Provided by Cheryl Najafi

Categories     dinner

Time 40m

Number Of Ingredients 15

2 lbs salmon (skinned and cut into 4" pieces (2- 14.75 oz canned salmon can be substituted))
1/4 cup dry vermouth (white wine or lemon juice)
2 bay leaves
salt (to taste)
2 tsp olive oil
1 cup panko or homemade breadcrumbs
1 Tbsp dried parsley
1/4 cup red onion (finely diced)
2 eggs (beaten)
1/4 cup panko or homemade breadcrumbs
1 tsp dill (dried)
1 tsp paprika
1 tsp lemon zest
1 tsp salt
pepper (to taste)

Steps:

  • Preheat the oven to 325 degrees. Coat a baking sheet with non-stick spray and set aside.
  • Begin by poaching the salmon. (If you are using canned salmon, you may skip this step.) Place salmon in a sauté pan and just cover with water. Add dry vermouth, bay leaves, and just enough salt to season the water. Bring the water to a simmer over medium heat and immediately reduce heat to low and poach salmon for approximately 8 minutes. You want it to be a little pink in the middle, as it will continue to cook in the oven. Remove salmon and discard liquid.
  • Place the poached or canned salmon into a large mixing bowl and break it into large flakes with a fork. Set aside.
  • In a small skillet, toast 1 cup of panko over medium heat until light brown in color. Transfer the toasted breadcrumbs from the skillet to a plate and add chopped parsley. Stir to combine and set aside.
  • Add the onion, beaten egg, panko, dill, paprika, salt and pepper to a small bowl and stir to combine. Once this mixture is combined, pour it over the salmon and gently fold it in, taking care not to break up the chunks too much. If the mixture is not holding together well enough to form patties, add one more beaten egg.
  • Use a heaping ⅓ measuring cup to divide the mixture into 8 portions. Gently press each portion together to form 8 2½" patties. Coat each salmon cake in the toasted panko crumbs and place on prepared baking sheet.
  • Bake for 15-20 minutes or until cooked all the way through. Serve warm with a wedge of lemon or tartar sauce. Enjoy!

For an elegant main course, serve Ina Garten's Salmon Cakes, made with a mix of fresh veggies, capers and Old Bay, from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     appetizer

Time 2h20m

Yield 5 servings

Number Of Ingredients 17

1/2 pound fresh salmon
Good olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
3 slices stale bread, crusts removed
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
  • Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
  • Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
  • Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
  • Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

CHEF JOHN'S FRESH SALMON CAKES

Chef John's Fresh Salmon Cakes image

Salmon cakes are one of my go-to emergency meals. Every once in a while I like to use fresh salmon. Salmon is one of those products, like chicken, that's very easy to get into a rut with. People generally find a few recipes that work for them, and just stay with those, but this fairly simple preparation should be easy to add to anyone's rotation. Serve with lemon wedge and remoulade sauce. You can use any bread crumbs instead of panko breadcrumbs, if desired.

Time 1h35m

Yield 4

Number Of Ingredients 15

1 tablespoon extra-virgin olive oil
¼ cup minced onion
2 tablespoons minced red bell pepper
2 tablespoons minced celery
salt and pepper to taste
1 tablespoon capers

¼ cup mayonnaise
¼ cup panko bread crumbs
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 pinch cayenne pepper
1 pinch seafood seasoning (such as Old Bay®)
1 tablespoon panko bread crumbs, or to taste
2 tablespoons olive oil, or as needed

Steps:

  • Heat extra virgin olive oil in a skillet over medium heat. Cook and stir onion, red pepper, celery, and a pinch of salt in hot oil until onion is soft and translucent, about 5 minutes. Add capers; cook and stir until fragrant, about 2 minutes. Remove from heat and cool to room temperature.
  • Stir salmon, onion mixture, mayonnaise, 1/4 cup bread crumbs, garlic, mustard, cayenne, seafood seasoning, salt, and ground black pepper together in a bowl until well-mixed. Cover the bowl with plastic wrap and refrigerate until firmed and chilled, 1 to 2 hours.

  • Heat olive oil in a skillet over medium-heat. Cook patties in hot oil until golden and cooked through, 3 to 4 minutes per side.

OVEN BAKED SALMON PATTIES

Oven Baked Salmon Patties image

A healthier version of the usual pan fried salmon patties, the recipe is for 2 people, but can be doubled for larger amounts. My DH is not a fan of any fish that is not deep fried, or of Salmon, I had to find something that he would like and would fit into his diet! I combined an oven fried eggplant method into this and he loved it!
