BACON-ROASTED BUTTERCUP SQUASH WITH ROSEMARY HONEY



Bacon-Roasted Buttercup Squash with Rosemary Honey image

Savory, but slightly sweet and spicy, this recipe for roasting squash or other root vegetables is divine!

Number Of Ingredients 13

For the Rosemary Honey:
1/2 c. honey (I used Sourwood Honey: yum!)
1/4 c. cider vinegar
1 T. soy sauce
2 sprigs of fresh rosemary
1/4 t. red pepper flakes
For the Roasted Buttercup Squash:
5 c. Buttercup Squash, diced into 1/2" cubes (alternatively, you could use many other types of root vegetables, such as acorn squash, butternut squash, carrots, or sweet potatoes)
8 slices of bacon, sliced into 1/2" slices (aka lardons)
1 T. brown sugar
1 T. canola oil
Sea salt, and freshly ground black pepper, to taste
Quinoa, cooked according to package directions

Steps:

  • To make the Rosemary Honey: In a small saucepan, bring the honey, vinegar, soy sauce, rosemary and red pepper flakes to a simmer over medium heat. Reduce mixture to about 1/2 c., for about 8-10 minutes - mixture will thicken.
  • Remove from heat, allow to cool. Discard rosemary.
  • To Roast the Squash and Bacon: Pre-heat the oven to 375º.
  • In a bowl, toss together the squash, bacon, sugar and oil, and season with sea salt and freshly ground black pepper, generously.
  • Spread the squash and bacon onto a parchment paper lined rimmed baking sheet, into a single layer. Roast, stirring the mixture about halfway through roasting to ensure more even caramelization. This should take 25-30 minutes, depending on your oven.
  • Spoon mixture over cooked quinoa, and drizzle with honey.

1/4 cup tablespoons honey
1 tablespoon fresh rosemary (finely chopped)
1/4 cup Rosemary & Sea Salt Wasa Thin crackers (crushed)
Olive oil

Pepper

Steps:

  • Preheat oven to 400 degrees.
  • Toss cubed butternut squash, honey and rosemary in a large bowl; spread on large baking sheet and season with salt and pepper.
  • Roast for 25 - 30 minutes, flipping once while roasting.
  • Sprinkle crushed Wasa Thins over roasted butternut squash and spray with spray with olive oil.
  • Broil until crackers are lightly browned and crispy (about 2 minutes).

2 acorn squash
Salt
1 stick butter
1/2 cup brown sugar (firmly packed)
2 tablespoons minced fresh rosemary
1/4 teaspoon chili powder

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the acorn squash in half from top to bottom using a sharp knife. Use a spoon to scrape out the stuff inside. Cut each half into 4 equal wedges, and then place the wedges, skin-side down, in a baking dish. Sprinkle lightly with salt.
  • Combine the butter, brown sugar, salt, rosemary and chili powder in a bowl and mix into a paste. Smear the paste all over the squash.
  • Roast in the oven for 20 minutes. Then baste with the butter mixture from the bottom of the pan and return to the oven for another 20 minutes.
  • Serve in the baking dish, drizzling more sauce at the end. Yummy!

  • Preheat oven to 425 degrees. Mix oil, sugar, and rosemary in a small bowl. Arrange squash wedges in a single layer, cut side up, on a rimmed baking sheet. A pungent bath of minced garlic and rosemary gives a squash casserole new life, and in turn, this casserole gives new life to your fall and winter tables. It comes from Sarah Leah Chase, a cook on Nantucket, Mass., whose book "Cold-Weather Cooking" is full of good things for the winter holidays. Flouring the squash cubes helps them form a crust, and prevents the casserole from becoming mushy; the whiff of ginger in the coating is barely detectable but adds freshness. Slow-baking the squash turns it tender and sweet.

2 medium-size winter squash (such as butternut, delicata, Hubbard or a combination) peeled, seeded and cubed (about 8 cups cubes)
¼ cup all-purpose flour
1/8 teaspoon cornstarch
2 teaspoons ground ginger
1 teaspoon salt, more to taste
½ teaspoon black pepper, more to taste
4 to 6 garlic cloves, minced
½ cup finely chopped parsley
2 tablespoons finely chopped fresh rosemary
1/3 cup plus 2 tablespoons olive oil

Steps:

  • Heat oven to 325 degrees. Place squash cubes in a large mixing bowl.
  • In a small bowl, whisk together flour and cornstarch, then whisk in ginger, salt and pepper. Add half the dry ingredients to the squash and toss gently but thoroughly to combine. Add remaining dry ingredients and toss again until evenly coated. Add garlic, parsley, rosemary and 1/3 cup oil. Toss gently but thoroughly to coat.
  • Transfer squash to a 9-by-13-inch baking dish and drizzle with remaining 2 tablespoons oil. Cover tightly with aluminum foil and bake for 1 to 1 1/2 hours, until tender. Uncover and bake until very soft, another 45 to 60 minutes. (The casserole can be cooled and refrigerated at this point for up to 2 days. Bring to room temperature before resuming.)
  • To finish, brown the top: Turn oven to 350 degrees. (Alternatively, turn oven to 325 degrees with convection, or use the broiler.) Heat squash until sizzling on the bottom and crusty on the top, about 10 minutes. (If reheating from room temperature, it will take longer, 20 to 30 minutes.) Serve immediately.

5 tablespoons extra-virgin olive oil
2 medium butternut squash (about 4 pounds), peeled and cut into 1-inch chunks or 3 1/2 pounds pre-cut butternut squash chunks (11 cups)
Kosher salt
Freshly ground black pepper
1/2 large red onion, cut into thin slices
1 tablespoon chopped fresh rosemary or 1 teaspoon dried
3/4 cup chicken or vegetable broth
2 cups red or black seedless California grapes, stemmed and rinsed
2 cups fresh breadcrumbs
1/2 cup finely grated Parmesan

Steps:

  • Preheat the oven to 375°F. Grease a 9 x 13-inch baking dish. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add half the squash and season liberally with salt and pepper. Cook stirring occasionally, until browned, about 5 to 7 minutes, then transfer to the baking dish. Repeat browning of remaining squash with another tablespoon of olive oil and more salt and pepper. Transfer to baking dish. Heat another tablespoon of the oil in the skillet and add the onion and rosemary. Season with salt and pepper and cook until softened, about 5 minutes. Pour in the broth and scrape up any browned bits on the bottom. Bring to a simmer and pour into baking dish. Cover with foil and bake until squash is very tender, about 40 minutes. Raise the oven temperature to 450°F. Remove the dish from the oven and take off the foil. Sprinkle the grapes over the top. In a medium bowl, mix together the breadcrumbs, Parmesan and remaining 3 tablespoons olive oil and season with salt and pepper. Sprinkle over the squash. Bake until top is browned and bubbling, or about 10 to 15 minutes longer.
