FRIED RED TOMATOES ITALIAN STYLE WITH BASIL PESTO AIOLI



Fried Red Tomatoes Italian Style with Basil Pesto Aioli image

Number Of Ingredients 10

large size, firm yet ripened tomatoes, I used heirlooms, sliced ¼ inch thick.
dry polenta
romano cheese, finely grated
dried thyme, granulated garlic, salt and pepper to taste
2 eggs, beaten
olive oil for pan frying
BASIL PESTO AIOLI
good quality mayo
basil pesto, homemade or good quality store bought
fresh basil for garnish

Steps:

  • Start by slicing your tomatoes into ¼ inch slices, cutting off the tips and bottoms.
  • Pull out the seeds with the tip of your finger, you don't want the slices to be wet.
  • Lay tomato slices onto a paper towel to pat dry.
  • Make your pesto aioli by simply stirring some good basil pesto into a good quality prepared mayo, stirring to incorporate and tasting to your satisfaction, adding more if needed.
  • Equal parts polenta and finely grated romano cheese.
  • Sprinkle in some dried time, a little granulated garlic, salt and pepper.
  • Beat two eggs, use more as needed depending how many tomatoes you are using.
  • Heat a frying pan on the stove and cover the bottom with olive oil, keep on medium heat.
  • Dip tomato slice into the egg then into the polenta cheese mixture.
  • Place into the frying pan and don't flip it until it is nicely golden, then flip and do the other side.
  • When crispy, gently remove and place onto a paper towel to absorb grease, which is not much.
  • Sprinkle with a little salt and let them cool down before eating.
  • Sprinkle with finely chopped basil, a little sprinkling of cheese and serve with the basil pesto aioli.

I cut this out of a newspaper when I lived in Atlanta for a short time in the early 80's. It was in a "cooking for one" column, but I have doubled it here. Use it as a first course for guests, to accompany steak, fish or chicken, or as a light dinner for yourself on a hot summer night when everyone is out. New Jersey tomatoes (the best) really shine in this recipe! Make fresh corn on the cob and have a feast!

2 large ripe tomatoes
1/2 cup shredded cheese
1 tablespoon good quality olive oil
2 -3 teaspoons butter (more if desired)
fresh basil, chopped

Steps:

  • Slice the tomatoes thickly. Melt the butter and olive oil in a frying pan over medium heat.
  • Add the tomato slices and fry on one side for about one minute. Turn each slice and sprinkle with cheese. You can use any cheese - mozarella or cheddar work well.
  • Sprinkle with chopped basil and continue to fry until cheese melts. Cover the pan if you want to speed up the process.

Steps:

  • For the basil mayonnaise: Pulse the basil, mayonnaise, lemon juice and mustard in a food processor until smooth. Season with salt and pepper. Cover and refrigerate until needed.
  • For the fried tomatoes: Season the tomatoes with salt and pepper. Place the flour in a shallow dish. Whisk together the buttermilk and hot sauce in another shallow dish. Whisk together the panko and cornmeal in a third shallow dish. Working with 1 slice of tomato at a time, coat the tomato first in the flour, then in the buttermilk and then finally in the cornmeal. Repeat this process with the remaining slices.
  • Add enough vegetable oil to a large skillet to coat the bottom and heat over medium to medium-high heat. Working in batches, fry the tomato slices until golden brown, about 2 minutes per side. Drain on paper towels. Serve the tomatoes warm with the basil mayonnaise.

8 slices country sandwich bread
1 cup loosely packed arugula

1 cup rice flour, divided
1 large egg
1/4 cup buttermilk

For the sandwich: Place the pancetta slices in a large nonstick saute pan set over medium heat and saute on both sides until crispy, about 3 minutes per side. Set aside on a paper towel-lined plate until ready to assemble the sandwich. For the tomatoes: In a large shallow dish, add 1/4 cup flour. In a separate baking dish, beat the egg, buttermilk, baking powder and baking soda. In a separate large shallow dish, add the remaining 3/4 cup flour, cornmeal, salt and cayenne pepper. Dredge the tomatoes in the flour, followed by the egg mixture and finally coat with the cornmeal mixture, shaking off any excess in between dredges. Place the tomatoes on a wire cooling rack set inside a rimmed baking sheet. Repeat the process with all the tomatoes. Pour a 1-inch layer of vegetable oil into a cast-iron skillet. Heat the oil over high heat until it reaches 350 degrees F. Carefully add 4 tomato slices to the oil and fry until the tomatoes are golden brown, about 2 minutes on each side. Transfer the fried tomatoes to a baking sheet or plate lined with paper towels, season with salt and cool. Repeat with the remaining slices. To assemble the sandwich: Slather each slice of bread with a generous amount of the basil mayo. 1 clove garlic, roughly chopped
3 egg yolks or 9 Tbsp pasteurized egg substitute
2 tsp lemon juice
1/2 tsp Dijon mustard
1/2 tsp kosher salt
1/4 tsp ground black pepper
1 Tbsp fresh oregano, chopped
1/4 cup fresh basil, chopped
Tomatoes:
4 green tomatoes, ends removed and sliced 1/4" thick
1/2 cup cornmeal
1/4 cup Parmesan cheese, grated
1/8 tsp cayenne pepper
1-1/2 tsp kosher salt, divided
3/4 tsp ground black pepper, divided
1 tsp dried basil
1 tsp dried oregano

Steps:

  • To prepare the aioli, combine the olive oil and the blended oil in a measuring cup. Set aside. Place the garlic, egg yolks, lemon juice, Dijon mustard, salt, and pepper in a blender. Pulse the ingredients until combined. Slowly pour the oil through the opening at the top of your blender. (The speed should be on low.) After the ingredients are well-blended and creamy, use a spatula to scoop the aioli into a small bowl. Fold in the fresh basil and oregano. To prepare the tomatoes, combine the cornmeal, Parmesan cheese, cayenne pepper, 1 tsp of salt, 1/2 tsp of black pepper, dried basil, and dried oregano into a medium-size bowl. Set aside. Combine the flour and the remaining salt and pepper into a second bowl. Set aside. Whisk the eggs together in a third bowl. First, dip the tomatoes in the flour mixture; coat completely. Then coat the tomatoes in the egg. Finally, dredge the slices in the cornmeal mixture and coat completely. Pour about 1/4" of oil into a large skillet set over medium heat. After the oil is ready, add in the tomatoes (in batches, if necessary). Fry the tomatoes until golden brown on one side for about 3-4 minutes. Flip the tomatoes and cook until brown on the other side. Remove the slices from the oil and drain on paper towels. Serve immediately with the aioli.

  • Preheat broiler.
