ROASTED POLENTA WITH GARDEN VEGETABLES
Steps:
- Make the Polenta: Bring the chicken stock, butter, pepper, and salt to a boil in a heavy-bottomed pot. While whisking the hot stock in a quick circular motion, "rain" in the polenta by letting it stream through your fingers. (This will prevent lumping.)
- Reduce the polenta to a gentle simmer; it must be stirred constantly for 25 to 35 minutes to prevent lumps or scorching. Be very careful when stirring, the mixture is very hot (think lava) and can burn you if it boils and sputters. If it begins to boil cover the pot and reduce the heat until boiling stops!
- The polenta is cooked when it is no longer grainy and has become creamy. (My grandmother says good polenta takes 30 minutes, great polenta takes 1 hour).
- Stir in the Parmesan and basil and pour onto a buttered sheet pan to cool. When cool, cover with plastic wrap and refrigerate. Cut the polenta into any shape you desire that's structurally sound. In other words, a shape that won't fall apart on the grill easily, or be difficult to remove from the sheet pan after roasting. Squares, triangles, stars etc.
- Make the Marinade and Vegetables: Whisk together the vinegar and garlic. While whisking, drizzle in the oil to make a smooth dressing. Season with salt and pepper, to taste. Toss the vegetables with the marinade.
- When ready to serve, preheat an outdoor grill or indoor grill pan.
- Brush the polenta lightly on both sides with olive oil and grill, turning once, until the edges are brown and crispy.
- At the same time grill the vegetables until they are tender but still firm.
- Pile the vegetables on top of the polenta, then stand back and wait for the applause!
TURKEY BREAST STEAKS WITH FRESH CORN AND BASIL

- Cover the steaks with plastic wrap and pound them lightly with a meat pounder. Sprinkle both sides with salt and pepper and dredge them in flour. Shake off the excess.
- Heat the oil in a heavy nonstick skillet large enough to hold the slices in one layer. When it is hot, add the meat, brown lightly on both sides and cook for about 5 minutes. Transfer to a serving platter, cover with foil and keep warm.
- Add the shallots to the skillet and cook briefly, stirring. Do not brown. Add the vinegar and cook, stirring. Add the tomatoes, corn, chicken broth and any liquid that may have accumulated around the meat. Bring to a boil, stir and cook for about 2 minutes.
- Add the cream and mustard and stir to blend. Add salt and pepper and cook for about 30 seconds. Add the basil and pour the sauce over the meat. Serve immediately.

- Cut carrots and celery into 2-in. lengths; cut onions into wedges. Place in a roasting pan; add broth and water., In a small bowl, combine the basil, lemon zest, garlic, salt and pepper. With fingers, carefully loosen skin from the turkey breast; rub mixture under the skin. Secure skin to underside of breast with toothpicks. Place turkey breast over carrot mixture. GRILLED BASIL LEMON TURKEY BREAST
Our family and friends enjoy this and hope you do too. A flavorful layer of basil, lemon, garlic and romano cheese under the skin. I have the butcher cut one turkey in half and use one half for this. Use a meat thermometer- working towards at least 165 degrees-no one enjoys under or over cooked poultry and with charcoal grilling it is pretty tricky to have a standard that fits everyone. Dh puts the meat thermometer in thickest part right away at beginning of grilling. Servings and cooking time depend upon size of turkey breast. I serve with recipe#485341, roasted asparagus, coleslaw, and my recipe#462312 . Hubby has made this several times.

- Prepare your grill with chimney allowing about 30 minutes.
- Cut off lemon rind, remove outside white, discard or use for different purpose. Mince lemon pulp, discard seeds.
- Combine lemon, cheese, basil, and garlic.
- With fingers, carefully loosen skin from the turkey breast; place mixture under the skin.
- Rub oil on turkey skin and sprinkle liberally with lemon pepper. Don't forget meat thermometer into thickest part of turkey breast. Wrap wing tips and drumstick ends with foil so they don't char.
- Remove chimney, then dh uses 60 briquettes and divide them up with drip foil pan in center so heat will be around drip pan. Dh says it is a big mistake not having enough briquettes. Add water to drip pan, put on your grate.
- Place turkey directly onto grate, open cavity down.
- Grill, covered, vents open. Keep an eye on it, tent turkey if getting too dark. When turkey hits 165, measure into thigh joint where it meets body; it should be 170 degrees.
- For 7 pounds, we had on for 2 hours and 5 minutes BUT it depends upon the heat and size of turkey half, so use your meat thermometer. For our second turkey half we had a 6 pounder on 1 hour and 35 minutes.
- For 4 to 5 pounds, I am GUESSING 1 hour and 15 to 30 minutes? Use your meat thermometer to cook it to your preference.
- When done to correct temperature, remove to platter, cover with foil, and let rest for 20 minutes. That's your window to getting everything else done before you sit down to feast. Enjoy!

- Combine mayonnaise, garlic powder and 1/4 teaspoon black pepper in small bowl; set aside. Cut focaccia into 6 pieces. Cut each piece in half horizontally; set aside. - Preheat oven to 325 degrees.
- Rub the turkey breast inside and out with the butter.
- Generously sprinkle salt and pepper all over.
- Sprinkle the sage all over.
- Heat a large Dutch oven over high heat.
- Add the turkey, breast side down, and cook until the skin is dark golden brown on all sides, 7-10 minutes.
- Using tongs, lift out the turkey breast and scatter the onion and rosemary on the bottom of the pan.
- Return the turkey, breast side up, to the pan.
- Pour ¾ cup of the broth into the pan; cover and bake for 1 hour.
- Stir the carrots, potatoes, and celery into the pan juices, coating well.
- Cover and continue baking until the vegetables are tender and an instant-read thermometer inserted into the thickest part of the breast registers 160 degrees, 1 to 1 ½ hours longer.
- Transfer the turkey breast to a cutting board and tent loosely with foil.
- Let rest for 20 minutes.
- Transfer the vegetables to a bowl and cover with foil.
- Pour the pan juices from the Dutch oven into a measuring cup or gravy separator.
- Let stand until the fat rises to the top, 1-2 minutes.
- Skim off the fat and reserve 3 tablespoons, discarding the rest.
- Add the pan juices to the remaining 2 ¼ cups broth.
- Return the 3 tablespoons fat to the pan and place on a burner over med-high heat.
- Scrape up any browned bits from the pan with a wooden spoon.
- Whisk in the broth mixture and bring to a boil, stirring.
- Cook until thickened, about 3 minutes.
- Strain the gravy.
- Taste and add salt and pepper, if needed.
- To serve, carve the breast and lay it on a pretty platter with the vegetables scattered around.
- Pass the gravy at the table.
