1/2 c margarine
1 c granulated sugar
2 eggs
1 c mashed banana (3 medium)
1 c all purpose flour
1 c whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 c chopped pecans
1 c semi sweet chocolate chips

Steps:

  • Cream margarine and sugar. Add eggs one at a time, beating until smooth. Blend in mashed bananas.
  • In second bowl, stir flour with baking soda, baking powder, salt, nuts and chocolate chips. Add to banana mixture stirring only to moisten. Transfer to greased 9x5x3 inch loaf pan. Bake in 350*F oven for about 1 hr until inserted toothpick comes out clean. Let stand 10 minutes. Remove from pan and place on cake rack to cool. Wrap to store. Yield: 1 loaf.

1 3/4 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chips
1 egg
1/4 cup cooking oil
1/4 cup milk
3 medium bananas, mashed

Steps:

  • Preheat oven to 400°F.
  • Measure first five dry ingredients into large bowl. Mix thoroughly and make a well in the center.
  • Beat egg until frothy. Mix in oil, milk and bananas. Pour into well. Stir only to moisten. Batter will be lumpy. Fill greased muffin tins 3/4 full.
  • Bake in preheated oven for 20-25 minutes.

1/4 cup butter, softened
1 cup sugar
1 large egg, room temperature
3 medium ripe bananas, mashed (about 1-1/4 cups)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips, divided
Dried banana chips, optional

Steps:

  • Preheat oven to 350°. In a large bowl, beat butter and sugar until crumbly. Beat in egg, bananas and vanilla. In another bowl, whisk flour, baking soda and salt; gradually beat into banana mixture. Stir in 1/2 cup chocolate chips., Transfer to a greased 10-in. cast-iron or other ovenproof skillet; sprinkle with remaining 1/2 cup chocolate chips. If desired, top with dried banana chips. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pan on a wire rack.

2 eggs
1 cup sugar
1/2 cup butter or 1/2 cup margarine, melted
1 cup mashed ripe banana (3 medium)
1/2 teaspoon almond flavoring
1 1/2 cups flour
1/2 cup medium grind coconut
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts (optional)
maraschino cherry, cut up (optional)

Steps:

  • Break eggs in mixing bowl.
  • Beat until light and frothy.
  • Add sugar and melted butter.
  • Beat well.
  • Stir in mashed banana and flavouring.
  • In another bowl, measure in remaining ingredients.
  • Stir until well mixed.
  • Pour over batter.
  • Stir just to combine.
  • Spoon into greased loaf pan 9 by 5 by 3 inch.
  • Bake for 1 hour in 350 degree oven until toothpick comes out clean.
  • Let stand for 10 minutes.
  • Remove from pan.
  • Cool.
  • Wrap.
