Basic Ghanaian Gravy image

Rice is served many time in Ghana as dinner. This is a basic Tomato Ghanaian Gravy that can be served over plain white rice. From the website Buchele Ghana Adventure. Post for ZWT4.

2 medium onions, diced
8 tomatoes, Romas preferred
1/2 cup vegetable oil
1 teaspoon cayenne pepper
1 teaspoon seasoning salt
1/2 teaspoon thyme
1 green pepper, diced (optional)

Steps:

  • Heat oil in frying pan and saute onions until soft, but not brown.
  • Add tomatoes, cayenne pepper, seasoning salt and thyme (plus green pepper is using).
  • Fry for 30 minutes until tomatoes are soft and deep red in color.

Serve this gravy with our spiced rice with beef recipe for a Ghanaian-inspired dish that's great for a large gathering or family feast

3 tbsp vegetable oil
2 onions, chopped
3 tbsp tomato purée
4 tomatoes, chopped
400g can chopped tomatoes
1 scotch bonnet chilli or 1 tsp cayenne pepper
4 thyme sprigs, leaves picked, or ½ tsp dried thyme

Steps:

  • Heat the vegetable oil in a saucepan over a medium heat and cook the onions for 10 mins until softened. Add the tomato purée and sizzle for a few minutes.
  • Stir in the tomatoes, the can of chopped tomatoes, the whole scotch bonnet chilli or cayenne pepper, the thyme and 200ml water. Season well and simmer for 30 mins until the gravy has thickened and is a deep red colour. Remove and discard the scotch bonnet chilli before serving.

I adapted this recipe from THE JOY OF COOKING and have been making it for more years than I care to remember. It's fast and easy.... fast and easy enough to be able to make a 2nd batch in the middle of dinner b/c folks scarfed up the first batch! NOTE: I'm not sure how 1-2 TEAspoons of Worcestershire got changed to 1-2 TABLEspoons.... which is way too much! I've changed the recipe back to 1-2 TEAspoons of Worcestershire.

3 tablespoons butter or 3 tablespoons margarine
3 tablespoons all-purpose flour
1 (10 1/2 ounce) can condensed chicken broth (flavor of your choice, I usually use beef) or 1 (10 1/2 ounce) can condensed vegetable broth, undiluted (flavor of your choice, I usually use beef)
1 -2 teaspoon Worcestershire sauce, to taste
1/4-1/2 teaspoon garlic powder (do not use garlic salt... results will be too salty)
1/4 teaspoon ground pepper (to taste)

Steps:

  • Melt butter in saucepan over medium heat.
  • Whisk in flour til well blended.
  • Slowly add broth, whisking continually.
  • Add Worcestershire sauce, garlic powder, and pepper.
  • Cook over medicum heat til thickened, stirring from time to time.
  • Keep an eye on the saucepan, the thickening process goes quickly.
