BBQ Dry Pork Rub image

A delicious and easy rub recipe that will go perfectly with pork tenderloin to then be cooked either on the grill or in your smoker.

Number Of Ingredients 8

2 tbsp smoked paprika
2 tsp cumin
2 tbsp chili powder
½ cup brown sugar
½ tsp dried onion powder
1 tsp garlic powder
2 tsp kosher salt
1 tsp ground black pepper

Steps:

  • Mix all ingredients together in a medium sized bowl.
  • Once mixed well, transfer to an airtight container.
  • When ready to use, apply generously over your chosen cuts of meat. Rub in firmly and try to cover as much of the meat as possible.
  • Move the pork to your refrigerator and allow to sit for at least 2 hours, or even overnight.
  • Remove from refrigerator and dust off any excess rub. Cook as desired.

1 (5 to 7 pound) pork roast, preferably shoulder or Boston butt
1 1/2 cups cider vinegar
1 cup yellow or brown mustard
1/2 cup ketchup
1/3 cup packed brown sugar
2 garlic cloves, smashed
1 teaspoon kosher salt
1 teaspoon cayenne
1/2 teaspoon freshly ground black pepper
Pan drippings from the pork
12 hamburger buns
1 recipe Cole Slaw, recipe follows
Pickle spears, for serving
1 head green cabbage, shredded
2 carrots, grated
1 red onion, thinly sliced
2 green onions (white and green parts), chopped
1 fresh red chile, sliced
1 1/2 cups mayonnaise
1/4 cup Dijon mustard
1 tablespoon cider vinegar
1 lemon, juiced
Pinch sugar
1/2 teaspoon celery seed
Several dashes hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Mix the paprika, garlic power, brown sugar, dry mustard, and salt together in a small bowl. Rub the spice blend all over the pork. Cover and refrigerate for at least 1 hour, or up to overnight.
  • Preheat the oven to 300 degrees F. Put the pork in a roasting pan and roast it for about 6 hours. An instant-read thermometer stuck into the thickest part of the pork should register 170 degrees F, but basically, what you want to do is to roast it until it's falling apart.
  • While the pork is roasting, make the barbecue sauce. Combine the vinegar, mustard, ketchup, brown sugar, garlic, salt, cayenne, and black pepper in a saucepan over medium heat. Simmer gently, stirring, for 10 minutes until the sugar dissolves. Take it off the heat and let it sit until you're ready for it.
  • When the pork is done, take it out of the oven and put it on a large platter. Allow the meat to rest for about 10 minutes. While it's resting, deglaze the pan over medium heat with 3/4 cup water, scraping with a wooden spoon to pick up all of the browned bits. Reduce by about half. Pour that into the saucepan with the sauce and cook 5 minutes.
  • While the pork is still warm, you want to "pull" the meat: Grab 2 forks. Using 1 to steady the meat, use the other to "pull" shreds of meat off the roast. Put the shredded pork in a bowl and pour half of the sauce over. Stir it all up well so that the pork is coated with the sauce.
  • To serve, spoon the pulled pork mixture onto the bottom half of each hamburger bun, and top with some slaw. Serve with pickle spears and the remaining sauce on the side.
  • Combine the cabbage, carrots, red onion, green onions, and chile in a large bowl. In another bowl, stir together the mayonnaise, mustard, vinegar, lemon juice, and sugar. Pour the dressing over the cabbage mixture and toss gently to mix. Season the cole slaw with the celery seed, hot sauce, salt, and black pepper. Chill for 2 hours in the refrigerator before serving.

This rub is my personal recipe, settled on after lots of experimenting. It's great on ribs, brisket, and pork butt. Quick and easy from ingredients everyone usually has. This recipe makes enough for 2 to 3 full racks of baby back ribs, depending on how liberally you coat them. For those that are new to barbecuing/smoking, 'rub' is a misnomer, as you're really just coating the meat and not actually rubbing it in. Generally, I'll rinse and pat dry the meat I'm prepping then apply a thin coat of yellow mustard so that the rub sticks.

This is a dry rub I've experimented with for a while. I put this on a couple racks of Pork ribs, marinaded overnight then cooked slow in my smoker. Wow did they turn out great! Wife and kids loved them. I put a homemade BBQ sauce on one rack and none on the other. Both were great but I think the one without sauce was better. Though this was cooked in a smoker, it could also be done in the oven or BBQ.

1 -2 pork spare rib racks
1 tablespoon Season-All salt
1 tablespoon kosher salt
1/2 cup brown sugar
1 teaspoon pepper
2 tablespoons chili powder
1 teaspoon cayenne pepper

2 teaspoons onion powder
1/2 teaspoon ground mustard
1 teaspoon paprika
3 cups apple juice

Steps:

  • Mix together dry ingredients.
  • Rub liberally all over the ribs on both sides. (For more flavor penetration, pull off membrane from the bone side of ribs).
  • Cover with plastic wrap or vacuum seal bag and place in the refrigerator overnight.
  • Heat smoker/cooker to at least 250°F and keep between 250-300°F.
  • Pour 2 cups of the apple juice in water pan to steam the ribs with.
  • Add soaked hardwood chips or smoking wood of your choice to the smoker.
  • Amount of smoke is up to you.
  • After about 3 hours, internal temperature of the meat should be around 170°F In order to make the meat a bit more tender, wrap the ribs in foil and spray or drizzle some remaining apple juice on the ribs, closing the foil around them until desired tenderness is achieved. Don't drown the ribs in juice but moisten them, about another hour or so.
  • If sauce is desired, mop it on the ribs the last 30 minutes or so of cooking.

  • Mix paprika, brown sugar, chili powder, cumin, salt, black pepper, oregano, sugar, white pepper, and cayenne together in a small bowl.
  • Massage spice rub into the pork roast. Wrap tightly in a double layer of plastic wrap; refrigerate for at least 3 hours.
  • Unwrap the roast and place in the bottom of a lined slow cooker. Add water and liquid smoke. Cover and cook on Low until pork is fork-tender, 8 to 10 hours.
  • Transfer roast to a cutting board; discard liquid in the cooker. "Pull" by tearing meat into thin shreds with 2 forks or your fingers. Discard fat.
  • Place shredded meat back in the slow cooker; toss with 1 cup barbecue sauce, and heat on Low until hot, 30 to 60 minutes. Serve with remaining barbecue sauce.

1 cup brown sugar
2 tablespoons garlic salt
2 tablespoons onion powder or 1 tablespoon onion salt

2 teaspoons salt
1 cup brown sugar
1 cup ketchup
1/2 cup tomato sauce
1 cup molasses
1/2 cup A.1. Original Sauce
1/4 cup Worcestershire sauce
2 teaspoons hot sauce

Steps:

  • Place Dry rub ingredients in a large Ziplock Bag and mix well.
  • Rinse Pork Buttes and sprinkle heavily with the Dry Rub,& using a Knife, poke some holes over entire surface of the Pork.
  • Make sure Buttes are well coated with the rub.
  • Place in a large container covered with saran wrap and refrigerate Buttes for 8 hours or over night.
  • Add all the Sauce ingredients in a sauce pan and bring to a boil, stirring constantly so it doesn't stick.
  • Let sauce cool and either pour into a Quart jar or some kind of seal able container.
  • This Sauce will Keep at least 6 Months if kept sealed and in the fridge.
  • 8 hours later or the next day, Preheat oven to 300 degrees.
  • Place Butts in the oven uncovered for 6 hours. Test to see if the Pork pulls apart after 6 hours. If not, continue cooking until it does.
  • Pork will be dark and crusty on the outside.
  • Inside will be moist and delicious.
  • After the Pork is Pulled, Pour your Sauce over it and mix well.
  • This makes a lot of BBQ and I usually Freeze Half.
  • Freeze up to 6 months.
  • Serve BBQ on a Bun or just eat it with a fork!
  • Enjoy!
