Sometimes you just don't have time to make chili and biscuits. This casserole combines barbecue chili and refrigerated biscuits in one dish to make dinner extra easy.

1 lb lean (at least 80%) ground beef
1 cup chopped onions
1 medium red bell pepper, chopped (1 cup)
1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 can (19 oz) Progresso™ red kidney beans, drained, rinsed
1 cup barbecue sauce
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 tablespoon chili powder
1 can (16.3 oz) Pillsbury™ Grands!™ Southern Homestyle refrigerated Southern Recipe biscuits (8 biscuits)
1 cup shredded Cheddar cheese (4 oz)
1/4 cup sliced green onions

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 12-inch skillet, cook beef, onion and bell pepper over medium-high heat 9 to 11 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Stir in tomatoes, kidney beans, barbecue sauce, taco seasoning mix and chili powder. Heat to boiling, stirring frequently. Separate dough into 8 biscuits. Transfer beef mixture to baking dish; top with biscuits.
  • Bake 25 to 30 minutes or until biscuits are thoroughly baked and golden brown. Sprinkle cheese over top; bake 5 minutes longer or until cheese is melted. Garnish with green onions.

This is yummy and filling; good comfort food. My husband calls it Chili Pot Pie. If you like it spicy you can add red pepper flakes or other spices with some heat. Don't let the list of ingredients or steps intimidate you, it is really easy and many of the ingredients you probably already have on hand. This is super simple and easy to make throughout the year.

1 lb lean ground turkey or 1 lb ground beef
1/2 cup bell pepper, chopped
1/3 cup onion, chopped
1 (14 ounce) can diced tomatoes, undrained
1 (14 ounce) can kidney beans, drained and rinsed
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon oregano leaves, dried and crushed
1/4 teaspoon Tabasco sauce (or chili pepper sauce)
1/3 cup picante sauce (or salsa, I use Pace Picante sauce)
1 cup cheddar cheese, shredded, separated into 1/3 cups
1 (16 ounce) can Pillsbury Grands refrigerated buttermilk biscuits (the flaky layer kind)
sour cream
salsa
cheese, shredded

Steps:

  • Brown turkey in 12-inch skillet, drain grease. Add onion and bell pepper to the ground meat and cook until veggies are crisp tender.
  • Stir tomatoes with juice, beans, spices and Tabasco sauce into meat mixture. Simmer over medium heat for 10 (you can simmer longer if you'd like).
  • Remove meat mixture from stove, add 1/3 cup salsa and 1/3 cup cheese and stir until well blended.
  • Pour mixture into 13 X 9 inch casserole dish, level out mixture.
  • Sprinkle 1/3 cup cheese over beef mixture in casserole.
  • Split each biscuit in 1/2 lengthwise, this is why the layered biscuits are important, it makes it easier. Arrange biscuits over the cheese and beef mixture, covering the top of the casserole.
  • Add remaining 1/3 cup of cheese on top of biscuits.
  • Bake at 350°F for 15 minutes on bottom shelf of oven, and 15 additional minutes on top shelf of oven until biscuits are deep golden brown.
  • Serve with sour cream, salsa and additional cheese if desired.

1 lb lean (at least 80%) ground beef
1 medium onion, chopped (1/2 cup)
1/4 cup chopped fresh parsley
1 cup milk
1 cup barbecue sauce
1 cup shredded mozzarella cheese (4 oz)
1 1/2 cups shredded Cheddar cheese (6 oz)

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
  • Meanwhile, in 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • Stir pasta, 3 tablespoons of the parsley, the milk, barbecue sauce, mozzarella cheese and 1 cup of the Cheddar cheese into beef in skillet. Spoon mixture into casserole. Sprinkle with remaining 1/2 cup Cheddar cheese.
  • Bake uncovered 30 to 40 minutes or until hot and bubbly. Sprinkle with remaining 1 tablespoon parsley.

½ pound bacon
1 pound ground beef
1 small onion, chopped
2 (15 ounce) cans baked beans with pork
⅓ cup barbeque sauce
1 (7.5 ounce) package refrigerated biscuit dough

Steps:

  • Cook bacon in a large skillet or Dutch oven over medium heat until evenly browned. Drain, and cut into bite size pieces. Set aside. Add hamburger and onion to the skillet, and cook until no longer pink, and the onion is tender. Drain.
  • Stir bacon, baked beans and barbeque sauce into the ground beef, and bring to a boil. Reduce heat to medium low, and place biscuits in a single layer over the top of the mixture. Cover, and simmer for about 10 minutes, or until the biscuits are done. Place two biscuits on each plate, and spoon beans over.

1 (40 ounce) can dennison's chili con carne with beans
1 tablespoon finely chopped hot pepper
3 tablespoons parmesan cheese
1 (8 ounce) package refrigerated biscuits (such as Pillsbury)
2 tablespoons melted butter or 2 tablespoons margarine
1/3 cup yellow cornmeal

Steps:

  • Combine chili, peppers and Parmesan cheese. Bring to a boil; put into a casserole.
  • Bake, uncovered, in 400F oven for 10 minutes.
  • Dip both sides of biscuits in butter, then in cornmeal.
  • Place on top of hot casserole.
  • Bake 15-20 minutes longer or until biscuits are golden.
  • Serves 6.

Add in carrot, pepper, kale and chili powder and cook 2-3 minutes until veggies are softened. Add beans, tomatoes, ketchup and barbecue sauce. Cover and simmer over medium heat for about 10 minutes so the flavors can come together. Meanwhile, make your biscuits.
  • BiscuitsIn a medium bowl, stir together flour, baking powder, salt, and garlic powder. Cut butter into ½" cubes and add to the flour mixture, cutting in until crumbly. Stir in milk gradually, stirring in just enough that the dough comes together. Roll out on a floured surface and cut into biscuit rounds if desired (or just leave it as one piece).
  • Place biscuits on top of chili mixture, lay a piece of tin foil over top (don't tighten around the dish -- this is only to prevent splatter in the oven. You don't want it too steamy or your biscuits will be soggy) and bake for 10 minutes until light golden brown. Sprinkle with cheese and bake 1-2 minutes until cheese is melted. Serve.
