GRANDPA CLARENCE'S HAWAIIAN BEEF STEW

HAWAIIAN BEEF STEW
This is a great twist on beef stew. This has a unique flavor and is a great way to use some left over sirloin if you chunk it up into pieces. I got this recipe from my sister-in-law and it has become a family favorite.

- Brown meat in large family size skillet. While meat is cooking mix soy sauce, sugar, garlic salt and flour together in small bowl.
- Once meat is browned, add soy sauce mixture to meat then chopped vegetables and simmer about 4 minutes. Add tomato and pineapple and simmer about 20 minutes or longer depending on the tenderness of the meat.
- To freeze: I make a triple batch and I use a ziploc freezer bag, label and store in freezer up to 2 months.
- To thaw: thaw and microwave on high for 7 minutes or heat in the oven at 350 for 25 minutes/ or you can re-heat in the crockpot.

- Heat oil in a pot over medium-high heat. Add beef; cook and stir until browned, about 10 minutes. Add garlic; cook until aromatic, 2 to 3 minutes. Add wine; cook until alcohol has cooked off, about 5 minutes. Add celery and onions; cook until tender, about 5 minutes.
- Pour 10 cups water into the pot. Add tomato paste, salt, sugar, bay leaves, and pepper. Bring to a boil. Lower heat to medium-low. Cover and cook stew until beef is tender, about 1 hour.
- Place carrots into the stew; cook until slightly tender, about 10 minutes. Add potatoes; cook until tender, 10 to 15 minutes.
- Mix cornstarch and 1/4 cup water together in a bowl; add to the stew. Let simmer until thickened, about 3 minutes.

- Brown meat on all sides, cover with water, add bouillon, and cook covered for 1.5 hours.
- Add vegetables and cook until potatoes and carrots are tender.
- Cook curry powder in peanut oil to get rid of the raw taste and add it to the mixture.
- After the stew is cooked, mix flour and cold water well, using a wire wisk to remove all the lumps, and slowly stir it into the stew.
- Cook, stirring constantly, until the stew thickens.
- Serve over steamed rice.

- In a small skillet, cook beef over medium heat until no longer pink; drain and set aside. In the same skillet, saute the onion, celery, green pepper and garlic in butter until crisp-tender, 5 minutes. , Drain pineapple, reserving juice; set pineapple aside. Add enough water to the juice to measure 1/2 cup. In a bowl, combine the brown sugar, flour, vinegar, salt and pineapple juice mixture until smooth. Add to skillet. Bring to a boil. - In a large stock pot, layer ground beef, green beans, onions, bell peppers, and tomatoes. Finish with a layer of cabbage, then evenly drizzle soy sauce over top. Cover and cook over medium for 1 hour, or until cabbage is tender and meat is well done. Reduce heat as needed to prevent burning.
- Meanwhile, rinse rice in a fine mesh strainer under cold running water until no longer cloudy. Transfer to a medium saucepan and cover with 2 cups water. Bring to a boil, cover, and reduce heat to low. Simmer for 15 minutes, remove from heat and let stand for 10 minutes, or until all liquid has evaporated. Serve over rice.

- Heat 2 tablespoons vegetable oil in a large stock pot. Working in small batches in a single layer, brown the beef, making sure each piece is thoroughly caramelized. When all the meat is browned, set aside in a bowl. In the hot pan, add the chopped onion and brown, about 3 minutes. Add tomato paste and cook for 1 minute. Add in the flour and continue to cook 1 minute. Add the 2 pounds of browned beef back into the pot. Season to taste with salt and coarse ground black pepper. Add in the bay leaf. Add water so that the browned beef is just covered. Bring to a boil, then turn heat down to medium-low. Simmer covered for 2 hours. Add the carrots, potatoes, celery, diced tomato and tomato sauce and simmer until the vegetables are tender. Finish it with some fresh cracked black pepper, serve with hot rice and/or poi and enjoy!

IN A SLOW-COOKER: Mix all ingredients together except flour in large crockpot. Cook on high 4 to 6 hours or on low for 8 to 10 hours. After stew is cooked, mix together flour and water as directed above, stir into stew, and cook on high heat, stirring constantly, for 5 or 10 minutes, or until thickened.

- Heat a tablespoon of oil in a pot. Pat dry, lightly salt, and then brown the beef (on all sides) over medium-high heat. Once browned, remove beef to a plate.
- Add more oil to the pot if needed. Add the onions and garlic, and saute for 3-5 minutes, till golden brown.
- Add the tomato paste. Saute another 2 minutes, till the tomato paste turns a darker, brick red color.
- Add the whole peeled tomatoes, bay leaves, and 1/2 cup of water. Add the beef back in. Bring to a boil. Then turn heat to low. Put on a lid, and let simmer for an hour.
