PAN FRIED HONEY BANANAS
These Pan Fried Bananas are caramelized in honey and cinnamon for a simple and delicious treat!

Steps:
- Remove the peels from the bananas and slice them 1/2" inch thick.
- Set a nonstick skillet over medium to medium high heat** and add the oil or butter, honey, cinnamon, and salt. Stir to combine.
- Add the banana slices, and fry for 2-3 minutes on each side, until golden and caramelized. Be sure to watch the heat and turn it down if it browns too quickly. You want enough heat to caramelize and brown the slices, but you don't want them to burn.
- Once the bananas are cooked you can enjoy them as is, or with marshmallow creme and peanut butter in a sandwich, with Bananas Foster French Toast, in oatmeal or yogurt, over ice cream, and more. Enjoy!

- Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 x 13 inch cake pan.
- Cream together the butter or margarine and the sugar.
- Add eggs, bananas, flour, soda, salt, nuts, and vanilla. Mix thoroughly and pour batter into the prepared pan.
- Bake at 375 degrees F (190 degrees C) for 30 minutes. Cool and frost cake.

- Preheat oven to 350 degrees. Mix wet ingredients thoroughly. Combine dry ingredients in separate bowl, mix thoroughly. Add wet ingredients to dry and mix well. Pour into 8-inch non-stick cake pan sprayed with non-stick cooking spray. Bake for 1 hour to 1 hour and 15 minutes or until toothpick inserted in center comes out dry.

- Peel and slice the banana down the center lengthwise and place in dessert boats or bowls.
- Place peanut butter in a small pan and melt gently over low heat.
- Scoop vanilla ice cream into bowls or boats on top of bananas, 2 scoops per sundae. Top 1 scoop of ice cream with melted peanut butter sauce, the other with a drizzle of honey and a sprinkle of cinnamon, use about 1 tablespoon of honey per dessert. Steps:
- Cut stem ends from bananas.
- Place bananas, enclosed in skins, on a cutting surface with curved ends up in the air.
- Cut length of each banana in half and place flat or cut side down on a large microwave safe plate.
- Arrange all slices so entire plate is covered with bananas.
- Microwave bananas on high till all skins are dark brown or black (6 to 10 minutes).
- Remove and let cool enough to handle.
- Remove skins from bananas (they will peel off easily).
- Scoop or gather all cooked bananas into a mixing bowl and mash or stir thoroughly with a masher or fork.
- Add honey and/or maple syrup to bananas and continue to blend.
- Add chopped nuts, coconut, nutmeg and cinnamon.
- Continue to blend.
- If too thick, add more honey or coconut, nutmeg and cinnamon.
- Continue to blend.
- Spoon mixture into graham cracker shells or pie crust till full.
- Garnish with a half walnut and chill.
- Serve with cool whip or whipped cream topping.

I created this recipe one day out of desperation. We had invited guests for dinner, and about a half hour before they were due to arrive, I realized I had forgotten all about preparing a dessert! I discovered I had plenty of bananas on hand, so I "fancied" them up and baked them. It was a big hit!
