BAKED HAWAIIAN SANDWICHES
These sandwiches are quick, easy, and always a hit. They can be served at receptions, baby showers, Bible studies, or tailgate parties! I have made large quantities and they have always turned out. Sandwiches can be made up in advance and stored in refrigerator until ready to bake. Try them and enjoy!

Steps:
- Place a rack into lower half of oven and preheat oven to 400 degrees F (200 degrees C).
- Arrange bottom halves of Hawaiian rolls on a baking sheet. Place a half slice each of ham, Swiss cheese, smoked turkey, and provolone cheese onto each roll bottom. Place top halves onto each bottom to make sandwiches.
- Melt butter in a saucepan over low heat and stir in sugar, dried onion flakes, poppy seeds, and honey mustard until mixture is smoothly combined, creamy, and the sugar has dissolved, about 2 minutes; brush over the tops of each sandwich.
- Bake sandwiches on the preheated oven's lower rack until tops are golden brown and fillings are hot, about 15 minutes.

- Make the dough: Pour warm water into a large bowl; sprinkle with yeast, and let stand untilfoamy, about 5 minutes. Whisk oil, sugar, and 2 teaspoons salt into yeast mixture. Add flour,and stir until a sticky dough forms. Turn out dough onto a floured surface, and knead until smooth, about 8 minutes. Transfer to an oiled bowl, and turn to coat. Let stand, covered, in a warm place until doubled in volume, about 1 hour.
- Meanwhile, make the filling: Preheat oven to 400 degrees. Spread tomatoes on a rimmed baking sheet, drizzle with 3 tablespoons oil, and season with salt. Roast, flipping after 30 minutes, until shrunken and slightly dehydrated, 45 minutes to 1 hour. Let cool. Raise oven temperature to 500 degrees (with convection on if possible).
- Turn out dough onto a lightly floured surface, and divide into 8 pieces. Form each into a ball.Let rest, draped with plastic wrap, for 15 minutes.
- Place 1 dough ball on a lightly oiled baking sheet, and shape into a 7 1/2-inch round. Arrange a layer of tomatoes on half of the dough, and dot with 2 tablespoons goat cheese. Top with 4 slices soppressata. Tear off pieces of mozzarella, and place over top. Fold dough over to enclose filling, but do not seal. Repeat with remaining dough, tomatoes, goat cheese, soppressata, and mozzarella (arranging 4 sandwiches per baking sheet). Bake until golden and cooked through, about 10 minutes. Remove from oven. Let cool for at least 15 minutes before serving.
- Meanwhile, toss arugula and basil with lemon juice and remaining 1/4 cup plus 2 tablespoonsoil. Season with salt and pepper.
- Open each sandwich, and fill with arugula-basil mixture. Cut each in half.

- Slice 6 buns (or how many you desire, just increase the ingredients).
- On the bottom half of the buns, layer sausage, then ham, then pizza sauce, then cheese, then onion, then banana peppers (seaon the peppers with black pepper) then pepperoni and lastly the salami.
- Replace the tops.
- Wrap each bun in heavy-duty foil that has been sprayed well with non-stick cooking spray.
- Place on baking sheet.
- Bake at a 400 degree oven for about 12-15 minutes, or until the cheese is melted.
- Serve immediately.
- **NOTE** banana peppers in a jar are usually found in the pickle section of any grocery store.
- Delicious!

- Heat the oven to 400 degrees F.
- Cook and stir the meat in a large skillet until brown.
- Drain off the excess fat.
- Stir in half of the tomato sauce and the oregano leaves into the meat mixture.
- Heat to boiling then reduce the heat and simmer, uncovered, for 10 minutes.
- While the meat mixture is simmering, mix the baking mix, egg and the milk.
- Measure out 3/4 cup of the batter and set aside.
- Spread the remaining batter in a greased baking pan 9 X 9 X 2-inches.
- Pour into the remaining tomato sauce over the batter, spreading evenly.
- Layer 4 slices of the cheese, the meat mixture, the mushrooms and the remaining cheese on top of the batter and tomato sauce.
- Spoon the reserved batter on the top of the cheese.
- Sprinkle the batter top with the grated Parmesan cheese and bake, uncovered, until it is golden brown, 20 to 25 minutes.
- Cool for 5 minutes before cutting into squares and serving.
