CAJUN CAKE
This cake was born on the bayou. It has a caramel-pecan sauce that soaks into the cake.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
- In a large bowl, sift together flour, 1 1/2 cup sugar, salt and baking soda. Add eggs, pineapple, and juice. Mix at low speed until well blended.
- Pour batter into prepared pan. Bake in preheated oven until a tester comes out clean, 30 to 35 minutes. Have the topping ready when the cake comes out of the oven.
- To Make Topping: In a saucepan, combine milk, 3/4 cup sugar, and margarine. Bring to a boil and cook for 2 minutes, stirring constantly. Add pecans and coconut and combine. Remove from heat.
- When cake comes out of the oven, pour on the topping and carefully spread on while cake is still hot.

- 1. Combine pecans, butter, 1 egg and cake mix, stirring until well blended; press in bottom of a lightly greased 13 X 9-inch pan. Beat remaining 2 eggs, cream cheese, and powdered sugar at medium speed with an electric mixer until smooth. Pour over cake mix layer. Bake at 325 F. for 40 minutes or until set. Cool in pan on a wire rack. Cut into squares.

- 2. Beat remaining 2 eggs, cream cheese and powdered sugar at medium speed with mixer til smooth. Pour over cake mix layer.
- 3. Bake at 325 for 40 minutes or til set. Cool in pan on wire rack. Cut into squares. Store in refrigerator.

- Melt 1/2 cup butter in a small saucepan over low heat. Add 3/4 milk and 1/2 cup water, and heat until hot (120 to 130 degrees). Add milk mixture to flour mixture and beat at medium speed with an electric mixer 2 minutes. Add eggs, beating well. Mix in remaining 3 1/4 cups flour. Turn dough out onto a well-floured surface and knead until smooth and elastic (about 10 minutes). (Or if you use a stand mixer, use a dough hook and knead until dough pulls completely away from sides and bottom of bowl.)
- Place dough in a well-greased bowl, turning to grease the top. Cover and let rise in a warm place (85 degrees), free from drafts, 45 minutes or until doubled in bulk.
