BLUEBERRY WAFFLES WITH FAST BLUEBERRY SAUCE
I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

Steps:
- In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
- Preheat a lightly greased waffle iron.
- Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
- To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

BLUEBERRY WAFFLES WITH BLUEBERRY SAUCE

- In a large bowl, combine the flour, baking powder and salt. Whisk the milk, egg yolks and butter; stir into dry ingredients just until moistened. Fold in blueberries., In a small bowl, beat egg whites until stiff peaks form; fold into batter., Bake in a preheated waffle iron according to manufacturer's directions until golden brown., Meanwhile, in a small saucepan, combine the blueberries, 1/4 cup orange juice and honey. Bring to a boil. Combine cornstarch and remaining orange juice until smooth; gradually stir into berry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve warm with waffles.

BANANA & BLUEBERRY WAFFLES WITH CHERRY SAUCE
Start this special breakfast by making the cherry sauce, then the cream topping and lastly the waffles. You may use sweet or sour cherries for the sauce, it's good either way. I hope that you will enjoy this tasty recipe.

- Cherry Sauce: Using a large pot combine sugar, almond extract, water and corn syrup.
- Bring to a boil over medium heat, stirring often.
- Next reduce the heat to a simmer and add the lime rind and cherries and simmer for 5 - 10 minutes longer.
- If you want a thicker sauce add 1 1/2 tsps of cornstarch and 3 tsps of water to a mug, whisk well to remove lumps.
- Add to hot cherry sauce bringing to a boil, cook until desired thickness is achieved.
- Cream Topping: In a large bowl whip sour cream and mascarpone cheese until a soft peak forms then gently mix into the whipped cream.
- Place covered in fridge until needed.
- Waffles: Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a smaller bowl whisk together the buttermilk, 2% milk, mascarpone cheese and egg yolks.
- Next gently whisk the milk mixture into the flour mixture until just combined.
- Beat the egg whites until stiff. Gently fold into the waffle batter then add the blueberries and diced bananas.
- Brush hot waffle iron lightly with vegetable oil and pour batter into each waffle mold.
- Cook waffles according to manufacturer's instructions until golden (3 minutes).
- Place waffles in low oven in 1 layer to stay crisp.
- When ready to assemble, place waffle or waffles on plate, place a generous amount of topping in center of waffles and pour desired amount of cherry sauce over top and ENJOY.

- Preheat oven 350 degrees For the bundt cake Peel and mash bananas. Set aside. In a large mixing bowl cream together butter and sugar. With an electric mixer combine the yogurt, vegetable oil, eggs and vanilla with the creamed butter and sugar. Next, add the mashed banana. In a separate bowl whisk together the flour, baking powder, baking soda and salt. Gradually blend in the dry ingredients until combined. Prepare a bundt pan with vegetable shortening and flour or spray with baking spray. Pour batter into pan and bake on center rack for 50-55 minutes or until a toothpick inserted comes out clean. Cool in the pan 10 minutes and turn out on to a wire rack to finish cooling. For the sauce Remove stems and make a small slice in the cherry and gently squeeze to remove the pit. Combine the cherries, blueberries, agave and salt in a sauce pan and cook over medium heat for 10 minutes. Mix the cornstarch and water and add to the sauce pan. Bring to a boil and remove from heat. Set aside to cool. Spoon sauce over sliced bundt cake.
BANANA PANCAKES WITH BLUEBERRY SAUCE
Homemade banana pancakes made light and fluffy with club soda and whipped egg whites. A yummy blueberry sauce turns these pancakes into a special treat. The blueberry sauce is also great over ice cream, angel food cake and much more.

- For the blueberry sauce: In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and Splenda. Stir gently, and bring to a boil.
- In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries. I like to mash half of the blueberries and leave half of them whole. It's personal preference whether you want to mash the blueberries or leave them whole. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes.
- Remove from heat and stir in the vanilla extract. Thin sauce with water if it is too thick for your liking.
- For banana pancakes: Combine flours, one tablespoon Splenda, baking powder and salt. In a separate bowl, mix together milk, club soda, vegetable oil and mashed bananas. Stir flour mixture into banana mixture just until all is moistened.
- Whip egg whites with 1 tablespoon Splenda until stiff peaks form. Gently fold the egg whites into the pancake mixture.
- Heat a lightly oiled griddle or frying pan over medium heat. Pour batter onto the griddle, using approximately 1/4 cup of batter for each pancake. Cook until lightly browned on the bottom, 3 to 5 minutes, then turn and cook until the second side is brown. Serve hot with the blueberry sauce.
BANANA WAFFLES
The most delicious waffles! Usually served as a snack or dessert. Also try them with Korean red bean paste instead of the banana, it's even better! I remember eating these while visiting Korea, and recreated the taste at home.

- Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder, salt and nutmeg. Stir in milk and eggs until mixture is smooth.
