Similar to baked apples. You can add chopped walnuts, nutmeg, cranberries, or anything you like.

2 large pears
1 teaspoon maple syrup, or to taste
2 tablespoons brown sugar
2 tablespoons butter
1 teaspoon ground cinnamon
½ cup vanilla ice cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut top quarter of pears off; create a well by scooping out the core, being careful not to puncture the bottom of the pear. Arrange pears in a shallow baking dish.
  • Drizzle maple syrup over pears. Place 1 tablespoon brown sugar and 1 tablespoon butter in each pear; sprinkle with cinnamon.
  • Bake in preheated oven until pears are easily pierced with a fork, 35 to 50 minutes. Serve with ice cream.

100g ricotta
½ tsp cinnamon
4 tbsp clear honey , plus extra to serve
8 crisp amaretti biscuits

Steps:

  • Cut each pear in half, then place on a large baking tray. Use a teaspoon to scoop out the cores and make a dip in the centre of each pear. If your pears are firm, you may need to use a sharp knife to do this. Dollop about 1 heaped tsp ricotta into each dip, then sprinkle over the cinnamon and drizzle with a little honey.
  • Heat oven to 190C/fan 170C/gas 5, then roast the pears for 10 mins. Tip the biscuits into a food bag and use a rolling pin to lightly crush them. Remove the pears from the oven, then scatter the crumbs over each pear. Return to the oven for another 10 mins or until the pears are soft and the biscuit golden brown. Serve drizzled with honey.

2 Bosc pears, halved and cored
½ cup heavy whipping cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch baking dish with 1 tablespoon butter. Sprinkle 1 tablespoon sugar into buttered dish.
  • Rub remaining 1 tablespoon butter over pear halves; arrange pears cut sides down in prepared baking dish and sprinkle with remaining 1 tablespoon sugar.
  • Bake in preheated oven for 10 minutes. Pour cream over pears and continue baking until tender, about 20 minutes more.

1/3 cup raisins
12 tablespoons maple syrup
2 tablespoons butter
1/2 teaspoon vanilla extract
cinnamon

Steps:

  • Preheat oven at 350 degrees F.
  • Slice pears in half lengthwise.
  • Scoop out core and stem.
  • Place in baking pan.
  • Fill the hollowed center with raisins.
  • Mix syrup and vanilla and pour evenly into each center (about 2 tablespoons), dot with one-sixth of the butter and top with dash of cinnamon.
  • Bake for around 25 minutes.
  • Serve warm, possibly topped with whipped cream.

6 firm green Anjou pears, peeled, halved and cored
3 tablespoons sugar
1 teaspoon ground cinnamon
3 tablespoons coconut oil, cut into 12 small pieces
3/4 cup white wine
1/4 to 1/2 cup dried currants
6 ounces mascarpone, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the pears, cut-side up, in a shallow 2-quart baking dish. Sprinkle with the sugar and cinnamon, and add a small pat of coconut oil to each pear half. Pour the wine into the bottom of the baking dish, being careful not to disturb the pears. Sprinkle the currants over the pears -- it's OK if some fall into the wine. Place in the oven and cook until fork tender, about 50 minutes.
  • To serve, set pears on a plate and dollop with mascarpone. Drizzle with some of the juices and currants from the baking pan.

POACHED PEARS WITH HONEY, LEMON BALM AND RAISINS



Poached Pears with Honey, Lemon Balm and Raisins image

13 cups cold water
1/2 lemon
4 (6-ounce) firm Bosc pears
1 (10 by 20-inch) piece cheesecloth
5 tablespoons honey
2 pieces dried tangerine peel, 1 by 2 inches, soaked in hot water for 20 minutes, until softened
1/2 cup raisins
18 sprigs lemon balm (1 to 2 bunches), about 7 inches long
4 sprigs fresh mint

Steps:

  • To prepare pears, place 6 cups of the cold water in a bowl. Squeeze the juice from 1/2 lemon into the bowl and add the lemon too. Core the pears from the bottom and peel, leaving the stems intact. As you peel each pear, place it in the bowl to prevent it from discoloring. Also place the cores and small pieces in the bowl. After the pears are peeled, wrap the cores and small pieces in the cheesecloth, folded double, and tie tightly with string. Place the remaining 7 cups of cold water and the honey in a pot and stir to dissolve the honey. Add the tangerine peel, raisins, lemon balm and cheesecloth bundle, together with the pears. Cover the pot and bring to a boil over high heat. Lower the heat and poach the pears at a low boil for 1 1/2 hours, leaving the lid ajar. Touch the pears with the tip of a chopstick. A properly poached pear should give a little; the pears should be soft and have taken on a light beige color. Turn off the heat. Remove the lemon balm, tangerine peel, and cheesecloth bundle from the pot and discard. Transfer each pear to an individual soup plate, sitting it upright, stem up. Divide the sweet soup equally among the plates. There should be about 4 1/2 cups of soup. Divide the raisins equally as well. Garnish each pear by inserting a sprig of mint into it at the stem and serve.

So yummy. Pears oven baked and poached in a honey-wine sauce with cinnamon and orange flavors infused. The first time DH and I had this for dessert we were simply astounded at how these simple flavors combined to make such a rich and flavorful treat.

4 ripe pears, washed and dried (preferably Bosc with stems still attached)
2 cups riesling wine or 2 cups other fruity wine
1/4 cup honey
4 cinnamon sticks
4 bay leaves
4 slices orange zest

Steps:

  • Tip: For the orange zest, scrub the orange first and then use a vegetable peeler to remove the strips of zest. Make sure to leave behind the bitter, white pith.
  • Preheat oven to 400 degrees. Slice a thin piece off the bottom of each pear so that it will sit flat, standing up straight.
  • Arrange the pears in a pie pan or oven-proof small casserole dish.
  • Whisk wine and honey in a medium bowl until blended. (I usually have to microwave mine to make the honey melt a bit so that they will combine.).
  • Pour honey-wine mixture over pears and add cinnamon sticks, bay leaves and orange zest to the liquid.
  • Roast the pears, basting every 15 minutes, until they are tender and a bit wrinkled (about 45 minutes to 1 hour).
  • Use a slotted spoon to transfer the pears to serving dishes. Put the honey-wine mixture into a small saucepan and bring to a boil. Boil until slightly thickened, about 6 minutes. Drizzle over pears and garnish with cinnamon sticks and orange zest.
  • Serve warm, at room temp, or chilled.
  • Note: We sometimes put a small scoop of vanilla ice cream on this. Very rich and yummy. Another option: try cheese, such as ricotta or mascarpone -- sweeten cheese and stir it first.

1 1/2 cups dry white wine
1 1/4 cups sugar
the zest of 2 navel oranges removed with a vegetable peeler
two 3-inch cinnamon sticks
1/3 cup orange-flavored liqueur

Steps:

  • Peel the pears, leaving the stems intact and dropping the pears as they are peeled into a bowl of cold water acidulated with the juice of the lemon. In a saucepan combine the wine, 2 cups water, the sugar, the zest, the cinnamon sticks, and the liqueur, bring the liquid to a boil, stirring until the sugar is dissolved, and simmer the syrup for 5 minutes. Arrange the pears, drained, on their sides in a baking dish just large enough to hold them in one layer and pour the syrup over them. Cover the dish tightly with foil and bake the pears in the middle of a preheated 375°F. oven for 30 minutes. Remove the foil, turn the pears over gently, and replace the foil. Bake the pears for 20 to 30 minutes more, or until they are tender. Let the pears cool, transfer them carefully to a deep serving dish, and ladle the cooking syrup with the zest over them. Chill the pears, covered, overnight and serve them with some of the syrup.

4 ripe pears, such as Comice or Anjou, peeled and cored
2 1/2 cups milk
3/4 cup sugar
3 large eggs
3 large egg yolks
1 tablespoon pear brandy

Steps:

  • Preheat oven to 275 degrees. Fill a large bowl with cold water, and squeeze the juice from the lemon quarters directly into the water; add the rinds. Slice pears 3/8 inch thick; add to acidulated water.
  • In a medium saucepan, bring the milk to a boil. Meanwhile, whisk sugar, eggs, egg yolks, and brandy in a large bowl until the batter leaves a ribbonlike trail on the surface for 3 seconds when you raise the whisk. Slowly add hot milk to egg mixture, whisking constantly, until milk has been incorporated.
  • Using a slotted spoon, lift pears from the water, and blot dry with paper towels. In a 10-inch-round pie plate, arrange pears in a circular pattern. Pour milk-and-egg mixture over pears.
  • Place pie plate in a shallow baking pan, and fill the pan with enough boiling water to cover the pie plate halfway up. Transfer to oven; bake until the custard has set and is just brown, about 1 1/2 hours. Transfer to a wire rack to cool slightly before serving.
