BAKED POTATO WITH BEANS AND CHEESE



Baked Potato with Beans and Cheese image

Number Of Ingredients 4

4 Medium (720g) Baking Potatoes
2 Tins (800g) Baked Beans (choose reduced salt & sugar whenever possible)
4 Heaped tablespoons (80g) Reduced Fat Cheddar Cheese (grated)
4 Teaspoons (12g) Vegetable Oil

Steps:

  • Method Set the oven to 200°C / 180°C fan oven / 400°F / gas mark 6. Wash the potatoes and use a fork to prick each one all over. Using your hands, cover each potato in a teaspoon of oil. Place each potato on a foil covered tray and cook for between 1¼ and 1½ hours. When cooked, the skin should be golden brown and crisp, and the potato should give a little when squeezed. Grate the cheese. Gently heat the baked beans in a saucepan for 3-5 minutes until hot, stirring continuously. Do not allow them to boil. Cut the potatoes in half, spoon the baked beans over them and sprinkle the cheese on top. Enjoy hot.

4 par-boiled potatoes
salt and for sprinkling
5 tbsp baked beans
1 tbsp finely chopped onions
1 tbsp chopped tomatoes
1 tsp finely chopped green chillies
1 tbsp finely chopped capsicum
salt to taste
4 tsp grated processed cheese
1 tsp dry red chilli flakes (paprika) for sprinkling

Steps:

  • MethodDivide the bean filling into 8 equal portions. Keep aside.Cut each parboiled potato into 2 halves vertically with help of a sharp knife.Scoop the potato halves, using a spoon so that a depression is created for the filling.Sprinkle some salt and pepper powder over each potato halve and stuff each of them with a portion of the prepared beans filling.Sprinkle with ½ tsp of grated cheese and little chilli flakes on each potato halve and arrange on a baking tray.Bake in a pre-heated oven at 200°c (400°f) for 10 minutes.Serve immediately.

This is such a simple, quick meal. It's a very British way to serve a baked potato! Baked beans here are different than in the US so if you can get a British brand, the recipe would be more authentic. British beans are cooked in a tomato sauce with no BBQ flavour. That said, I'm sure this would be yummy with BBQ beans as well!

2 baking potatoes
baked beans
grated cheddar cheese
salt and pepper, to taste

Steps:

  • Preheat the oven to 350°F or 180°C.
  • Bake the potatoes as per your personal preference- I bake them in the oven for about an hour, until the skins are firm and the centres are soft. You may like to smear with butter, sprinkle with salt and wrap in foil.
  • Towards the end of the potatoes' cooking time, heat the baked beans in a pan on the stove, until hot.
  • Remove the potatoes from the oven, cut into quarters without cutting the whole way through. Squeeze the outside of each quarter to "pucker up" the flesh.
  • Pour the desired amount of baked beans over the potato and sprinkle with grated cheddar.
  • Sprinkle with salt and pepper to taste and serve!

olive oil
1 tablespoon chopped fresh parsley
1/8 teaspoon fresh thyme leave
1 tablespoon fresh hot horseradish
1/2 cup diced smoked ham
1/2 cup diced swiss cheese or 1/2 cup cheddar cheese
3/4 cup baked beans

Steps:

  • Preheat oven to 400 degrees.

4 baking potatoes
1 tbsp sunflower oil
1 carrot , diced
1 celery stalk, diced
400g can haricot beans , drained
2 tomatoes , chopped
1 tsp paprika - choose sweet or hot depending on taste
1 tsp Worcestershire sauce
2 tbsp chopped chives , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Scrub the potatoes and dry well, then prick in several places with a fork. Bake directly on the oven shelf for 1-1½ hrs, until they feel soft when squeezed.
  • After 30 mins, heat the oil in a pan and gently cook the carrot and celery for 10 mins until softened. Add the beans, tomatoes and paprika and cook gently for a further 5 mins until the tomatoes are softened and pulpy. Stir in 100ml water and the Worcestershire sauce, cook for a further 5 mins then cover and keep warm.
  • Split open the potatoes and spoon in the beans. Scatter with chives and serve.

2 medium sweet potatoes (8 to 10 ounces each), scrubbed and dried
1 tablespoon olive oil
Kosher salt
1 cup cooked black beans (if canned, rinsed and drained)
1 cup shredded sharp Cheddar
Black pepper

Steps:

  • Heat the oven to 425 degrees and line a sheet pan with parchment paper. Halve sweet potatoes lengthwise, then brush all over with olive oil and sprinkle both sides with salt.
