BAKED ELBOW MACARONI WITH ITALIAN SAUSAGE AND PEPPERS
Found this recipe on the box of whole wheat macaroni, and thought I would give it a try. Very good. I used fat free cheese and it tasted just as good as full fat. Lower in fat, and loaded with fiber.

Steps:
- Cook the elbow macaroni according to package directions. Preheat oven to 350 degrees F.
- Heat olive oil in large skillet. Add garlic, onion, peppers, and basil. Saute 3 minutes, then add the sauce and sliced Italian sausage. Simmer 5 minutes.
- Spread 1 cup of the sauce mixture into the bottom of a 9x13 baking dish.
- Layer 1/2 of the macaroni, 1/2 of the sauce mixture, 1 cup mozzarella and 1/2 cup Parmesan.
- Repeat, and bake 25 minutes.
- Let stand 10 minutes before serving.

Steps:
- Cook macaroni as directed on package (salt to taste while cooking).
- Preheat oven to 350 degrees.
- Drain and rinse macaroni with cold water. Return to pan macaroni was cooked in and add the butter or margarine, (I use I can't Believe Its Not Butter), and mix well so the butter would melt. Sprinkle with dill and mix well. Add the Italian Dressing and mix. Pour macaroni into a casserole dish and sprinkle generously with cheese. Bake in oven until cheese is completely melted. Remove from oven and mix well so the macaroni would be evenly coated in cheese.

MACARONI & HOT ITALIAN SAUSAGE
A macaroni casserole is always welcome in most families. Use mild sausage or bratwurst if you prefer. I like a bit of spice so I like to add a couple of jalapenos chopped and perhaps some olives or some hot sauce. Make it as hot or as mild as you like. Good meal for those fall/winter days ahead. Serve with a green salad and crusty rolls and there's your meal.

Steps:
- Spray a skillet with oil, heat.
- Add sausage, cook until crumbly, break it up as you are cooking the sausage, pour off excess fat.
- Add mushrooms and onion, cook until tender.
- Turn sausage, mushrooms and onion into an oven proof dish (approx 9x13").
- Pour sherry into the skillet and bring to a boil, stirring constantly to scrape up the brown bits.
- Pour sherry over the sausage mixture.
- Stir in the tomato sauce, beef consommé, water and pasta.
- Bake in 375°F oven (covered) for 1 hour or until pasta is tender.
- Stir in sour cream (or cottage cheese).
- Sprinkle with parmesan and parsley.
- Serve.
MACARONI AND CHEESE WITH SAUSAGE

- Preheat the oven to 425 degrees F.
- Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions for al dente. Reserve 1 3/4 cups of the pasta cooking water and then drain the pasta; set aside.
- Heat the oil in a large Dutch oven or saucepot over medium-high heat. Add the sausage and cook until lightly browned, breaking up the meat into small pieces, about 5 minutes. Transfer the browned meat to a plate with a slotted spoon. Add the bell pepper, onion and a pinch of salt to the drippings in the pot and cook, stirring occasionally, until softened and lightly browned, 10 to 12 minutes; transfer to the plate with the sausage.
- Carefully wipe out the pot, add the half-and-half and cayenne and bring to a simmer over medium heat. Simmer until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in the Cheddar and Gruyere, 1 handful at time, until all the cheese is melted and the sauce is smooth. Remove from the heat.
- Add the cooked pasta and reserved pasta cooking water to the cheese sauce and stir to combine. Stir in the sausage and vegetables; adjust the seasoning with additional salt. Pour into a 9-by-13-inch baking dish and bake until bubbly and lightly browned, about 10 minutes.
