Bacon, sliced down the middle
20 Toothpicks
2 Tbsp Honey
1 tsp Balsamic Vinegar
1 tsp Thyme Leaves ((ideally fresh; use half the amount if using dried thyme))

Steps:

  • Preheat oven to 400°F / 204°C. Spray a sheet pan with nonstick cooking spray or line it with parchment paper.
  • Stuff each date with brie. Wrap with half a strip of bacon and secure with a toothpick.
  • Spread dates out on sheet pan, leaving some space in between.
  • Transfer dates to the oven and cook for 10 minutes.
  • Meanwhile, whisk together honey, vinegar, and thyme leaves.
  • Remove the dates from the oven and flip each one over. Brush or drizzle the balsamic honey over the top of the dates.
  • Return dates to the oven and continue roasting until bacon is crisp, 5 to 10 minutes more. (Keep an eye on them towards the end of cooking and pull them if they start to get very dark brown or show any sign of burning. The sugars in the honey will cause the bacon to brown quickly.)
  • Serve warm.

2/3 cup crumbled blue cheese

Steps:

  • Cut each bacon strip into thirds. In a large skillet, cook bacon in batches over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm. , Carefully cut a slit in the center of each date; fill with blue cheese. Wrap a bacon piece around each stuffed date; secure with wooden toothpicks. , Place on ungreased baking sheets. Bake at 375° for 10-12 minutes or until bacon is crisp.

20 Medjool Dates pitted
6 slices bacon uncured preferable - cut into 1/3

Steps:

  • Wrapped Dates with Brie Cheese • 20 Pieces of Brie about ½ inch cube or less • 20 Medjool Dates - pitted • 6 Slices bacon cut crosswise into thirds (Uncured is preferable) • Wooden tooth picks Heat the oven to 400 degrees F. Soak wooden picks in water for about an hour Stuff a piece of cheese into each date, then wrap one piece of bacon around each date and secure bacon with a toothpick if desired. Arrange dates, bacon seam down and 1 inch apart in a shallow baking pan. Bake 5 minutes, then turn dates over with tongs and bake until bacon is crisp about 5 to 6 minutes more. Place on a paper towel and serve immediately.

70 to 80 salted roasted almonds
2 pounds thin bacon, cut in half

Steps:

  • Preheat the oven to 425 degrees F.
  • Stuff each date with 1 to 2 almonds. Wrap each date with half a piece of bacon and secure with a toothpick.
  • Bake, turning the dates halfway through so the bacon is evenly cooked, 15 to 18 minutes. Serve warm or at room temperature.

A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

16 medium Medjool dates, pitted
Black pepper (optional)

Steps:

  • Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
  • Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
  • Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.

Sinfully delicious!! Salty and sweet, crispy and gooey!! Yum! Surprisingly easy and look fantastic. I had these at a restaurant and then went on a hunt to find a similar recipe. Found one online and tweaked it some. If you use thick cut bacon, par-cook it some before wrapping dates.

1/2 cup balsamic vinegar
1/4 cup sliced almonds, toasted
6 ounces goat cheese
24 pitted dates
1 lb bacon (see note)

Steps:

  • Simmer balsamic vinegar in small saucepan until reduced by half. Syrup will be thick. Set aside.
  • Mix almonds into goat cheese.
  • Cut small slit in dates and stuff with small amount of cheese mixture.
  • Cut each bacon slice into 3 pieces. (Par-cook if thick sliced.) Wrap piece of bacon around each date, and secure with toothpick.
  • Place on foil-lined baking sheet.
  • Broil for about 10 minutes, turning over when browned on first side. Be careful as they can burn quickly.
  • Arrange on serving platter and drizzle with reserved balsamic reduction.

Wrap each date in bacon and then stab completely through with a toothpick to hold the bacon in place. (If you don't use a toothpick, the bacon will shrink and slide off of the date as it cooks.) Place wrapped dates on the foil lined sheet.
  • Bake for 12-15 minutes, until the bacon is cooked through and slightly crispy. While the dates are in the oven, pour some balsamic in the bottom of a small saucepan. Turn the heat to medium low and bring to a slow simmer. When the vinegar has reduced by about half, remove from the heat and drizzle over the finished dates. Enjoy!
