BARBECUED BEEF
This dish is zesty and yummy! It is very easy to make, as well as very deserving of 3 exclamation points!!! Spoon meat onto toasted sandwich buns, and top with additional barbecue sauce.

Steps:
- In a large bowl, combine ketchup, brown sugar, red wine vinegar, Dijon-style mustard, Worcestershire sauce, and liquid smoke. Stir in salt, pepper, and garlic powder.
- Place chuck roast in a slow cooker. Pour ketchup mixture over chuck roast. Cover, and cook on Low for 8 to 10 hours.
- Remove chuck roast from slow cooker, shred with a fork, and return to the slow cooker. Stir meat to evenly coat with sauce. Continue cooking approximately 1 hour.

- Sprinkle roast with salt and pepper. In a nonstick skillet, brown roast in oil on all sides over medium-high heat; drain. Transfer to a 5-qt. slow cooker. Combine next 10 ingredients; pour over roast., Cover and cook on low until meat is tender, 8-10 hours. Remove meat; shred with two forks and return to slow cooker. SHARON'S ONO BARBECUE BEEF
Ono is Hawaiian for tasty. My friend, Sharon, always takes this to potlucks at work. She also brings copies of the recipe because people always ask for it. I'm generally not a barbecue fan, but I really enjoy this recipe. It is great on buns or over rice.

Steps:
- Place chuck roast into a crock pot.
- Combine remaining ingredients in a mixing bowl.
- Pour barbecue sauce over meat.
- Cover& cook on low for 8 to 10 hours or high for 4 to 5 hours.
- Remove roast from crock pot& shred meat with two forks.
- Place shredded meat back into crock pot& stir to coat meat with sauce.
- Cook for 15 or 20 minutes with lid off on high to reduce sauce. (Lately, I have been transferring the sauce to a pot on the stove top & reducing it while I shred the meat. The other way will work, but the stove top is more efficient.).
- Note: Sharon recommends cutting back just a bit on the vinegar.
ADRIENNE'S OVERNIGHT BARBECUED BEEF SANDWICHES
Growing up, my Mom used to make barbecued beef in the crock pot and it always tasted so good. It's definitely comfort food for me. After I got out on my own, I was determined to make barbecue beef just like hers, so I tried lots of recipes and finally came up with one of my own. I was so pleased! I called her to tell her and she laughed. She had always just used a bottle of barbecue sauce! We still laugh about that and now I've had to give her my recipe!

- Combine the onion, brown sugar, pepper, salt, chili powder, paprika, oregano, garlic, ketchup, water, white vinegar, canola oil, Worcestershire sauce, and liquid smoke in a slow cooker; stir. Lay the beef pieces into the sauce. Cook on LOW for 10 hours.
- Remove the beef from the sauce, keeping the sauce in the slow cooker, and shred with two forks. Remove 1/4 cup of the sauce from the slow cooker and pour into a bowl. Whisk the cornstarch into the sauce; stir the mixture back into the slow cooker. Add the shredded beef; stir. Serve hot on the whole-wheat buns.

- In a small bowl, combine the first 11 ingredients. Stir in Liquid Smoke if desired. Place roast on a rack in a shallow roasting pan; pour ketchup mixture over the top., Cover and bake at 325° for 2-1/2 to 3 hours or until meat is tender. Remove meat to a serving platter and keep warm. Skim fat from pan juices and thicken juices if desired. Serve with beef.

BARBECUE BEEF BURGER
A classic beef burger is a must-have at a barbecue. Pack blue cheese in the centre to make it a little more special and serve with your favourite sides

- Tip the beef mince, shallot, horseradish sauce, herbs and garlic into a bowl, and season well with salt and black pepper. Combine everything well using your hands, squeezing the mixture through your fingers repeatedly to help it bind together.
- Divide the mixture into four portions and shape each into a 3cm-thick patty. Press a small 50p-sized piece of blue cheese into the middle of each patty, if using, and pack the meat around it to enclose the cheese - this will melt during cooking.
- Put the burgers on a plate, cover and chill for at least 30 mins or overnight. Light the barbecue and wait for the coals to turn ashen. Or, heat a gas barbecue to medium.
- Lightly oil the burger patties all over and cook for 5 mins until just starting to char. Carefully flip over and cook for a further 4-5 mins (for medium) or longer if you prefer well done. Remove the burgers to a board and leave to rest for a few minutes before serving. Alternatively, fry the burgers over a medium heat for 4-5 mins on each side until cooked through (a probe thermometer should read 70C).
- Serve the burgers in the buns with lettuce, tomato slices and relish (see recipe, below), or any other accompaniments of your choice.

Another favorite mom recipe. This sauce is tangy and sweet. Best served on a hot crusty roll with potato salad and cole slaw. If roast does not make 2 cups of liquid, use beef broth.

- Cook roast at 300 degrees for 3-4 hours or until meat is fork tender.
- Saute garlic in butter over med. heat about 2-3 minute.
- Add next 7 ingredients and continue cooking over med. heat until sugar is melted and everything is combined well.
- When roast is done, shred beef and add to skillet. Combine well so all beef is covered with sauce.
- Let simmer 20 minute.
- Spoon onto rolls and serve.
