HERB-MARINATED GRILLED SWORDFISH
This is one of my and my husband's favorite recipes. The swordfish is so flavorful and colorful it will brighten your whole day!

Steps:
- Whisk olive oil, lemon juice, soy sauce, parsley, garlic, dill, and pepper together in a large glass or ceramic bowl. Add swordfish and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 4 hours; the longer you marinate the fish, the stronger the flavor will be.
- When ready to cook, preheat an outdoor grill for medium heat and lightly oil the grate.
- Remove swordfish from the marinade and shake off excess. Discard the remaining marinade.
- Cook swordfish on the preheated grill until fish is tender and flakes easily with a fork, about 4 minutes per side. Swordfish cooks very quickly and your grill will flare up with this marinade!

GRILLED SWORDFISH WITH LEMON, MINT AND BASIL

- Prepare the grill (medium-high heat). Whisk the oil, mint, lemon juice, basil, and garlic in a medium bowl to blend. Season the lemon and olive oil mixture with salt and pepper, to taste.
- Brush the swordfish steaks with 2 tablespoons of the lemon and olive oil mixture. Grill the steaks until just cooked through, about 3 minutes per side (depending on thickness of steaks). Transfer the steaks to plates. Spoon the remaining sauce over and serve.
BASIL-MARINATED SWORDFISH
Steps:
- Whisk olive oil, mustard, lemon juice and garlic in a bowl. Add basil. Arrange swordfish in a large shallow glass baking dish. Pour marinade over; cover and refrigerate 3 hours, turning occasionally. Grill fish until cooked through over med-high heat, about 7 minutes per side. Garnish with lemon wedges and basil sprigs. MARINATED SWORDFISH

- In a bowl combine juice of the lime, ginger, garlic and onion. Add olive oil and season with salt and pepper. Place swordfish steak in baking pan and pour marinade over fish. Coat and let sit for 15 to 30 minutes. Remove fish from pan and grill in cast iron pan or on grill for about 3 minutes per side.
SWORDFISH WITH LEMON, GARLIC AND OLIVE OIL
This recipe is Italian but with the ingredients used, it could be part of a Greek menu as well. Use the maximum marinating time for the best flavour. From "Williams-Sonoma Italian Favourites".

- In a bowl, combine the lemon juice and olive oil.
- Place the swordfish cubes in a shallow glass dish and sprinkle with salt and pepper to taste.
- Pour about 1/3 cup of the olive oil and lemon mixture over the fish and toss to coat evenly.
- Cover and refrigerate for 2 to 4 hours.
- Add the garlic and oregano to the remaining olive oil and lemon mixture.
- Set aside to use as a sauce.
- Preheat the broiler or fire up the barbecue.
- Cut the onion through the stem end into quarters and separate each quarter into individual pieces.
- Alternate the swordfish cubes with the onion pieces and bay leaves on skewers.
- Arrange the skewers on a broiler pan or on the grill rack.
- Broil or grill, turning once, until the fish is opaque throughout when pierced with the tip of a knife, about 3 minutes on each side.
- Serve hot, garnished with lemon slices and accompanied by the reserved sauce.

GRILLED MARINATED SWORDFISH
Steps:
- In a glass baking dish, combine the garlic, white wine, lemon juice, soy sauce, olive oil, poultry seasoning, salt and pepper. Mix just to blend. Place swordfish steaks into the marinade, and refrigerate for 1 hour, turning frequently.
- Preheat an outdoor grill for high heat, and lightly oil the grate.
- Grill swordfish steaks for 5 to 6 minutes on each side. Garnish with parsley and lemon wedges.

GRILLED SWORDFISH WITH BASIL MARINADE AND AVOCADO SALSA RECIPE

- Rinse fish steaks and pat dry. Place fish in a single layer in a glass dish. Combine basil, olive oil, lime juice, 1 teaspoon green onion, lime peel, and salt in a food processor. Pulse 10 times or until basil is coarsely chopped. Remove 2 1/2 tablespoons of the mixture and reserve for the salsa. Pour the remainder of the marinade over the fish steaks. Marinate fish in the refrigerator for 30 minutes, turning the fish over once. Gently combine the reserved marinade, avocado, tomato, remaining green onion, and hot pepper sauce (to taste) to make the salsa. Place fish on a preheated, well-oiled grill. Cook fish approximately 10 minutes per inch of thickness. Turn steaks after 5 minutes and cook until fish begins to flake easily. Baste frequently with marinade. Serve with avocado salsa. This recipe yields 6 servings.

SWORDFISH STEAKS WITH TOMATO-BASIL SAUCE
My own invention, a quick and easy "something". I thought it would make a nice combination, and wasn't disappointed. Whenever available, I substitute fresh basil for the dried spice.

Steps:
- Salt and pepper the swordfish steaks.
- In a saute pan just large enough to hold the steaks, heat the oil, and quickly brown the swordfish on both sides, but not cooking completely.
- Remove them from the saute pan and set aside.
- In the same pan, add the tomatoes and the basil.
- Cook for a few minutes, until the tomatoes begin to break down.
- Return the fish to the pan, covering them with the sauce.
- Cover the pan, and cook at a low simmer for 4-5 minutes until they are done.
- Serve!
