- Chop 4 garlic cloves in a food processor until minced. Add the basil and pine nuts, and pulse a few times to combine. With the food processor running, slowly pour in the olive oil, stopping once or twice to scrape down the sides. Place the Parmesan cheese, lemon juice, and red pepper flakes into the food processor, and pulse until blended. Season to taste with salt and pepper.
- Rub the flat iron steaks with 2 cloves minced garlic, season to taste with salt and pepper, then set aside. Preheat an outdoor grill for medium-high heat and lightly oil grate.
- Grill the steaks to desired degree of doneness on preheated grill, about 4 minutes per side for medium. Baste the steaks occasionally with a little of the pesto sauce. Once done, serve topped with the remaining pesto.

- Broil peppers 4 in. from the heat until skins blister, about 6-8 minutes. With tongs, rotate a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a bowl; cover and let stand for 15-20 minutes., Peel off and discard charred pepper skin. Remove stems and seeds. Cut peppers into 1/4-in. strips; place in a bowl. Add basil and garlic; toss to coat. Drizzle with vinegar and sprinkle with salt; toss to coat. Cover and let stand for 30 minutes before serving.

BASS STEAKS WITH BASIL-PEPPER COMPOTE

- In a large bowl combine the garlic, olive oil and lemon juice. Add the salt and black pepper and whisk well to combine. Slowly drizzle in the white wine. Add the onions and peppers, stir well to combine and set aside for 1 hour. Add the tomatoes and basil, stir and adjust seasoning with more salt and pepper to taste. Place the bass in this mixture and marinate for 1 to 4 hours.
- If using a charcoal grill, prepare the coals. When they are hot, remove the bass from the marinade and grill on each side for 5 to 8 minutes, depending on the thickness of the bass. After turning the fish, spoon the marinade over the bass and partially cover the grill so that the fish is allowed to smoke. Use a spatula to place each steak and its topping on plates and serve immediately. (If using a broiler, follow the same instructions, broiling the bass on one side, turning it, spooning on the marinade and broiling until done. Allow at least 4 inches between the fish and the flame to avoid burning.)

GIDDY-UP STEAK WITH ONION-DATE COMPOTE

- For the rub: In a small bowl, stir together the rub ingredients, making sure to smooth out any brown sugar nuggets. Then, pour half the mixture over 1 side of the flank steak and massage into the meat. Turn the steak over and pour the other half over the meat and massage in. Set aside on the counter up to 2 hours to marinate. You could also marinate the meat overnight in the fridge.
- For the compote: Heat the olive oil in a very large skillet over medium heat. Once the oil is shimmering (not smoking), add the onions, a pinch of salt, and stir to coat with oil. Cover and reduce the heat to low. Cook, stirring occasionally, until the onions turn a deep caramel color, about 45 minutes.
- Warm your grill or grill pan over medium heat.
- When the onions are caramelized, add the dates, vinegar, and water. Stir and cook, covered, for another 15 minutes.
- Fold a paper towel in 4, pour a little vegetable or canola oil onto it, and wipe down your grill pan.
- Once the grill pan is nice and hot (oil lightly smoking), throw your rubbed-down meat on. It should sizzle upon contact - if it doesn't, your pan wasn't hot enough. This is how you ensure a nice crust on the steak! After 5 minutes on 1 side, flip the steak over, and cook another 4 to 5. Check the temperature; I like my flank steak done medium-rare, so I pull it off as soon as the thermometer register 125 degrees F. Pull onto a chopping board, and tent with foil; allow your meat to rest for 5 minutes.
- Slice the steak thinly against the grain on the bias; if you don't, your precious steak won't be incredibly tender and deeply unsatisfying! Serve with a dollop of onion compote on top.

- Preheat oven to broil.
- Puree first 4 ingredients and 4 tablespoons oil in processor. Over medium heat bring stock and next 5 ingredients to simmer in medium saucepan. Add basil puree; stir just to heat through. Remove from heat and season with salt and pepper.
- Meanwhile, place fish on greased or foil lined rimmed baking sheet. Brush with 2 tablespoons oil. Sprinkle with salt and pepper. On top rack broil fish until opaque in center, about 4 minutes per side.
- Spoon sauce onto plates. Top with fish.

PEACH-BASIL COMPOTE
Daniel Skurnick, my past sous-chef, brought me this recipe, which came from his travels through Asia. Since Jean-Georges is also influenced by the flavors of Asia, it was a natural to incorporate this into the menu. It's a great combination of tastes and textures: The tender peaches contribute their sweet acidity; the rice has a nutty bite; and the coconut glaze contributes the fattiness that gives the dessert such a good mouthfeel.
Yield serves 4 to 6 on it¿s own or 8 to 9 as part of fourplay

- Mix the black and white rices in a bowl. Cover with cold water by at least 1 inch and soak overnight in the refrigerator.
- Line a bamboo steamer with a few layers of cheesecloth.
- Drain and rinse the rice and spread it out in the steamer with the bai-toey leaf. Set the steamer over a pot of simmering water and steam until the black rice is chewy but not crunchy, 3 to 4 hours. Check on the water, and if it's running low, replenish it with boiling water.
- Transfer the rice to a bowl, discard the bai-toey leaf, and stir in the sugar. Cover with plastic wrap and refrigerate until you're ready to serve.
- Mix the potato starch with a couple of tablespoons of the coconut milk to make a smooth paste.
- Put the remaining coconut milk in a small saucepan and stir in the paste and sugar. Bring to a boil over medium heat, stirring, and cook until thickened, about 2 minutes. Stir in the salt, transfer to a bowl, and cover with plastic wrap, pressing the plastic onto the glaze to prevent a skin from forming. Let cool before serving.
- Toss the peaches with the basil, lime juice, and sugar to taste. Macerate for at least 10 minutes.
- Divide the peaches among small bowls or dessert plates, using a ring mold if desired to make a neat shape.
- If the rice has hardened, microwave it for a minute or so to soften it.
- Top the peaches with a layer of the rice. Spoon the coconut glaze evenly over the rice and sprinkle some sesame seeds on top.
- You could make the rice with white sticky rice only.
