BAKED SALMON

Baked Salmon image

This baked salmon recipe is easy to customize with your favorite seasonings, and only takes about 15 minutes from start to finish.

Provided by Ali

Time 15m

Number Of Ingredients 4

4 salmon filets, skin-on (about 6-8 ounces each)
2 tablespoons high-heat oil, such as avocado oil or canola oil
Kosher salt and freshly-cracked black pepper
fresh lemon wedges

Steps:

  • Let salmon rest on the counter for 15-30 minutes, until they have (at least mostly) come to room temperature.
  • Heat oven to 450°F. Line a baking sheet with aluminum foil (or use an oven-proof non-stick skillet).
  • Blot the salmon filets dry on all sides with paper towels. Place the salmon skin-side-down the prepared baking sheet (or skillet). If the ends of the salmon filets are really thin, just tuck them under a bit for even cooking.
  • Brush the salmon on all sides (except the bottom) with oil. Sprinkle each filet with a generous pinch of salt and black pepper, along with any other dry seasonings you prefer.
  • Bake until the internal temperature of the salmon reaches 135-140°F*, about 4-6 minutes per half inch of thickness (measured by the thickest part of the filet). You can also test for doneness by inserting a fork or knife in the salmon and twisting it a bit; the fish should be opaque and flake easily.
  • Remove pan from the oven and transfer the salmon to a clean serving plate, either with the skin or leaving the skin behind. Sprinkle each filet with a good squeeze of lemon juice, plus any extra fresh herbs or sauce that you prefer. Then serve warm and enjoy!

1/2 teaspoon kosher salt
2 teaspoons vegetable oil
Sauteed Spinach with Shiitakes and Shallots, recipe follows
Sweet Corn Coconut Sauce with Asian Aromatics, recipe follows
2 lemongrass stalks, white parts only, minced
2 kaffir lime leaves, veins removed and minced
1 ounce vegetable oil
3 tablespoons minced shallots
2 cups fresh white corn kernels, cobs reserved, plus 1 cup fresh corn kernels
3 cups unsweetened coconut milk
2 lemongrass stalks, white parts reserved for presentation, stalks bruised with back of a knife
1 inch fresh galangal, peeled and sliced into coins
2 kaffir lime leaves, bruised
1/4 teaspoon ground white pepper
2 tablespoons nam pla (fish sauce)
1 gallon water
3 tablespoons kosher salt
2 pounds fresh spinach, stems removed
2 tablespoons unsalted butter, melted
4 tablespoons minced shallots
8 ounces shiitakes, stemmed and sliced
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat a large non-stick saute pan until hot. While the pan is heating, season the salmon fillets with the salt and white pepper. Pour the oil into the pan and warm oil for 15 seconds. Place the salmon fillets, flesh side down, into the saute pan. Using a low flame, saute the fish for about 2 1/2 minutes. Place the pan in the oven and roast for 6 to 7 minutes. The salmon should be medium rare. When serving, turn the salmon fillets over to expose the nicely browned side.

  • Heat sauce in a stainless pan. Add the remaining corn to the pan.
  • Bring the water to a boil in a large pot. When the water comes to a boil, add salt. In a large bowl add some ice and water to create a water bath.
  • Add the spinach to the boiling water and cook for 1 minute. Drain the spinach. Place in the ice bath to cool. Drain spinach and squeeze very dry.
  • Add butter to a saute pan and heat. Add shallots and cook for 1 minute. Add mushrooms and saute until the release their liquid, about 5 minutes. Add spinach and saute until heated through. Season with salt and pepper.

BAKED SALMON

Baked Salmon image

Baked Salmon is my preferred way to cook this popular and satisfying fish, as it's easy, delicious, and cleanup is a breeze. It can be enjoyed as the main course, or used in other recipes!

Provided by Joanne Ozug

Categories     Main Course

Time 17m

Number Of Ingredients 3

1 lb fillet of salmon (*)
salt
freshly ground black pepper

Steps:

  • Preheat the oven to 425F. Line a baking tray with aluminum foil or parchment paper.
  • Unless they've been removed already by the fishmonger, remove the pinbones from the salmon fillet with tweezers.
  • Season the top of the fish generously with salt, about 1/2 tsp for a 1lb piece. I don't season the bottom of the fish, since I discard the skin.
  • Add freshly ground black pepper to the fillet, about 1/4 tsp, or to your taste.
  • Place the fish on the lined tray, and bake for 12-14 minutes, until the top is no longer shiny and the fish registers between 125-140F in the middle, depending on desired doneness. 125F is for medium, and 140F is for fully cooked salmon.

EASY BAKED SALMON

Easy Baked Salmon image

This easy baked side of salmon gets cooked in a foil packet with lemon garlic butter and tender herbs to create a simple and delicious foolproof weeknight dinner.

Provided by Kalisa Marie Martin

Categories     Entree     Dinner

Time 33m

Yield 6

Number Of Ingredients 8

2 pounds whole salmon fillet, skinned
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoons unsalted butter, melted and cooled
4 cloves garlic, grated or finely minced
1 1/2 teaspoon honey
1 1/2 teaspoon fresh lemon juice
2 tablespoons fresh herbs (basil, chives, or parsley) chopped

Steps:

  • Arrange rack, preheat the oven, and prepare the baking sheet: Place the rack in the middle of the oven. Preheat the oven to 375°F. Line a large-rimmed baking sheet with foil, being sure to leave several inches of overhang on both long ends to make your foil packet.
  • Prepare the salmon: While the oven preheats, remove the salmon from the fridge to come to temperature, 15-20 minutes. Place the salmon on the prepared pan and pat both sides dry with a paper towel. Feel the flesh for any bones and remove them with fish tweezers or your fingers.
  • Season the salmon: Season both sides of the salmon with salt and pepper.
  • Make the butter sauce and pour over salmon: In a small bowl, combine the melted butter, garlic, honey, and lemon juice. Fold up the edges of the foil to contain the liquid and pour the butter mixture evenly over the top of the salmon.
  • Seal the salmon with foil: Bring the two long sides of the foil together and then fold them down a few times to close the top of your packet. Then, tuck each end under to close the sides. If your piece of foil is not large enough, take a second sheet of foil and cover the salmon, pinching the foil to seal the edges.
  • Bake the salmon: If you're cooking farm-raised salmon, it should be done in 18-20 minutes, depending on the thickness. If you're using wild-caught salmon, check for doneness beginning at 10 minutes. If you open the packet and see the fish isn't finished cooking, it should be opaque on top and flake easily with a fork, close the foil packet back up, return it to the oven, and check again in another 2-3 minutes.
  • Broil the salmon: Carefully open the foil package to uncover the salmon completely, pushing the foil down and out of the way. Set the oven to broil on high. If you have an electric stove, return the salmon to the oven, still on the middle rack. Broil the salmon for 2-3 minutes. You'll see it turn just slightly golden with some charred spots but be sure not to burn the garlic. If you have a gas stove, you may want to reduce your broiling time to 1 minute or skip it all together.
  • Serve: Let the salmon rest for about 5 minutes. Garnish with chopped herbs. Transfer to a serving platter or serve directly from the pan!
