BAKED TATER TOTS

Steps:
- Preheat oven to 425° F
- If using large potatoes, cut in half or quarters and place in a large saucepan covered with cold water. Bring to a boil and cook for about 6-7 minutes until parboiled. Drain well and let cool.
- Using a box grater with the large grid, finely shred potatoes. Drain potatoes on a towel, removing as much water as possible.
- Transfer shredded potatoes to a large bowl. Stir in flour, garlic powder, onion powder, oregano and dill; season with salt and pepper, to taste.
- Form potatoes into tots.
- Place tots on a parchment lined baking sheet and place in the pre-heated oven for 25-30 minutes, turning on each side while baking.
- Serve immediately

BAKED TATER PIGS
At the fair we ate Tator Pigs, sausages cooked in a whole potato with sour cream, butter and salt and pepper. Then the local vendor couldn't sell them any more. This is my adapted recipe. A definite kid pleaser!

Steps:
- In large mixing bowl, mash tator tots.
- Add saltine crackers.
- In another bowl, wisk egg, milk and 1 tsp oil.
- Pour into tator tots and mix with hands or spoon.
- Wipe off Sausage links with paper towels.
- Take a 6 X 6 piece of foil. Spread a little oil on the foil.
- Mound two spoonfuls of tator tot mixture. Place a sausage on the mound. Mold the tator tots around the sausage, Add more for the top of sausage if needed.
- Take the foil and press around the sides and top.
- Do the same with the other sausages.
- Preheat oven 375*.
- Carefully take off the foil and place on Pam sprayed tray.
- Bake 20 Minutes. Remove from oven. Let set 10 minutes.
- Remove from tray by spatula.
- Alternate baking method:.
- Spray Pam in muffin cups.
- Mound and flatten two spponfuls tator tot mixture. Add one sausage broken in small pieces. Cover with tator tot mixture. Press down.
- Bake 20 minutes. Let set 10 minutes before removing.
- Remove from muffin pan by spatula.
- Serve with sour cream or ranch dressing.

HOMEMADE TATER TOTS

- In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 375 degrees F.
- Finely shred potatoes on a fine box grater. Season the potatoes with 1 1/2 tablespoons of salt and 1 teaspoon of pepper. Put the potatoes into a kitchen towel and squeeze out the excess liquid. Put the potatoes into a medium-sized bowl along with the egg and mix well. Add the flour and stir to combine. Stir in the cayenne, smoked paprika garlic powder, salt and pepper, to taste. The mixture should be workable but dry. Form the potatoes into balls or tots and fry, in batches, until golden brown, about 4 to 5 minutes. Remove from fryer and drain on a paper towel lined tray. Immediately season with salt and pepper, to taste. Transfer to a serving bowl and serve.

- Preheat the oven to 375 degrees F.
- In a large pan on medium-high heat, add the oil. When the oil begins to swirl, add the beef, Worcestershire sauce, paprika, a pinch of salt and a few grinds of pepper. Cook until the meat is browned, 6 to 8 minutes. Stir in the tomato paste and saute for a few minutes to intensify the flavor. Add the stock and bring to a simmer. Season again and remove the mixture to a bowl with a slotted spoon, leaving the fat in the pan.
- In the same pan, add the onions and cook until almost tender. Then add the carrots, zucchini, bell peppers, a pinch of salt and a few grinds of pepper. Cook, tossing, until the vegetables are tender but still a bit crunchy, 6 to 8 minutes. Remove from the heat.
- In the bottom of a 13-by-9-inch casserole dish in this order, layer half of the beef mixture, pressing it down to level it, and then sprinkle half of the cheese evenly over the beef. Pour the remaining half of the beef over the cheese and press down to level as well. Add the vegetables, followed by the remaining cheese; press to level. Top with the tater tots in a neat row like little soldiers. Sprinkle the top with paprika and bake until the edges on the tots turn golden brown, 25 minutes.

- Preheat oven to 400°. Divide dough in half. On a lightly floured surface, roll out each pastry to a 12-in. circle. Using a 2-1/2-in. round cookie cutter, cut out 12 circles from each pastry. Press circles onto the bottoms and up the sides of ungreased mini-muffin cups. Prick bottoms with a fork. Bake 8-10 minutes or until lightly browned. EASY BAKED TILAPIA

- Preheat the oven to 375 degrees F (190 degrees F). Grease a 9x13 inch baking dish.
- Place the tilapia fillets in the bottom of the baking dish and dot with butter. Season with Old Bay seasoning and garlic salt. Top each one with a slice or two of lemon. Arrange the frozen mixed vegetables around the fish, and season lightly with salt and pepper.

- Preheat oven to 350 degrees F (175 degrees C).
- Cut top quarter of pears off; create a well by scooping out the core, being careful not to puncture the bottom of the pear. Arrange pears in a shallow baking dish.

Steps:
- Core pears but do not peel.
- Place in greased 9" square pan.
- Combine oats, sugar, spices and butter until crumbly.
- Stuff pears letting excess fall into pan.
- Pour 3/4 cup apple juice into pan.
- Bake at 350 degrees for one hour, basting after 30 minutes. Add more juice if necessary.
- Cool 30 minutes before serving.
BAKED TATER WEDGES AND UTAH'S FAMOUS FRY SAUCE
Steps:
- Preheat oven to 450 degrees.
- Add your oil to a baking sheet with sides.
- Cut each potato into 8 wedges.
- Combine all dry ingredients into bag (either Ziploc or paper) and add a few potatoes at a time. Shake to coat well.
- Place the potatoes coated side down into the oil in the pan.
- Continue doing this until all the potatoes have been coated and placed in the oil.
- Bake for about 20 minutes and then pull out and flip over on the other side. Bake for an extra 20 minutes. Pull wedges out of the oven and then sprinkle with a little kosher salt. Serve hot.
