2 cups apple cider or unsweetened juice
2 cups orange juice
1/3 cup orange marmalade
1/4 cup packed brown sugar
1/4 cup Dijon mustard
1/4 teaspoon ground ginger

Steps:

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/4 in. deep. Add cider and orange juice to pan. Loosely cover ham with foil; bake at 325° for 1 hour. Combine remaining ingredients; brush some over ham. , Bake, uncovered, 45-60 minutes longer or until a thermometer reads 140°, brushing occasionally with glaze. Serve with remaining glaze.,

1 spiral ham (bone in, butt or shank)
1/4 cup orange marmalade
1 tablespoon gingerroot, minced
2 teaspoons Dijon mustard
1/2 cup ginger ale
1/4 cup orange juice
2 tablespoons orange juice
2 teaspoons brown sugar
1 tablespoon cornstarch

Steps:

  • Prepare and heat the ham according to directions.
  • Meanwhile combine marmalade, ginger root and mustard thoroughly.
  • Remove meat 30 minutes, before the ham is done.
  • Raise oven heat to 425°F.
  • Brush with marmalade mixture.
  • Pour ginger ale and 1/4 orange juice into the roasting pan.
  • Bake uncovered for 30 minutes, basting the ham with the pan juices every 10 minutes.
  • Remove from pan, put on a board, cover lightly with foil and let rest for approx 15 minutes.
  • Pour cooking juices into a small sauce pan. Stir in brown sugar; heat and let simmer.
  • Combine the remaining orange juice with the cornstarch.
  • Add to the mix and let simmer until the sauce thickens, about 1-2 minutes.
  • Drizzle ham slices before serving.

1 (12-pound) joint (mild cure boneless) ham
7 quarts dry ginger ale
1 cup chunky ginger preserves*
2 tablespoons hot English mustard
1/2 cup soft dark brown sugar
1/2 teaspoon ground cloves

Steps:

  • Place the joint in a large pan over the hob, or burner, and add 7 quarts of dry ginger ale. Bring the pan to the boil then lower the heat slightly so that it keeps bubbling steadily for 4 1/2 hours.
  • Towards the end of the 4 1/2 hours, preheat the oven to 425 degrees F and begin the glaze.
  • In a bowl, add 1 cup of chunky ginger preserves. Stir in 2 tablespoons of hot English mustard. Add 1/2 a cup of soft, dark brown sugar and sprinkle in 1/2 a teaspoon of ground cloves.
  • After 4 1/2 hours, gently lift the ham out of the pan and place on a foil-lined baking tray. Carefully cut away the skin, leaving a thin layer of fat. There is no need to score the surface, simply slap on the glaze and place the tray with the ham into the oven for 20 minutes.
  • Serve hot or cold.

1 4 lb. bone-in ham (fully cooked)
Whole cloves (optional)
1 cup light brown sugar (packed)
½ cup grainy mustard
¼ cup honey
¼ cup fresh orange juice
2 Tsp. grated orange zest
1 Tsp. ground ginger

Steps:

  • To bake: Preheat the oven to 325° F / 165° C / gas mark 3. Line a shallow roasting pan with foil. To grill: Preheat the grill. Lightly grease the bottom of a foil pan.
  • Place the ham in the pan cut-side down. Using a paring knife, score the ham's fat in a diamond-shaped pattern, taking care not to cut into the meat. (Optional: insert cloves into the center of the diamonds.)
  • In a small saucepan, combine the glaze ingredients and bring to a boil over medium heat. Remove from heat and set aside.
  • Add 1/2 cup of water to the roasting pan with the ham in it. Cover the pan with foil and tightly crimp it at the edges. Bake or grill over indirect heat for 30 minutes.
  • Remove the foil and generously baste the ham with the glaze. Resume baking or grilling. Baste with more glaze every 10 minutes until the ham has reached an internal temperature of 140°F / 60°C (approximately 30 minutes).
  • Allow the ham to rest at room temperature for 10 minutes before serving. Remove cloves before serving.

1 whole smoked ham (14 to 18 pounds), bone in and rind on
1/2 cup honey
1/3 cup freshly squeezed orange juice
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 large onion, cut into 6 wedges
1 large orange, cut into 6 wedges
4 sprigs rosemary
1/2 cup cider vinegar
3 1/2 cups homemade or low-sodium canned chicken stock
3 tablespoons all-purpose flour
Coarse salt and freshly ground pepper

Steps:

  • Rinse ham with cool water; dry with paper towels. Let stand, uncovered, at room temperature 1 hour. Meanwhile, whisk together honey, orange juice, balsamic vinegar, and mustard; set aside.
  • Preheat oven to 300 degrees, with rack in lower third. Fit a roasting pan with a rack, and place ham, with the thicker rind on top, on rack. Scatter onion and orange wedges and rosemary around ham on rack. Transfer to oven, and cook 1 hour.
  • Remove pan from oven, and let ham cool slightly. Increase oven temperature to 350 degrees. Trim fat all over the ham to a layer of about 1/4 inch (it does not need to be perfectly even; the bottom will have less fat and more skin). Turn ham, bottom side down. Score fat on top of ham in a diamond pattern, each 1 to 2 inches, cutting about 1/4 to 1/2 inch through the fat and into meat. Baste with honey mixture. Add enough water to roasting pan to fill the bottom by about 1/4 inch.
  • Return ham to oven, and cook 1 hour more, basting often with remaining marinade (do not baste with pan juices). If necessary, add water to pan to keep juices from burning. Remove from oven; transfer ham to a serving platter; discard orange, onion, and rosemary. Let stand 30 minutes before carving ham.
  • Meanwhile, make gravy: Strain liquid from roasting pan into a liquid measuring cup or bowl, and skim off fat from surface with a large spoon. Place roasting pan over medium-high heat. Add cider vinegar, and simmer until most of the liquid has evaporated. Return defatted juices to pan along with 2 cups stock. Bring to a boil, and let simmer.
  • In a small bowl, whisk together remaining 1 1/2 cups stock and the flour; whisk into sauce. Continue simmering until liquid is reduced by half and slightly thickened. Season with salt and pepper. Serve hot with ham.
