Steps:
- For the wings: Preheat the oven to 400 degrees F. Line a sheet pan with foil, then place a metal rack on the pan.
- Pat the wings dry with kitchen paper, then sprinkle with the salt, pepper and smoked paprika on both sides. Place them on the rack, making sure they are not touching. Bake for 25 minutes, then pull them out. Use tongs to turn them over, then put them back in the oven and bake until golden brown and cooked through, an additional 20 minutes .
- For the hot honey sauce: Meanwhile, add the honey, barbecue sauce, Louisiana hot sauce, vinegar, jalapenos and serranos to a small pot over low heat. Stir to combine. Bring to a simmer and continue to cook on low until reduced and slightly thickened, about 20 minutes.
- Remove the wings from the oven and turn the oven to broil. One by one, dunk the wings in the sauce. Place them back on the rack and broil for 3 minutes to caramelize.
- For the garnish: Place the wings on a platter and sprinkle over the chopped parsley. Serve with a bowl of ranch dressing for dipping.
BAKED BUFFALO WINGS
These easy to make hot wings are crispy without being fried. Always yummy to snack on. They only take 10 minutes for prep, but need to be refrigerated for about an hour so the flour coating is firm. You can add more cayenne or use a higher hot sauce to butter ratio if you like them spicier! Enjoy.

BAKED BLAZING HOT WINGS
This blazing hot wing recipe is an alternative to deep-fried wings. They are baked instead of fried and stay juicy rather than crisp. I started making these about 5 years ago and they were an instant hit. I am always asked to bring the wings for all the parties we are invited to now.

BAKED HABANERO HOT WINGS
Steps:
- 1. Apply the salt and pepper on the chicken wings for the pre-rub. Let sit at room temperature for 15 minutes and preheat oven to 375 degrees. 2. Meanwhile, prepare the marinade/glaze by adding all ingredients (minus the honey) to a food processor. Pulse until smooth and completely mixed through. Transfer to a saucepan and add the 2 tbsp honey. Bring to a boil until thickened, 5 minutes. Keep ready until basting. 3. Bake the wings for about 30 minutes while basting them frequently every 10 minutes or so. 4. After 30 minutes, set to broil and let cook for another 15~20 minutes while basting with remaining glaze. Broiling near the end creates crispier and crunchier wings that we personally enjoy. 5. When wings are charred and slightly burned, transfer to a serving plate. Let cool for several minutes and garnish with thinly sliced scallion and/or toasted sesame seeds. Enjoy!!
BAKED HOT WINGS.
I was looking to find a recipe that was not overpoweringly spicy, somewhat healthy and less messy than wings doused in sauce. This is what I came up with. Once cooked, the wings can be put in a crock pot and they get more tender and flavorful the longer they are in there, but they start to fall off the bone and are messier.

CRANBERRY HOT WINGS
Chicken wings get special treatment from cranberry sauce, a little citrus and a touch of hot sauce in this no-fuss recipe. The wings are a tangy way to heat up a winter night. -Robin Haas, Cranston, Rhode Island

Steps:
- In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
- Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.
