Pastry for 9" pie
2 cups cooked puréed pumpkin
1 cup brown sugar
6 eggs, lightly beaten
2 cups cream
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon mace
1/3 cup cognac
4 tablespoons finely chopped candied ginger

Steps:

  • Line a 9" pie tin with pastry and place foil on top. Fill with dry beans and bake in a 400°F. oven for 10 minutes. Remove the beans and foil.
  • Combine the pumpkin with the sugar, eggs, cream, seasonings and cognac and blend well. Pour through a strainer into the pie shell. Sprinkle with chopped candied ginger and bake in a 375°F. oven for 30-35 minutes, or until the pumpkin is set. Serve slightly warm with cheese or whipped cream, or both.

1 1/4 cups cream
1 cup sieved cooked pumpkin or 1 cup canned pumpkin
1/2 tablespoon cornstarch
1/3 cup brown sugar, packed
2 tablespoons granulated sugar
1/8 teaspoon cinnamon
1/8 teaspoon allspice
1/8 teaspoon ginger
1/4 teaspoon salt
ground nutmeg

Steps:

  • Prepare a 9 inch shell unbaked.
  • Preheat oven to 350°F.
  • Combine eggs, cream, and pumpkin in a glass bowl.
  • Blend at low speed until smooth and well mixed.
  • Sift dry ingredients except the nutmeg with pumpkin mix.
  • Blend again at high speed this time until smooth.
  • Pour into the shell. Sprinkle with the nutmeg.
  • Bake 30 minutes or until crust is browned and filling set. Let cook at room temp in the pan. Makes 6 to 8 servings.

2 cups all-purpose flour
3/4 teaspoon salt
2/3 cup shortening
4 to 6 tablespoons cold water
FILLING:
6 large eggs, room temperature
1 can (29 ounces) solid-pack pumpkin
2 cups packed brown sugar
2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon each ground cloves, nutmeg and ginger
2 cups evaporated milk
DECORATIONS (OPTIONAL):
Dough for single-crust pie
1 large egg, beaten

Steps:

  • Preheat oven to 450°. In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half. On a floured surface, roll out each portion to fit a 9-in. pie plate. Place crust in plates; trim crust to 1/2 in. beyond edge of plate. Flute edges. , For filling, beat eggs in a large bowl. Add the pumpkin, brown sugar, cinnamon, salt, cloves, nutmeg and ginger; beat just until combined. Gradually stir in milk. Pour into crusts. , Bake for 10 minutes. Reduce oven setting to 350°; bake until a knife inserted in the center comes out clean, 40-45 minutes longer. Cool pies on wire racks for 1 hour. Refrigerate at least 3 hours before serving. Refrigerate leftovers., If desired, use additional pie dough to make decorations. , For Pumpkins: Roll a small amount of pie dough into a ball; score sides of ball with the blunt side of a knife to create ridges. Place on parchment-lined baking sheet, flatten slightly and insert a whole clove to make the stem. Refrigerate until firm. Brush with beaten egg and bake at 400° until light golden brown and baked through, 15-20 minutes. , For Vines: Roll out pie dough to 1/8-in. thickness; cut narrow strips of dough in various lengths. Lay strips on parchment-lined baking sheet and shape into coils as desired. Refrigerate until firm. Brush with beaten egg and bake at 400° until light golden brown, 8-10 minutes. , For Leaves: Roll pie dough to 1/8-in. thickness. Cut out leaves using mini leaf-shaped cutters. Using a knife, score leaves to create veins. Refrigerate until firm. Brush with beaten egg and bake at 400° until light golden brown, 8-10 minutes., Arrange baked pumpkins, vines and leaves on surface of chilled pie.

3/4 teaspoon nutmeg

2 cups heavy cream
3 eggs, separated

Steps:

  • Preheat oven to 450 degree.
  • Mix pumpkin, sugar and spices together.
  • Add cream, mixing well.
  • Beat egg yolks, add to pumpkin mixture, and mix well.
  • Beat egg whites until they form stiff peaks.
  • Gently fold eggs whites into pumpkin mixture until just blended. Do not over mix.
  • Pour or spoon mixture into unbaked pie shell.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

It's best to make your own pie shell instead of using the ready made kind because they aren't deep enough. This recipe is easily doubled.

1 cup milk
1 cup light cream
½ cup brown sugar
½ cup white sugar

1 tablespoon all-purpose flour
