ROASTED SWEET POTATOES
Steps:
- Preheat the oven to 350 degrees F.
- Put the sweet potato halves in a large bowl and set aside. In a small saucepan, melt the butter over low heat. Add the sugar and allspice and stir until melted and combined. Pour the spiced butter over the potatoes. Season with salt and pepper. Toss to coat. Put the potatoes on a rimmed baking sheet.
- Roast until the potatoes are tender, turning once, about 45 minutes depending on the size of the potatoes. Transfer to a warmed platter and drizzle over any accumulated pan juices. Taste and adjust for seasoning with salt and pepper. Serve immediately.

TWICE BAKED SWEET POTATOES

- Rub sweet potato skins with salad oil. Wrap potatoes in aluminum foil and bake in preheated oven for 1 hour, or until soft.

- Slice potatoes in half lengthwise and pierce the meat using a fork or knife. Preheat oven to 350 degrees. While preheating oven add 3-4 tablespoons butter or margarine to a baking sheet or baking dish and melt in oven (for 4 potato halves, you should have a liberal amount of butter or margarine coating the bottom).

BAKED SWEET POTATOES
Sweet potatoes are in the same family as other potatoes but cooking them requires a different approach to get the fluffy interior and sweet caramelized flavor we all love. After testing several techniques-wrapping in foil, pricking and not pricking, using a roasting pan-we found the following method delivered on all fronts, with minimal effort. Pricking with a fork allows steam to release and the potato flesh to separate from the skin, something that didn't always happen otherwise. Baking the potatoes on a wire rack nested in a baking sheet also helped the potatoes cook more evenly (and made cleaning up much easier). Lastly, allowing the potatoes to rest in the turned-off oven for 30 minutes after baking allowed the flavors to develop even further, though you can skip this step if you are short on time.

SAVORY TWICE BAKED SWEET POTATOES
I was looking for an easy dinner that didn't involve a trip to the grocery store, and this is what I came up with based on what I had lying around. This is a pretty nice way to prepare a sweet potato, if you aren't in the mood for something overly sweet. I paired half of a potato with a large serving of steamed spinach for a light but satisfying vegetarian dinner.

- Preheat oven to 375°F.
- Wash sweet potato and cut in half lengthwise.
- Place potato halves face down on a foil-covered greased cookie sheet ( i cover the potato halves in foil for more even cooking).
- Bake potatoes for about 30 minutes.
- While the potatoes are baking, saute onions and mushrooms in the olive oil over medium heat until the onions are translucent and the mushrooms give off liquid, about 10 minutes.
- Take potatoes out of oven, carefully scoop the potato out of the skins and mash in a mixing bowl.
- Add onions, mushroom, cayenne, feta, salt and pepper to the mashed sweet potatoes, mixing ingredients together.
- Divide mixture in half and scoop it back into the empty potato skins.
- Bake the potatoes for another 8-10 minutes on 375, broiling for the last minute or two of cooking time if you'd like to crisp the tops of the potatoes slightly.

BAKED EGGS IN SWEET POTATO BOATS
This breakfast recipe is a great way to use up extra sweet potatoes. Take roasted sweet potatoes, make a hollow for an egg, bake and top with an herby relish.

- CLEAN POTATOES: Thoroughly scrub the sweet potatoes in cold water. Clean to remove all dirt and debris. Completely dry the potatoes. Cut the potatoes in half lengthwise.
- PREP POTATOES: Place the potatoes flesh-side down on the sheet pan. Pierce each back side of the potato 3 to 4 times with the tines of a fork. Flip the potatoes flesh-side up. Drizzle the oil over all the potatoes and take your time to rub the oil into both sides of the potatoes so all parts of the potatoes are sufficiently covered. Check for doneness by inserting a fork into the biggest potato. If it goes in easily, the potatoes are ready. If not, bake an additional 5 minutes. Cook until fork tender, checking every 5 minutes.
