BANANA OAT FLAPJACKS



Banana oat flapjacks image

This banana flapjack recipe is packed with oats to keep you fuller for longer and makes an easy low calorie treat.

Yield Makes 20 squares

Number Of Ingredients 10

50g flaked almonds, toasted
150g rolled oats
90g self-raising flour
50g dried apricots, chopped
70g soft brown sugar
125g low-fat spread, melted
3tbsp golden syrup
2 medium-ripe bananas, mashed
2tsp vanilla extract
1 egg

Steps:

  • Preheat the oven to 180°C/fan 160°C/gas 4. Grease and line a 16 x 24cm or 20cm square tin with baking paper.
  • Put all the dry ingredients into a mixing bowl. Stir in the spread, syrup, bananas, vanilla extract and egg, mix well and spoon into the prepared tin. Smooth the surface and bake for 20-25 min until lightly golden and firm to the touch. Cool for 10 min, then cut into 20 squares and leave in the tin until completely cool.

This flapjack recipe is a British snack made with rolled oats and sweetened with golden syrup! Made with just 4 ingredients, it's easy and affordable to make!

4 1/4 cups rolled oats (gluten free, if needed)
1 cup brown sugar (or coconut sugar)
1/2 cup coconut oil (or butter, melted)
1/2 cup golden syrup (or honey)

Steps:

  • Preheat the oven to 180C/350F. Line an 8 x 8-inch pan with parchment paper and set aside.
  • In a large mixing bowl, add the oats and brown sugar and mix until combined. Add the coconut oil and golden syrup and mix until fully incorporated.
  • Transfer the flapjack mixture into the lined pan and press down until smooth on top. Place the flapjacks in the oven and bake for 17-20 minutes, until the edges are beginning to go golden brown.
  • Remove the flapjacks from the oven and let them cool in the pan for 10 minutes, before transferring to a wire rack to cool completely. Once cool, slice into bars.

50g butter, plus a little extra for greasing
2 tbsp smooth peanut butter
3 tbsp honey or maple syrup
2 ripe bananas, mashed
1 apple, peeled and grated
250g rolled oats
85g dried apricot, chopped
100g raisin
85g mixed seed (we used pumpkin and sunflower)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 20cm square tin with baking parchment. Heat the butter, peanut butter and honey or maple syrup in a small pan until melted. Add the mashed banana, apple and 100ml hot water, and mix to combine.
  • Tip the oats, the dried fruit and the seeds into a large bowl. Pour in the combined banana and apple and stir until everything is coated by the wet mixture. Tip into the cake tin and level the surface. Bake for 55 mins until golden. Leave to cool in the tin. Cut into 12 pieces to serve or store in an airtight container in the fridge. They will keep for up to 3 days.
