These baked apples are a favorite that my mom made every time fresh apples were in season; my favorite for this recipe are McIntosh. Great with pears too!

4 McIntosh apples
4 teaspoons ground cinnamon
4 teaspoons butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Remove cores and seeds of apples, leaving the bottoms intact. Place into an 8x8-inch casserole or baking dish. Place 1 teaspoon butter and 1 teaspoon cinnamon into each cored apple.
  • Bake in the preheated oven until apples are softened, 20 to 25 minutes, watching to make sure they don't pop.

I have been making this so long, I don't remember where I got it from. Be careful of the Almond Extract - too much will make it bitter

1 apple (your favorite type)
1/3 cup low fat cottage cheese
2 tablespoons Splenda sugar substitute
1/8 teaspoon almond extract
1/2 teaspoon apple pie spice
1/4 teaspoon cinnamon, ground or 1/4 teaspoon apple pie spice

Steps:

  • Cut the apple into 8 even slices, removing the core and seeds.
  • Arrange the slices in a microwave safe bowl, sprinkling with 1 Tablespoon Splenda and the apple pie spice.
  • Cover and cook 1 1/2 - 2 minutes on high in the microwave.
  • While apple is cooking, stir the almond extract and the other tablespoon of Splenda into the cottage cheese.
  • After removing apple from the microwave, spoon the cottage cheese on top of the apple. Sprinkle cinnamon on the cottage cheese.

Can be ready start to finish in under 10 minutes - made in the microwave and can be easily scaled up or down for the number of people you're serving. If your looking to make this more dessert-like, include the optional toppings! WW points w/out optional ingredients = 1

1 medium apple, cubed into bite-size chunks
1 teaspoon Splenda granular
1 1/2 teaspoons cornstarch
1/2 teaspoon cinnamon
1/4-1/2 teaspoon vanilla
1/3 cup water, cold
2 tablespoons granola cereal (optional)
2 tablespoons fat-free cool whip (optional)
1 dash cinnamon (optional)

Steps:

  • Using a small to medium sized microwave-proof bowl (with lid if you have one), combine Splenda, cornstarch and cinnamon.
  • Add 1/3 cup of cold water & vanilla, and whisk until blended. Add diced apple coat them with the cinnamon mixture.
  • Cover the dish and microwave for 2 1/2 minutes - apples should appear translucent and be soft, but not be wrinkled. Microwave temperatures vary, so keep an eye on them.
  • Leaving the lid on the bowl, allow sauce to thicken on counter or in microwave and cool for a couple of minutes.
  • Enjoy fat-free apple dessert OR top with granola, cool whip and sprinkle with cinnamon if desired!
