BAKED PEARS MARSALA
A syrup of brown sugar and Marsala adds rich flavour and depth to pears, while creamy ricotta tempers the sweetness.

- Preheat oven to 200°C. Combine ingredients in a roasting pan in one layer, toss to coat, then bake until pears are tender and a syrup forms (20-25 minutes).
- Serve warm topped with a spoonful of ricotta.

BAKED MARSALA PEARS
If you can't find Marsala, Madeira makes a decent substitute, or sherry. I use dry marsala, although you can use sweet or dry. Bosc or Conference pears are good for baking as they hold their shape. Other pears that are firm when ripe are Winter Nellis, Seckel (figure two per person), Anjou, and Butter pears. As mentioned, unlike other fruits, pears are better ripened off the tree so they're usually sold unripe. Let them sit out at room temperature until they feel slightly soft at the stem end, where they begin to bulge. A ripe pear will often smell sweet at the blossom end, when you sniff it, too.

- Preheat the oven to 375ºF (190ºC).
- Trim a disk off the bottom of each pear, providing a flat bottom so you can stand the pears up in a baking dish. Fit the pears in a baking dish that's big enough to hold them all, without a great deal of room around them.
- Pour the marsala over the pears, then drizzle the honey over them. Sprinkle the sugar over the pears.
- Baking the pears, basting them frequently with the liquid (I use a turkey baster, although a soup spoon will work) as they cook. I usually baste them more frequently closer to the end of the cooking time, when the sauce thickens to a syrup.
- Cook the pears until a paring knife inserted into one meets no resistance, meaning the pears are cooked through. They should take between 50 and 60 minutes to cook, although because fruit can vary (due to variety and ripeness), check them before the recommended time. And if necessary, they may take longer.
- Remove from oven and continue to baste the pears, as they cool. Serve warm or at room temperature.
- Although cooking the pears this way provides some sauce, if you want extra (especially if you are serving them with ice cream), you can use this recipe to make more: Mix a few tablespoons of the marsala with the corn starch in a saucepan, stirring until the corn starch is completely dissolved. Whisk in the sugar, then the rest of the marsala. Bring the mixture to a boil, stirring frequently with the whisk. When the sauce begins to boil, reduce the heat and cook for about 1 1/2 minutes, stirring constantly with the whisk, until it noticeably thickens to the consistency of warmed maple syrup. Remove from heat. The sauce will thicken more as it cools. (The sauce can be made up to one week ahead and refrigerated.)

- Cut pears in half lengthwise and remove cores. Measure Marsala cooking wine into a small mixing bowl. Add brown sugar, vanilla, cinnamon and nutmeg; stir to dissolve sugar.
- Melt butter in a large 12-inch skillet. Stir in Marsala mixture. Cook over medium heat until bubbly. Place pears in pan, cut side down. Cover and cook over medium-low heat 20 minutes. Remove from heat and let stand 30-45 minutes or until cool enough to serve.
- Place each pear half in a small bowl. Stir remaining sauce in pan; drizzle each serving with 1-2 teaspoons warm sauce. Top with a small scoop of ice cream, and if desired, toasted pecans. Serve immediately.

CARAMELIZED HONEY-BAKED PEARS
The flavor of cloves infuses these pears and their tawny syrup during their long stay in the oven. Two hours is a long time, but it's worth it: the pears are transformed, and the syrup, which is not very sweet, is caramelized. The pears will be intact, but they're so soft you can eat them with a spoon. They also make a nice breakfast with yogurt.

- Preheat the oven to 400 degrees. Butter a baking dish. Cut a small cone from the bottom of each pear with a paring knife, and place a teaspoon of honey inside. Peel a strip of skin away from the top of each pear, just below the stem, but leave the stems intact. Then place the pears bottom side down in the baking dish. Sprinkle the brown sugar over the pears. Pour in water until it reaches 1/3 of the way up the side of the pears, and place the cloves in the water.
- Set the baking dish on a sheet pan, place in the oven and bake for 15 minutes. Then turn down the heat to 350 degrees and bake for two hours more, basting every 15 minutes with the liquid in the pan. From time to time, lay down the pears down in the liquid so they are thoroughly moistened and cook evenly. After two hours their skins should be shriveled and caramelized.
- Remove the pears from the oven, transfer to a platter or bowls and allow to cool. Place the liquid in the baking dish in a saucepan, and reduce to a syrup. Pour over the pears, and serve or chill and serve cold.

- Preheat oven to 350 degrees F (175 degrees C).
- Cut top quarter of pears off; create a well by scooping out the core, being careful not to puncture the bottom of the pear. Arrange pears in a shallow baking dish.
- Drizzle maple syrup over pears. Place 1 tablespoon brown sugar and 1 tablespoon butter in each pear; sprinkle with cinnamon.

BAKED PEARS WITH MARSALA
Steps:
- Preheat oven to 450 degrees F. With vegetable peeler or small knife, remove peel from lemon in 2 1/2" by 1/2" strips; squeeze juice from lemon.
- With apple corer or small knife, remove cores from blossom end (bottom) of unpeeled pears but do not remove stems. With pastry brush, brush insides of pears with lemon juice, then sprinkle insides with 2 teaspoons sugar.
- In shallow 1 1/2- to 2 quart ceramic or glass baking dish, mix lemon-peel strips, marsala, and water. Place 1/3 cup sugar on sheet of waxed paper. With pastry brush, brush pears with melted butter, then roll in sugar to coat. Place pears, bottoms down, in baking dish. Sprinkle any sugar remaining on waxed paper into baking dish.
- Bake pears 40 to 50 minutes until fork-tender, basting occasionally with syrup in dish.
- Cool pears slightly to serve warm. Or, cool completely; cover and refrigerate up to 1 day ahead. Reheat pears to serve warm later.

BAKED PEARS WITH HONEY AND GINGER
Steps:
- Preheat oven to 375°F. Spray 2 large ovenproof skillets with oil spray. Arrange half of pears cut side down in each skillet. Sprinkle 1/2 cup sugar and 1 1/2 teaspoons ginger over pears in each skillet. Mix honey, lemon juice and peel in small bowl. Drizzle over pears. Dot pears in each skillet with 3 tablespoons butter.
- Place skillets with pears in oven. Bake until juices bubble thickly and pears are tender when pierced with small sharp knife, basting occasionally, about 15 minutes. Turn pears over. Bake 5 minutes longer. Remove pears from oven. (Can be made 1 day ahead. Cool. Transfer pears and cooking syrup to large glass baking dish; cover and chill. Rewarm uncovered in 375°F. oven 15 minutes before continuing.)
- Arrange 2 pear halves on each of 8 plates. Transfer cooking syrup to 1 large skillet. Bring syrup to simmer, whisk in 4 tablespoons butter. Spoon over pears. Place 1 scoop yogurt alongside. Garnish with mint and lemon peel, if desired.
ROASTED PEARS WITH RICOTTA AND HONEY

- Place ricotta in cheesecloth-lined strainer set over medium bowl. Fold cheesecloth over; drain overnight in refrigerator.
- Puree drained ricotta, 1 tablespoon sugar, vanilla, and lemon peel in processor until smooth. Transfer ricotta mixture to small bowl. Cover and chill. DO AHEAD: Can be made 1 day ahead. Keep chilled.
- Line rimmed baking sheet with foil. Melt 1 tablespoon butter in small skillet. Add almonds; toss until golden, about 3 minutes. Add maple syrup and sprinkle with salt. Stir until coated and slightly darker brown, about 1 minute. Spoon mixture onto prepared baking sheet. Separate nuts. DO AHEAD: Can be made 4 hours ahead. Let stand at room temperature.
- Preheat oven to 400°F. Line another rimmed baking sheet with foil. Grind fennel seeds in mortar or spice grinder. Transfer to small bowl. Stir in remaining 4 tablespoons sugar. Cut pears in half; using melon baller, scoop out core. Transfer pears, cut side up, to prepared baking sheet. Press remaining 3 tablespoons butter onto cut side of pears. Mound fennel sugar over, dividing equally.
- Roast pears until tender and juices on baking sheet begin to caramelize, spooning juices over pears every 10 minutes, about 30 minutes total.
- Place 1 pear half on each plate and top with scoop of ricotta mixture. Drizzle with honey and sprinkle with caramelized almonds. Serve warm.
