BASIC HIGH-ALTITUDE BREAD
Very easy bread recipe that I use for sandwich bread, pizza dough, and even naan! I live in Colorado Springs at an altitude of about 5,500 feet. This recipe works really well for me.

Steps:
- Combine water and yeast and let sit until foamy, about 10 minutes.
- Combine flour, coconut oil, sugar, salt, and yeast mixture in a bowl. Knead until silky-smooth, about 15 minutes. Place dough in a large, lightly-oiled bowl and turn to coat. Cover with a towel and let rise in a warm place until doubled in volume, about 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Punch down dough and turn onto a lightly floured surface. Shape into a loaf and place into the prepared pan. Cover with a damp cloth and let rise until doubled in volume, about 30 minutes.
- Uncover and bake in the preheated oven for 30 minutes for an Italian-style loaf or 45 minutes for a sandwich-style bread.

BASIC HIGH-ALTITUDE FRENCH BREAD FOR WELBILT BREADMAKER
I used to live near sea level, where I had wonderful success with breadmaker breads. Back then, I'd just estimate the amount of yeast, salt, and sugar, and I'd toss in all sorts of extra ingredients. Once even a bread made with yellow cake mix and some leftover spinach. However, after moving to a mile-high altitude, I had to stop casually adding ingredients. In fact, I couldn't even turn out a decent loaf of white bread. I was about to donate my breadmaker away, when I came across tips for high-altitude baking on the internet. I stayed up late one night reading. Then I started experimenting. My breadmaker is the Welbilt Model #ABM-100. [That's the breadmaker that's shaped like R2D2.] I played around with ingredient amounts until I found a combination that uses regular flour at high-altitude. Now, I've never tried this at OTHER high altitudes ... maybe what works in my altitude/temperature/humidity will fail dismally in another part of the world. And I don't know what would happen if you choose to use bread flour. Here's the basic French bread that works for me. But I haven't dared to add spinach to it.

- Add ingredients to breadmaker in order listed.
- Select French bread setting.
- Push start.
- Four hours later, slice and eat.
- This is best when freshly-sliced; it doesn't seem to keep particularly well. But, if you have teenagers, the question of needing to keep leftovers is irrelevant anyway.

BREAD MACHINE WHITE BREAD (HIGH ALTITUDE)
It took a long time for me to get this right, but so worth it in the end!

- 1. Add water, oil, sugar, salt and yeast to machine and let proof for 5-6 minutes. Add flour and select the normal loaf option on your machine. As dough mixes and kneads, If dough looks too wet, add a more flour 1 tablespoon at a time. Note: The end result will still be rather sticky, but will work out when you shape your loaf on a floured surface.
- 2. Let dough go through the rise time until done. Turn dough out on floured surface and shape into a loaf. I prefer to dust with flour and shape into a flat rectangle with my hands or a nice heavy rolling pin, then roll the dough up and place in a sprayed pan. Let rise in warm place until it has risen about 1.5 inches above edge of pan.(about 1 hour) Spray with a little room temp water. Bake in oven at 350º for 45 to 50 minutes or until browned and hollow sounding when you tap it.
- 3. Remove from oven and place on rack to cool. remove from pan as soon as it is cool enough to handle. Notes:I never bake my bread in the bread machine. I use it to mix, knead and rise the bread the first time. I also like to rise my dough in the oven and when it is time to bake, just turn the oven on, leaving the risen loaf where it is. Try not to slice the loaf until it's completely cool! It will have a better texture and you'll be glad for the wait, I promise!

- In a separate medium bowl or the bowl of a stand mixer, combine flour and salt and stir to mix. Add liquid and stir until the dough begins to come together in a ball. If it seems too dry, add a little more water, 1 tablespoon at a time. Mix until all the flour is incorporated and the dough is craggy and sticky, then tip the dough out onto a floured surface for kneading (or leave in stand mixer to knead with bread hook).
- Knead for 10-15 minutes, until dough is smooth, and elastic, and slightly tacky to the touch. Form into a ball and place in a medium bowl that’s been lightly oiled. Cover the bowl tightly with plastic wrap and allow dough to rise at room temperature 1-2 hours, until doubled in size.
- Remove the dough to a floured surface and give it a pull-and-stretch: Stretch about a quarter of the dough ball away from you, then fold it back on top of itself, ending in the middle. Turn the dough a quarter-turn and repeat three more times, so all sides have been folded in. Flip the dough upside down, pat into a ball, and place on a piece of parchment paper.
