2 tablespoons butter
2 tablespoons bacon drippings or 2 tablespoons butter
1 large walla walla onions or 1 large Spanish onion, coarsley chopped
2 whole tart cooking apples, sliced and chopped
1 (32 ounce) jar sauerkraut, drained and dried 'til crunchy
1 (28 ounce) can crushed tomatoes
1/2 cup brown sugar
1/2 cup dry white wine
hot sauce

Steps:

  • Melt butter and bacon drippings if using in a large frypan.
  • Swirl to mix.
  • Add onion and apples, saute until nearly tender.
  • Combine with sauekraut in a large mixing bowl.
  • Stir in crushed tomatoes, undrained, brown sugar, wine and hot sauce.
  • Stir well and turn into a 13 x 9 inch baking dish.
  • Cover tightly and bake at 325f degrees 1 hour.
  • Uncover and bake 30 to 45 minutes more.

This easy peasy recipe is loaded with flavor and cooked-all-day goodness that's ready in under an hour!

2 pounds bratwurst sausage
4 cups sauerkraut (drained, rinsed, squeezed dry)
1 tbsp So Nourished Brown Sugar
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Drain, rinse and squeeze dry (but not bone dry) the sauerkraut. Add it to the bottom of a casserole dish large enough to hold the sausage in one layer.
  • Sprinkle the sauerkraut with salt and pepper and 1 tbsp of So Nourished brown sugar substitute.
  • Top with the sausage and prick the each sausage with a fork in 4-5 places.
  • Bake uncovered at 350-F for about 45 minutes or until the sausage have reached an internal temperature of 165-F.

This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

4 pork chops
salt and freshly ground black pepper to taste
1 tablespoon oil, or as needed
1 (20 ounce) can sauerkraut, drained
1 apple - peeled, cored, and diced
1 onion, finely chopped
¼ cup brown sugar
½ tablespoon caraway seeds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • Rub pork chops with salt and pepper on both sides. Heat oil in a skillet over medium-high heat and pan-fry pork chops on both sides until browned, 5 to 7 minutes per side. Place browned pork chops into the prepared casserole dish.
  • Combine sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl; cover pork chops with the mixture. Cover dish with aluminum foil.
  • Bake pork chops in the preheated oven until no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

This German recipe is borrowed (with a tweak) from Recipes4us.co.uk. The original recipe calls for 120ml beef stock, but I wanted a vegetarian version. You could revert to the beef stock or replace my suggested vegetable stock with a small amount (say ½ teaspoon) of Marmite or Vegemite dissolved in 120ml of very hot water. 2 tablespoons butter
1 onion, sliced
700 g sauerkraut, drained (28oz)
3 medium apples, peeled and diced
360 ml white wine
120 ml vegetable stock
1 teaspoon brown sugar
1 teaspoon celery seed

Steps:

  • Heat the butter in a large oven proof lidded casserole dish, add the onions and sauté until soft and transparent.
  • Add the sauerkraut, mix well and cook, uncovered, over a low heat for 5 minutes.
  • Add the apples to the sauerkraut mixture together with the wine and enough stock to cover; mix well then continue to cook over a low heat for 30 minutes; preheat the oven to 170C, 325F, gas mark 3 during this cooking time.
  • Stir in the sugar and celery seeds then cover and transfer to the oven; bake for 30 minutes and serve hot.
