1 tablespoon vegetable oil
2 skinless, boneless chicken breasts, diced
2 teaspoons diced onion
1 teaspoon diced apple
1 teaspoon diced dried apricots
1 teaspoon dried cranberries
1 teaspoon diced pear
1 teaspoon raisins
1 clove garlic, minced
2 teaspoons tomato paste
1 cup dry white wine
Sugar
Salt and freshly ground black pepper
4 poblano peppers, roasted and peeled
1 shallot, minced
1/2 tablespoon vegetable oil
1 clove garlic, minced
1 cup dry white wine
2 cups heavy cream
1/3 cup almonds, ground
Salt and freshly ground black pepper
1 teaspoon fresh cilantro leaves, for garnish
1 teaspoon pomegranate seeds, for garnish

Steps:

  • For the chiles: In a medium saute pan over medium heat, heat the vegetable oil. Add the chicken and cook until it starts to turn white, about 5 minutes. Add the onions and cook until translucent, about 5 minutes. Add the apples, apricots, cranberries, pears, raisins and garlic and cook for 2 minutes. Stir in the tomato paste and cook for 2 more minutes. Add the wine and simmer until the chicken is tender, about 5 minutes. Season with sugar, salt and pepper, and then remove from the heat.
  • Stuff each roasted poblano pepper with one-quarter of the chicken mixture and set aside.
  • For the sauce: In a medium saute pan over medium-low heat, cook the shallots in the vegetable oil until translucent, about 3 minutes. Add the garlic and cook until it turns a light caramel color, about 5 minutes. Add the wine and simmer until it is almost completely evaporated, about 15 minutes. Add the heavy cream and simmer until reduced by half, about 15 more minutes. Stir in the almonds and season with salt and pepper.
  • To serve, place each stuffed poblano pepper on a plate and top with 2 tablespoons sauce. Garnish with the cilantro and pomegranate seeds.

  • 1. Prepare aguachile sauce: in blender container, combine lime juice, cilantro, jalapenos, cucumber and salt; blend until sauce is chunky. 2. Place shrimp in large container; sprinkle with salt and pour aguachile sauce over shrimp. Refrigerate for 1 hour or until the shrimp turn pink and appear “cooked.” 3. Divide cucumber slices among 12 plates; top each with 6 shrimp. Pour about ¼ cup aquachile sauce over shrimp on each plate. Garnish with ¼ avocado and a few red onion slices.   • 1. For candied pecans, combine pecan halves and corn syrup in small saucepan over low heat. Simmer 10 to 15 minutes. 2. Prepare sheet pan with parchment paper sprayed with cooking spray. Preheat oven to 250 F. Drain pecans and transfer to prepared pan, spreading so that pecans are in single layer and not touching. Bake until hard, like glass, approximately 15 to 20 minutes. Transfer pecans to a cooling rack until completely cooled and not sticky. Store in airtight container until ready to serve. 3. For cherry jam, combine dried cherries, water, brown sugar and pinch kosher salt in small saucepan over medium heat. Cook until reduced by half, approximately 30 minutes. 4. Transfer jam to a food processor and pulse until slightly chunky. Transfer to a container to cool completely. Store refrigerated until ready to use. 5. Brush pretzel roll slices with olive oil and season with salt and pepper. Bake at 350F until golden brown, 2 to 3 minutes. 6. Arrange cheeses on board or platter. Arrange
  • Remove all of the watermelon’s green peel, and slice off most of the flesh, leaving about ¼ to ½ inch of watermelon flesh. Cut the rind into 1-inch cubes. In medium saucepan over medium-high heat, bring the apple cider vinegar, water, sugar, ginger, salt and spices to a boil. Hold the boil for 60 seconds than carefully add the watermelon. Return to a boil and turn off the heat. Move the pickled rind to a 2-quart jar using a canning funnel and ladle. Pour on as much of the pickling juice as possible.
