BALSAMIC COUSCOUS

Balsamic Couscous image

This is a recipe I developed when I couldn't find one that was exactly what I wanted. This is a good side dish recipe for many different menus. It's also very versatile. You can add any different kind of veggies along with the onion (celery, peas, zucchini, carrots, tomatoes, corn). I use tri-color couscous in this recipe, but any kind will work.

BALSAMIC TOMATO COUSCOUS

Balsamic Tomato Couscous image

This is a slight adaptation of one I found in one of my favorite cookbooks "500 almost fat free pasta recipes." And truth be told, I brought very little home and got asked for the recipe!

  • In a medium saucepan, bring balsamic vinegar and brown sugar to a boil over medium heat, stirring constantly until the sugar dissolves. Once bubbling, reduce heat slightly and allow to cook until thickened, 10-20 minutes. Allow the cooked vinegar to cool slightly. It will continue to thicken as it cools.
  • Meanwhile, prepare couscous according to package directions. Once fully cooked, add basil, tomatoes, mozzarella, and olive oil to taste, stirring gently to incorporate everything. Divide amongst bowls and drizzle with the balsamic vinegar reduction. Alternatively, transfer the entire couscous mixture to a large bowl and drizzle balsamic reduction over the top. Serve warm or at room temperature.

  • Combine 1 cup dry couscous with 1 and 3/4 cups water (or vegetable broth) in a small pot. Bring to a boil over high heat, then reduce to a simmer over medium-low. Simmer uncovered until the couscous is soft, about 10-12 minutes. It should be al dente like pasta. Drain off any excess liquid.
  • Prep the veggies while the couscous cooks. Combine cucumber, cherry tomatoes, red onion, chickpeas, olives and red bell pepper in a large bowl. Add the cooked couscous.
  • To make the vinaigrette: Whisk together the balsamic vinegar, olive oil, lemon juice, honey and salt in a small container.
  • Drizzle the dressing on just before serving. Toss with fresh parsley and feta and serve with a lemon wedge. For a cold salad, transfer to the fridge to chill for 1-2 hours before serving. Enjoy!
