GARLIC AND CHILE ROASTED DUNGENESS CRABS

Steps:
- Fill a large stockpot two-thirds full of water. Add enough salt so that the water tastes like seawater. Add half of the sliced lemon and the reserved peels from the garlic and onion, and bring to a boil. Plunge the crabs in the water, in batches if necessary, and cook for 5 minutes. Remove the crabs from the stockpot and set aside until cool enough to handle.
- Preheat the oven to 450 degrees F.
- When the crabs are cool enough to handle, remove the top shell and apron and discard. Remove the gills and any transparent cartilage and scrape out any crab fat and rinse crabs under cool running water. Place crabs, bottom side down, on a cutting board and halve lengthwise with a heavy knife.
- Combine 1 1/2 teaspoons of the salt, the minced garlic, onions, butter, olive oil, crushed red pepper, and black pepper in a large roasting pan. Place the pan in the oven on the lowest rack, and bake, stirring occasionally, until onions and garlic are golden, about 8 minutes. (Do not allow the garlic to burn.) Remove the pan from the oven and add the crab pieces and mix thoroughly so that the crabs are well coated with the garlic and butter mixture. Return the pan to the oven and bake, stirring occasionally, until the crabs are heated through and the garlic mixture is braised onto the shells, 13 to 15 minutes. Remove from the oven, sprinkle with the chopped parsley or cilantro, and serve hot.
CRABS - GARLIC BUTTER BAKED CRAB LEGS
I have tried and tried again to re-create the garlic butter crab legs that taste like the crabs from my favorite crab joint-The Crab House on Pier 39 in San Francisco. I have finally done it!

- Preheat your oven to 375 degrees. Meanwhile, grab yourself a small saucepan. On med low heat, melt the butter. Add the garlic (I prefer a press) and LIGHTLY saute. Squeeze in the juice of the citrus of choice. If using a lemon, squeeze the juice into your hands so that you can remove the seeds with ease. Turn the heat to low and let those flavors mesh until the oven is nice and hot. Toss in as much salt (to taste) and a couple pinches of parsley. Then whisk in that olive oil with a fork. Turn off your burner.
- Arrange your tasty crustaceans in a 9x13 baking dish, brushing each leg with the sauce. ***TASTY TIP*** I use an injector to pop a *little* extra UMPH into my crabs. Pour any remaining sauce over those puppies. Now toss the pan into the oven on the center rack.
- Bake your crabs for about 25 minutes or so (depending on how thick the legs you have are), brushing the sauce from the bottom of the pan onto the legs every 5-7 minutes. Remove from oven. Sprinkle with a few pinches o' parsley for garnish.
- I am a lazy gal, detest doing more dishes than I have to, and am a firm believer in the "waste not, want not" phrase. With that said, I just serve the crab in the same dish I baked it in so I can dip the meat into the tasty sauce, savoring every last drop. If you are the opposite, use tongs and place them on a platter and pour the buttery-goodness into ramekins. VOILA! Crab House comparable delicacy! "Ohhhh my CRAAAABS!
BAKED CRAB WITH GARLIC-CHILE BUTTER
This baked crab is a cross between a crab cake and crab dip. It's full of crab and has tons of flavor from the garlic-chile butter, which is good on anything, especially crab, lobsters and oysters! It's a perfect summertime treat. I spend a lot of time in Delaware and Maryland during the summer and there's always lots of crab around!

- Remove the garlic chile-butter from the refrigerator and using a spoon, scrape about 1 cup of the butter into shards. Add 3/4 cup of the shards to a small bowl; set aside the remaining shards.
- Add the crabmeat to the small bowl and toss gently with the butter to avoid breaking up the crab too much. Lightly season with salt. Transfer to a broiler-safe baking dish, such as ceramic (but not glass) that's about 7 by 5 inches in size (or similar) and top with the remaining butter pieces.
- Cover the baking dish with plastic wrap and refrigerate until ready to bake.
- When ready to serve, preheat the broiler to medium-high.
- Place the baking dish on a rimmed baking sheet and remove the plastic wrap. Broil until the top is golden brown and bubbling, rotating the dish a few times so it browns evenly, 7 to 10 minutes total. Carefully remove the dish from the broiler.
- Garnish the dish with a few sprigs of parsley and a few lemon wedges to squeeze over the top. Serve with the crostini.
- Combine all of the ingredients in a medium bowl and mix well with a rubber spatula until completely incorporated. Alternatively, mix the ingredients in a stand mixer fitted with the paddle attachment.
- Freeze the butter just until firm enough to shave with a spoon, about 10 minutes, or refrigerate for up to 1 week in an airtight container. Alternatively, transfer the butter to a sheet of parchment paper and form into a log. Wrap tightly with the parchment and plastic wrap and freeze for up to 1 month. Makes about 2 cups.
- Preheat the oven to 350 degrees F.
- Place the bread on a baking sheet and season with the olive oil, salt and pepper.
- Bake until golden brown, 7 to 10 minutes. Set aside until ready to serve.
FAMOUS ROAST GARLIC CRAB

- Cleaning dungeness crab:
- Holding the body backside up, place your right thumb in the joint between the upper and lower shell on the side opposite the mouth. Your palm will be stretched across the top of the shell. Hold the bottom of the crab in your opposite hand. Force your thumb in and pull up and back to your right until shell snaps off. Pour any juices in the shell into a small bowl. Cut the body into quarters with a large knife. Twist the legs off the body. Crack lightly in several places with a nutcracker and set aside.
- Heat the olive oil in a very large ovenproof saute pan over medium-high heat until hot. (You may need 2 pans.) Add the crab and garlic, and toss well. Saute for about 10 minutes. Season, to taste, with salt and pepper and mix in lemon juice. Saute for another 5 minutes, then add parsley. After another 1 or 2 minutes, remove the crab and serve in the newspaper lined cans.
CHILE CRAB
This finger-licking dish is very messy but delicious to eat. Forget the utensils and just use your hands to eat this. Get the crackers ready and have some toasted bread on the side to sop up the sauce.

- Combine shallots and red chile peppers in a food processor; pulse until a very fine paste forms.
- Crack the crab claws and the big legs slightly.
- Heat oil in a wok or large skillet over medium-high heat until very hot; add crabs and cook until shells change color and meat is cooked through, about 10 minutes. Transfer crabs to a plate, reserving oil in the wok.
- Reduce heat under wok to medium-low and add chile pepper paste; cook and stir until fragrant, 1 to 2 minutes. Add garlic and ginger. Whisk ketchup, vinegar, and sugar together in a bowl; pour over garlic-ginger mixture and stir until sauce is well mixed.
- Return crab to sauce in the wok; cook and stir for 3 minutes more, seasoning with salt and pepper. Pour eggs into wok while continuously stirring to create strands in the sauce. Add water if sauce gets too dry. Remove wok from heat and garnish crabs with cilantro.

GARLIC CRAB
This is a simi difficult recipe, but the result is ever so delectable. I had something like this at Crustaceans in San Francisco. They used the wonderful Dungeness crabs, but here in Virginia I had to settle for Blue crabs, which turned out just as nice.

- Place garlic, onions, butter, salt, red and black pepper into a roasting pan and put into a 450 degree oven.
- Be sure to watch carefully and cook until onions and garlic turn golden brown.
- Remove from oven, add crab and blend thoroughly.
- Make sure the crab (shells and all) is coated.
- Place pan back into oven on 475 degree for 15-20 minutes, turning crab about every 5 minutes.
- After the crab has been heated throughout remove from oven.
- Garlic sauce should be braised onto the shell of the crab.
- Serve as soon as possible, sprinkled with parsley and garnished with lemon.

- Wash crabs and separate claws from body. Crack the shell and cut the body into 4 to 6 pieces.
- In a large bowl, mix together ketchup, water, cornstarch, and soy sauce.
- Heat skillet and the oil, stir in garlic and shallots. Fry the garlic and shallots for 1 to 2 minutes before adding the chili. Fry another 2 minutes. Add crab pieces and fry until they turn red, about 4 minutes.
- Stir sauce mixture into the skillet until the crabs are well coated. Cover the skillet and let simmer on high heat, for 7 minutes or until the shells turn bright red.
- Remove cover and stir in the lime juice. Stir in beaten egg until it is fully cooked. Turn the heat off and stir in green onions.

BAKED CRAB

- Gently fry the shallot and garlic in butter until softened. Pour in the sherry and bring to a simmer.
- Add the crab meat, reserving the shell. Warm through for 4-5 minutes then stir in the parsley.
- Spoon the mixture back into the crab shell. Sprinkle the top with breadcrumbs and grate over a little parmesan and add a grind of black pepper. Place a few dots of butter on top.
- Put under a hot grill for 1-2 minutes to crisp the bread and melt the cheese.
- Serve with toast.
GARLIC ROASTED CRAB
Crustacean restaurants in CA are famous for their garlicky roasted crab, which is a highly guarded secret recipe. This recipe is a great substitute. I especially like to make it on a cold day, and it ranks high on my all-time favorite recipes list.

- Preheat oven to 500*.
- In a very large oven-proof bowl, place butter and olive oil.
- Put in oven to melt butter and heat bowl (the bowl needs to be hot when you add the crab).
- Break crab legs apart from body, and break body into 2 sections per crab, but do not remove meat from shell.
- Stir crab into hot butter and olive oil mixture; sprinkle in minced garlic and salt and pepper to taste.
- Toss everything together well.
- Bake for 6 minutes and toss well again.
- Bake another 6 minutes, until crab is heated through and garlic is light brown.
- Remove from oven and top with lemon juice and parsley; toss again.
- Serve from hot bowl with lots of napkins and artisanal French or sourdough bread (such as La Brea Bakery's) to soak up the delicious juices.

This is a quick and easy spread. Make up to 2 days before needed. I got this recipe from my sister. Where she found it, I don't know. I make this recipe for parties, family gatherings, and picnics.
