HERB, GARLIC AND BACON PORK LOIN
Delicious pork loin roasted with bacon that the whole family will love. Serve with potatoes or any of your favorite veggies.

Steps:
- Preheat the oven to 300 degrees F (150 degrees C).
- Rub the pork loin with olive oil and place in a roasting pan. Drape slices of bacon over the top. Combine the chicken stock, rosemary, thyme, basil, sage and garlic. Pour over the roast. Place onions around the sides. Cover with a lid or aluminum foil.
- Bake for 1 hour and 30 minutes. Remove the lid or foil, and continue to bake for 30 minutes, or until the bacon is browned. Cook to at least 145 degrees F (63 degrees C).

ROASTED GARLIC-BACON DIP
Steps:
- Cut the tops off 2 heads garlic, drizzle with olive oil, wrap in foil and bake at 400 degrees until tender, 45 minutes. Make Onion Dip using the roasted garlic pulp in place of the sauteed onions. Add 6 slices chopped crisp bacon.

- Saute 1 each chopped yellow and red onion in olive oil over low heat until caramelized, 30 minutes; cool. Mix with 1 1/2 cups sour cream, 3/4 cup mayonnaise and chopped chives and scallions. Add Worcestershire sauce, salt and pepper.

GARLIC-HERB PECANS WITH BACON
Coat pecans in a savory mix of garlic, rosemary, sage and thyme; toss them with bacon to complete this addictive snack.

Steps:
- Mix together the rosemary, sage, thyme, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a small bowl and set aside.
- Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet.
- Put the egg white in a large bowl and whisk until frothy. Add the pecans and toss to coat in the egg white. Add the spice blend and toss to coat again,
- Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then stir in the bacon and transfer to a large bowl and garnish with a rosemary sprig if using.

- Beat first 3 ingredients in medium bowl with mixer until blended.
- Slice 4 onions. Add to cream cheese mixture along with 1-1/2 cups cheddar and 1/4 cup bacon bits; mix well.
- Spread onto bottom of 9-inch ovenproof skillet sprayed with cooking spray.

- In a large skillet, cook bacon over medium heat until crisp. ROASTED GARLIC BACON DIP
This a rich creamy dip that my whole family loves, especially come football season. Serve with tortilla chips, crackers or bread.

Steps:
- Preheat oven to 375 degrees.
- Peel away the outer layers of the heads of garlic. Leaving the skins of the individual cloves of garlic intact. Cut off 1/4 to 1/2 off an inch of the top of the bulb of garlic, exposing the individual cloves of garlic.
- Place cut side up on a square of tinfoil. Drizzle with olive oil and sprinkle with a pinch of salt.
- Wrap the foil around the head of garlic and place on a baking sheet in the oven for 40-50 minutes.
- Allow to cool just enough to handle the garlic, then squeeze each clove out.
- Beat together the package of softened cream cheese and the sour cream with an electric mixer until fluffy.
- Add the roasted garlic and crumbled bacon and mix with electric mixer until well combined.
- Cover with plastic wrap and refrigerate for a couple of hours until flavors are well blended.
