BAKED ZUCCHINI TATER TOTS
Steps:
- Place the potatoes in a medium pot and cover them with water. Bring to a boil and cook for 8-10 minutes, until a fork can pierce the edges. Do not overcook or they will be too soft to grate. Drain and rinse in cold water immediately, then pat them dry. Set aside.
- Meanwhile, grate your zucchini onto paper towels or a clean dish towel. Then squeeze out as much water as you can over your kitchen sink. Transfer the shredded zucchini to a large mixing bowl and then grate the potatoes into the same bowl and add the seasoning. Mix well.
- Preheat the oven to 425°F / 218°C and line a large baking sheet with parchment paper.
- Use your hands to shape the mixture into cylinder shapes, using approx. 1 tablespoon of the mixture for each one. Keep the tater tots small for a crispier texture. Place each one on your prepared tray and repeat with the remaining mixture. You will get 24-30 tater tots.
- Bake for 20-25 minutes, then carefully flip them over and bake for an additional 10 minutes, until desired crispiness is reached.

ZUCCHINI TATER TOTS
These tots are a healthy twist on classic tater tots. Classic tots are deep fried and made with potatoes, but these guys are baked and feature zucchini. Zucchini packs a nutritional punch! It's high in fiber and several vitamins and minerals including Vitamin C, Vitamin K, B vitamins, potassium and manganese. One medium zucchini supplies more than half of your daily Vitamin C needs! To make the tots, I mix shredded zucchini with some minced shallot and dried spices and bind it all together with an egg, breadcrumbs and yummy cheese. I like to use Italian spices and a mixture of mozzarella and Parmesan cheese and serve the tots with marinara sauce for dipping. But what I love about this recipe is that it's a blank slate and you can use whatever types of seasoning and cheese you like. They would also be delicious with cheddar or Monterey Jack cheese, dipped in a healthy Ranch style sauce. Just be sure to wring out as much water from the zucchini as you can. Zucchini has a high water content so this step is important to prevent the tots from getting soggy. After forming the mixture into tater tot shapes, simply spray them with olive oil and pop them in the oven. After about 20 minutes, they'll be puffed up and ready to be devoured!

- Preheat oven to 400°F.
- Place the grated zucchini in cheesecloth or a kitchen towel and wring all of the excess water out (it will be a lot!).
- Place the zucchini in a bowl along with all of the other ingredients except the olive oil. Mix until combined. If the mixture seems too wet, add a little more breadcrumbs.
- Line a baking sheet with parchment paper. Take a tablespoon of the mixture and form it into an oval shape. Repeat with the remaining mixture. Arrange the tots on a single layer on the baking sheet and spray or brush the tops lightly with olive oil.
- Bake until puffed up and cooked through, about 20 minutes. Flip halfway through cooking. Serve with marinara sauce or other dipping sauce.
LOADED PULLED PORK TATER TOT BITES

- Preheat the oven to 450 degrees F (230 degrees C). Spray the cups of a 12-cup muffin pan with nonstick cooking spray.
- Place 4 to 5 frozen potato nuggets into each muffin cup.
- Bake in the preheated oven for 10 minutes.
- Remove muffin pan from the oven. Using a small glass (e.g. a small juice glass or shot glass) twist and press the tots downward in each muffin cup to create a potato cup. Return to the oven and bake until deep golden brown, about 15 more minutes.
- Remove the pan from the oven and distribute pulled pork evenly between the cups. Add 1 tablespoon of shredded cheese to each potato cup, being careful to try and keep it on top of the pulled pork (not down the sides of the muffin cups).
- Return to the oven and bake until the cheese has melted, 4 to 5 minutes. Remove from the oven and transfer the potato cups to a serving platter.
- Drizzle with BBQ sauce, add a small dollop of sour cream, and sprinkle with green onions before serving.

- Allow zucchini to sit for 20 minutes as the salt draws out moisture.
