Baked Japanese Sweet Potato With Flavoured Butter image

Looking for an easy veggie side with very little prep, but lots of taste? Try this baked Japanese sweet potato recipe! Sweet potatoes are cooked up until tender and topped with a super flavourful infused butter. Seriously good!

4 Japanese sweet potatoes (each about 10 to 12 ounces or about 2.5 pounds in total)
1/4 cup butter (softened )
1/4 teaspoon salt
1.5 tablespoons sliced green onion
1.5 tablespoons chopped cilantro
Sesame seeds
Chili pepper (sliced)
Hot sauce

Steps:

  • Preheat oven to 425 degrees Fahrenheit. Line a sheet pan with aluminum foil or parchment paper and set aside.
  • Meanwhile, scrub the potatoes clean, then prick them all over with a knife to make some holes. Place them onto the prepared sheet pan.
  • Bake the potatoes for 45 minutes to 1 hour or until tender when prodded all the way through the centre with a knife.Note: Cook time may vary, depending on the size of your potatoes. For the size I used, cook time was about 50 minutes.
  • Carefully remove potatoes from the sheet pan and cut in half (lengthwise) when cool enough to handle. Serve with the flavoured butter and garnish to taste with any of the other garnish ideas (if desired). Enjoy!
  • In a bowl, combine butter, salt, green onion and cilantro, mixing well. Serve over baked potato.

Number Of Ingredients 4

8 small slender Japanese or Garnet sweet potatoes (4 to 5 pounds total)
1 1/2 sticks unsalted butter, well softened
1 1/2 tablespoons miso paste (preferably white)
3 tablespoons finely chopped scallion

Steps:

  • Preheat oven to 450°F with rack in upper third.
  • Prick potatoes all over with a fork and put on a foil-lined large baking sheet. Bake until very soft when squeezed, 45 minutes to 1 hour.
  • While potatoes bake, stir together butter, miso, and scallion until combined.
  • Slit hot potatoes lengthwise and, using oven mitts, push in sides to puff up potato. Serve with some scallion butter in center of each and with additional scallion butter on the side.

6 cups diced peeled sweet potatoes
2 cups diced peeled tart apples
4 cups water
2/3 cup orange juice concentrate
1/2 cup packed dark brown sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/4 to 1/2 teaspoon ground cloves

Steps:

  • In a heavy saucepan, combine all ingredients; mix well. Bring to a boil. Reduce heat; simmer, uncovered, for 2 to 2-1/4 hours or until mixture is thickened and about 1 cup of liquid remains, stirring occasionally., In a blender, process mixture in batches until smooth. Transfer to jars or containers. Chill for at least 2 hours before serving. Store in the refrigerator.

1/4 cup butter, softened
1/4 teaspoon ground ginger
1/4 teaspoon cinnamon
1 pinch salt
1 1/2 teaspoons granulated sugar
4 medium sweet potatoes (yams)

Steps:

  • Heat oven to 400.
  • Have your child smoosh together the first 5 ingredients in a bowl till blended. Chill 10 minutes. Turn onto waxed paper and using paper as a aid, roll the butter into logsize of nickel. Wrap tightly in new piece and refrigerate 1 hour or longer.
  • Scrub the potatoes and prick the skin all over with a fork. Bake on oven rack 45-60 minutes, until they're soft and easily piecred through the center with a paring knife.
  • Serve each potato with 2 coin size slices of butter.
