BANANA COCOA OATMEAL

Number Of Ingredients 9

2 cups old fashioned oats (not quick cooking)
3 cups almond milk *see note
2 very ripe bananas, diced
2 tablespoons cocoa powder
2 tablespoons light brown sugar
pinch salt
1 teaspoon vanilla extract
Optional toppings:
Sliced bananas, berries, chocolate chips, shaved white chocolate

Steps:

  • Instructions Pour the almond milk into a large sauce pan. Add the oats and stir. Add the bananas, cocoa powder, brown sugar and salt. Stir to combine well. Turn the heat on to medium high and bring the mixture to a boil. Turn the heat down to low and simmer uncovered for about 5 minutes until the oats have absorbed most of the liquid and are a creamy consistency. Remove from the heat and stir in the vanilla extract. Divide the oatmeal between 4 bowls. Add any additional toppings that you want and serve. This oatmeal is easily reheated in a microwave if you do not eat it all at once. Add a bit more milk to the oatmeal before heating. It will take about 2 minutes to reheat. Heat it in 30 second increments, stirring each time to make sure that it heats evenly. You can also reheat it on the stove. Again add a bit of milk, set the pan on low heat and stir it occasionally. It should take 3-5 minutes to reheat. 2 cups milk
1 ½ cups steel-cut oats
1 cup water
1 banana, mashed
3 tablespoons ground flax seed
1 ½ tablespoons cocoa powder
1 teaspoon cinnamon
¼ teaspoon nutmeg
⅓ cup walnut halves

Steps:

  • Stir 2 cups water, milk, and oats together in a large saucepan; bring to a boil. Reduce heat to medium-low and cook oats at a simmer until softened and beginning to thicken, about 15 minutes.
  • Stir 1 cup water, mashed banana, flax seed, cocoa powder, cinnamon, and nutmeg through the oats; continue cooking at a simmer until thick, about 10 minutes. Fold walnuts into the oatmeal.

1 packet zero-calorie sweetener
1 pinch salt
¼ cup hot water
¼ cup cold water
⅓ cup rolled oats
½ banana, mashed

Steps:

  • Pour cocoa powder into a microwave-safe bowl and stir in cinnamon, sweetener, and salt. Add hot water and stir thoroughly until cocoa powder has dissolved. Stir in cold water until well combined. Stir in oats and banana until mixed well.
  • Microwave for 2 minutes. Remove, stir, and allow oatmeal to cool and thicken.

This isn't just any old oatmeal. It's like having dessert for breakfast. This recipe has got toasty nuts, sweet banana, rich cocoa and just enough chocolate chips to give you both healthy and sweet fix at the same time.

2 cups plain almond milk
2 fully-ripened large bananas (1 1/2 diced and 1/2 thinly sliced crosswise)
1/4 teaspoon pure almond extract
1/4 teaspoon pure vanilla extract
Kosher salt
2 cups old-fashioned rolled oats
2 tablespoons unsweetened cocoa powder
2 tablespoons honey or agave nectar
1/3 cup toasted and chopped walnuts
Pinch ground cinnamon
2 tablespoons semisweet chocolate chips

Steps:

  • Bring the almond milk, 1 3/4 cups water, the diced bananas, almond and vanilla extracts and pinch of salt to a boil in a large saucepan over high heat.
  • Stir in the oats, cocoa powder and 1 tablespoon of the honey and reduce the heat to medium. Cook, stirring frequently, until the oats are fully cooked to desired consistency, 6 to 7 minutes.
  • Transfer to 4 bowls, top with the sliced bananas, walnuts, the remaining 1 tablespoon honey, cinnamon and chocolate chips and serve.

1 cup sugar
1 teaspoon salt
1/2 teaspoon baking soda

1 large egg, room temperature
1 cup mashed ripe bananas (about 2)
1-3/4 cups quick-cooking oats
1 cup semisweet chocolate chips
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 375°. In a bowl, combine the first 6 ingredients; beat in butter until mixture resembles coarse crumbs. Add egg, bananas and oats; mix well. Stir in chips and nuts. , Drop by tablespoonfuls onto greased baking sheets. Bake until golden brown, 13-15 minutes. Cool on wire racks.
