BAKED SALMON CAKES RECIPE
These baked salmon cakes are breaded in panko, healthy and taste amazing, too! Follow our instructions for poaching or use canned salmon as a good shortcut!

- Preheat the oven to 325 degrees. Coat a baking sheet with non-stick spray and set aside.
- Begin by poaching the salmon. (If you are using canned salmon, you may skip this step.) Place salmon in a sauté pan and just cover with water. Add dry vermouth, bay leaves, and just enough salt to season the water. Bring the water to a simmer over medium heat and immediately reduce heat to low and poach salmon for approximately 8 minutes. You want it to be a little pink in the middle, as it will continue to cook in the oven. Remove salmon and discard liquid.
- Place the poached or canned salmon into a large mixing bowl and break it into large flakes with a fork. Set aside.
- In a small skillet, toast 1 cup of panko over medium heat until light brown in color. Transfer the toasted breadcrumbs from the skillet to a plate and add chopped parsley. Stir to combine and set aside.
- Add the onion, beaten egg, panko, dill, paprika, salt and pepper to a small bowl and stir to combine. Once this mixture is combined, pour it over the salmon and gently fold it in, taking care not to break up the chunks too much. If the mixture is not holding together well enough to form patties, add one more beaten egg.
- Use a heaping ⅓ measuring cup to divide the mixture into 8 portions. Gently press each portion together to form 8 2½" patties. Coat each salmon cake in the toasted panko crumbs and place on prepared baking sheet.
- Bake for 15-20 minutes or until cooked all the way through. Serve warm with a wedge of lemon or tartar sauce. Enjoy!

- Preheat your oven to the "keep warm" setting.
- Drain the salmon cans thoroughly. Place the salmon in a large bowl. Flake it well with a fork into tiny pieces.
- Add the eggs, mayonnaise, Dijon mustard, garlic, kosher salt, black pepper, and thyme. Mix well.
- Mix in the chopped parsley.
- Heat the olive oil over medium heat in a large 12-inch nonstick skillet, for about 3 minutes.
- Using an ice cream scoop, transfer four mounds of the mixture to the skillet. Pack the mixture into the scoop, then release it into the skillet and gently flatten.
- Cook until well-browned and crispy, about 3 minutes on each side. Place the cooked patties in the oven to keep warm while you cook the second batch.

- Preheat the oven to 350 degrees F.
- Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
- Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
- Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
- Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
- Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

Salmon cakes are one of my go-to emergency meals. Every once in a while I like to use fresh salmon. Salmon is one of those products, like chicken, that's very easy to get into a rut with. People generally find a few recipes that work for them, and just stay with those, but this fairly simple preparation should be easy to add to anyone's rotation. Serve with lemon wedge and remoulade sauce. You can use any bread crumbs instead of panko breadcrumbs, if desired.

- Pre-heat oven to 350'. Drain juice out of canned salmon. Make sure all off the bones are removed. Go ahead & crumble the salmon up. Add eggs, bread crumbs, onions * lemon juice. Add seasoning to taste. I like to use pepper & season salt. I sometimes use garlic salt & garlic pepper since I love garlic so much. Then just make your patties & place on pan. - Combine onion, breadcrumbs, cheese, parsley, Worcestershire sauce and egg in a large bowl.
- Flake salmon until it's uniformly crumbly and stir into other ingredients.

- If cleaning your salmon, open the can and empty contents into a medium bowl. Clean away any skin or bones and transfer the cleaned fillet into a separate medium bowl.

- Mix Salmon, and first 8 ingredients together, use large egg, if seems dry, add mayo untill it seems moist enough form into 4 patties and refrigerate for at least 1 hour, to firm. Mix rest of dry ingredients in a bowl. When oven is hot, spread patties with mayonaise, one side at a time, place in panko mixture, to absorb as much as possible, repeat with other side, place on cookie sheet sprayed with cooking spray and bake in 425 degree oven for 10 min., turn patties over and cook for 10 minutes more, checking to see if they are done to your likeness. Oven fries or sweet potato fries can be done at the same time and go great with this!
