1 lettuce leaf
1 medium banana, peeled
1/2 medium red pear, cut into 1/4-inch slices
2 raisins

Steps:

  • Place lettuce on a salad plate; top with the banana. Cut 1/4-in. V-shaped slices halfway through the banana, spacing cuts 1 in. apart. Place a pear slice, peel side up, in each cut. For eyes, gently press raisins into one end of banana. Serve immediately.

2 medium bananas
1/4 cup peanut butter
1/4 cup flaked coconut
4 raisins
12 pretzel sticks (small thin kind)

Steps:

  • Peel and slice each banana into 10 segments.
  • Assemble "caterpillar" by spreading segments with peanut butter and pressing pieces together.
  • Sprinkle half of coconut over each "caterpillar" and press lightly with fingertips to coat.
  • Use additional peanut butter to press raisins on one end to form "eyes."
  • Break pretzel sticks into small pieces for "legs" and "antenna.".
  • Tip: use different colored dyed coconut for a very colorful caterpillar!

1 (15 ounce) can pear halves, drained
1 cup fresh cranberries
4 cups sliced banana
¼ cup orange juice
¼ cup white sugar
⅛ teaspoon salt
⅛ teaspoon ground cloves
½ cup brown sugar
½ cup all-purpose flour
¼ cup rolled oats
⅛ teaspoon ground cloves
½ teaspoon grated orange zest
3 tablespoons butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • In a 1 1/2 quart casserole dish, mix pears, cranberries, bananas, orange juice, sugar, salt and 1/8 teaspoon cloves. Mix lightly.
  • In a small bowl, mix brown sugar, flour, oats, remaining 1/8 teaspoon cloves and orange rind. Cut in butter until crumbly. Sprinkle over fruit.
  • Bake in the preheated oven for 15 to 20 minutes, or until top is golden brown. Serve at room temperature.

1 medium ripe pear
1 cup brown sugar
½ cup unsalted butter, softened
2 large eggs
2 medium ripe bananas, mashed
2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon almond extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Peel and core pear. Grate pear flesh into a bowl.
  • Mix brown sugar and butter in a bowl with an electric mixer until well blended. Mix in eggs, then add bananas and pear. Gradually mix in flour and baking soda. Add vanilla, cinnamon, ginger, and almond extract; mix until just combined. Pour into the prepared loaf pan.
  • Bake on the center rack of the preheated oven until a toothpick inserted into the center comes out fairly clean, about 1 hour.

A nice change from regular banana bread--it's super moist and the pears really boost the flavor. I developed this by combining the best elements of banana and fruit bread recipes. As one of the reviewers discovered, this recipe doesn't work with hard pears--they have to be soft so they can be mashed in with the bananas to form a puree. Also, this can be cooked more quickly in a muffin tin (about 20 minutes).

2 bananas
2 pears, peeled, chopped
2 cups flour
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter
1/4 cup vanilla yogurt
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350.
  • Mash bananas and pears in a bowl.
  • In a separate bowl, mix the rest of the ingredients until creamed together.
  • Stir in the fruit mixture.
  • Pour the batter into a greased loaf pan.
  • Bake for an hour and half.
  • Let cool for at least 10 minutes so it doesn't fall apart (it solidifies more with time).
