Fresh Chicken Salad with Baby Greens image

This is a very delicious salad that will fill you up by itself, or it can be served on the side. Perfect with leftover chicken breast.

2 tablespoons extra virgin olive oil, divided
2 skinless, boneless chicken breast halves
¼ cup pesto sauce
3 cups mixed baby greens
1 medium red bell pepper, sliced
1 small cucumber, sliced
¼ red onion, thinly sliced
1 tablespoon balsamic vinegar
1 tablespoon honey
salt and pepper to taste

Steps:

  • Heat 1 tablespoon olive oil in a skillet over medium heat. Cook chicken breast in the skillet 10 minutes on each side, or until juices run clear. Remove chicken from skillet and shred. Return to skillet, mix in pesto sauce, and continue cooking just until sauce is heated through.
  • Place greens in a bowl, and top with chicken, bell pepper, cucumber, and onion. Drizzle with remaining olive oil, balsamic vinegar, and honey. Season with salt and pepper. Toss, and serve.

Robustly flavored Balsamic Chicken! Chicken is soaked in a flavorful garlic and herb + balsamic vinegar marinade then grilled to browned perfection.

1/3 cup balsamic vinegar
1/4 cup olive oil
1 Tbsp minced garlic ((3 cloves))
2 tsp minced fresh rosemary ((or 3/4 tsp dried))
2 tsp minced fresh thyme ((or 3/4 tsp dried))
2 tsp dijon mustard
1 tsp each salt (and freshly ground black pepper)
2 lbs. boneless skinless chicken thighs ((or breasts))
1 Tbsp chopped fresh parsley, (optional)

Steps:

  • Place chicken in a gallon size resealable bag (or you can use a bowl).
  • In a mixing bowl whisk together balsamic vinegar, olive oil, garlic, rosemary, thyme, dijon mustard, salt, and pepper.
  • Pour marinade over chicken in bag (or bowl). Seal bag while pressing out excess air.
  • Rub marinade over chicken (I also like to twist and tie top of bag so marinade fully covers the chicken).
  • Let marinade in fridge for 2 to 8 hours for breasts and 2 to 24 hours for thighs.
  • Heat over medium-high heat to 400 degrees. Partway through heating don't forget to clean and oil grill grates (with a little vegetable oil or olive oil using tongs and a balled up paper towel).
  • Remove chicken from marinade while shaking excess marinade off back into bag. Transfer to grill and cook covered about 5 to 8 minutes per side.
  • Cook time varies based on thickness, check internal temperature of chicken in thickest portion to 165 degrees for doneness.
  • Garnish with parsley if desired. Serve warm.

2 tablespoons olive oil
1 1/4 pounds skinless, boneless chicken breast halves
3 cloves garlic, minced
1/3 cup balsamic vinegar
1 can (10 3/4 ounces) Campbell's® Condensed Golden Mushroom Soup
1 can (about 15 ounces) white kidney beans (cannellini), rinsed and drained
1 bag (about 7 ounces) fresh baby spinach

Steps:

  • Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet.
  • Reduce the heat to medium. Add the garlic to the skillet and cook and stir for 1 minute. Stir in the vinegar and cook, scraping up the browned bits from the bottom of the pan.
  • Stir the soup and beans in the skillet and heat to a boil. Stir in the spinach. Return the chicken to the skillet. Reduce the heat to medium. Cover and cook until the chicken is cooked through and the spinach is wilted.

½ cup balsamic vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard, or more to taste

1 pint cherry tomatoes, halved
1 lemon, zested and juiced

Steps:

  • Mix balsamic vinegar, olive oil, mustard, and garlic together in an oven-safe baking dish; season with salt and pepper. Place the chicken breasts in the vinegar mixture.
  • Marinate chicken in the refrigerator for at least 4 hours.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Roast chicken in the preheated oven for about 30 minutes. 1 bunch arugula, cleaned, trimmed and chopped
1 head radicchio, chopped
2 cups chopped escarole, 1/2 head
1/4 cup extra-virgin olive oil
1 clove garlic, cracked
1/3 cup balsamic vinegar
Salt and pepper

Steps:

  • Arrange greens on a large platter. Heat oil and garlic in a small pan over moderate heat. Simmer garlic in oil to infuse the flavor. Remove the garlic from the oil and transfer it to a small bowl. Wipe the pan and return to heat. Add balsamic vinegar. Raise heat to high and reduce vinegar by 1/2, 30 seconds. Stream oil into saucepan and whisk to combine with vinegar. Drizzle dressing over the salad and season the greens with salt and pepper.

4 boneless chicken breasts, cutlets
1/4 teaspoon salt (to taste)
1/8 teaspoon pepper (to taste)
2 tablespoons extra virgin olive oil
1 sprig fresh rosemary (rinsed)
1/4 cup balsamic vinegar
7 ounces baby greens, bagged

Steps:

  • Preheat large saute pan on medium high heat for 2 to 3 minutes. Season both sides of chicken with salt and pepper.
  • Place oil in pan; swirl to coat. Add chicken; cover and cook 4 to 5 minutes on each side or until internal temperature is 165°F While chicken is cooking, cut up the rosemary (leaves only).
  • Add remaining ingredients, including rosemary, to pan. Rotate chicken to top of the greens. Cover, remove from heat, and let stand 1 to 2 minutes or until greens are wilted.
  • Serve warm.

3/4 cup KRAFT Classic Balsamic Vinaigrette Dressing made with Extra Virgin Olive Oil, divided
3 cloves garlic, minced
1/4 tsp. crushed red pepper
4 small boneless skinless chicken breasts (1 lb.)
2 roasted red pepper slices, cut in half
4 KRAFT Slim Cut Mozzarella Cheese Slices
2 pkg. (5 oz. each) baby salad greens

Steps:

  • Mix 1/2 cup dressing, garlic and crushed red pepper until blended. Pour 1/3 cup dressing mixture over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 2 hours to marinate.
  • Heat grill to medium heat. Remove chicken from marinade; discard marinade. Grill chicken 6 to 8 min. on each side or until done (165°F), brushing occasionally with remaining dressing mixture. Top chicken with roasted peppers and cheese; cover. Grill 1 to 2 min. or until cheese is melted.
