- In a small bowl, combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into 1-in. balls. Brown meatballs in a large saucepan; drain. Add broth, beans, tomatoes, carrot and Italian seasoning. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Add pasta; simmer until meat is no longer pink and pasta is tender, 10 minutes longer. If desired, top with minced fresh parsley and additional grated Parmesan cheese. Freeze Option: Divide cooled soup in 1-1/2 cup portions; freeze up to 3 months.

Bacon lovers unite! This recipe is a bacon lover's dream, with bacon 2 ways! Due to the BBQ sauce being sweet, I recommend using a spicy cheese (like habanero Jack).

Steps:
- Attach the meat grinder attachment to an electric stand mixer (such as KitchenAid®). Run enough bacon through the meat grinder to make 8 ounces ground bacon.
- Combine ground bacon, beef, bread crumbs, 1/4 cup barbeque sauce, and steak sauce in a bowl. Mix until well combined and shape into 2-inch round balls. Set meatballs on a baking sheet.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake meatballs until an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C), about 25 minutes.
- Place a slice of cheese on top each meatball. Toast slider buns if desired. Place a meatball between each slider bun. Top with cooked bacon slices, onion, remaining barbeque sauce, and roasted red bell peppers.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the beef, bread, onion, milk, salt and eggs. Shape into little meatballs, about 1 inch in size. Place the meatballs into a 9x13 inch baking dish.

BBQ MEATBALL SOUP
The weather this year for Memorial Day was wet and cold. For our annual church BBQ I wanted to do something different and desided a BBQ Soup was the thing. For the barbecue rub I use recipe #125138. I used my own recipe for the bbq sauce (I haven't published it yet because I never measure). You can use your favorite or a bottled one.

Steps:
- Combine the ground beef, gound pork, oatmeal, 3 tbl bbq rub, and eggs.
- Form into meatballs, I use a ice cream scoop then cut the scooped meat into fourths and roll them into balls. (A melon scoop would be perfect.) Place on a baking sheet.
- After all the meatballs are formed bake in a 350 deg oven for 15 minute (Larger balls need to cook longer.).
- In a large pot, heat olive oil, saute whole garlic cloves.
- Mash garlic when soft into oil.
- Add carrots and celery, cook for 5 minutes, stirring to keep form burning.
- Add onion, cook till onion is clear, stirring to keep from burning.
- Add green beans, corn, tomato, potatoes, beef broth, 3 tablespoons bbq rub and bbq sauce.
- Bring to a boil, simmer for 20-30 minutes, till carrots are tender done.

FLUFFSTER'S VERY BEST MEATBALL SOUP
I adapted this from a recipe from the Food Network, to meet my family's tastes. It's a wonderful soup that will become one of your favorites immediately It freezes beautifully, if there are any leftovers! Don't cut your spinach or basil with a knife, as it will turn the leaves black and not very appealing. Before your soup is done, taste it! This is where you make your final adjustments. Does it need more salt? Does the flavor of the basil come through? Be sure to add any extra spices at this time, not everyone likes the same amount of Italian seasoning, (for example) so season to your taste. This freezes very well. If you freeze soups, always leave at least 1 inch of head-space between your food and the top of the lid.I always buy whole tomatoes and crush them myself. Tyler Florence said that diced tomatoes were flavorless and nearly colorless, I agree! Note: in the Nutritional values, the calories, etc. are given for the WHOLE recipe, not per serving.

- Place a soup pot over medium high heat. Add the olive oil and heat. Add the chopped onion, celery, and carrot to the pot and cook, stirring with a wooden spoon, until the vegetables are soft, 3 to 4 minutes. Add the garlic and cook for 1 minute. Add crushed tomatoes and their juices, beef broth, tomato paste, 1/2 teaspoons of Italian seasoning, and 1/2 teaspoon of salt and stir to combine. Bring to a low simmer and simmer for 15 minutes.
- While the broth simmers, make the meatballs. In a medium mixing bowl, combine the ground beef, ground pork, eggs, 1/3 cup Parmesan, bread crumbs, 3/4 teaspoons of the Italian seasoning, and 1/2 teaspoons of the salt and, using clean hands, mix until thoroughly combined.
- Divide meat into tablespoons and roll into smooth balls with your hands. Set the rolled meatballs aside on a plate or other flat surface. Wash your hands.
- Carefully add the meatballs to the simmering broth. Gently stir, so as not to break up the meatballs Add the remaining 1/4 cup grated Parmesan. Simmer for 20 minutes, or until meatballs are cooked through.
- Add the ditalini and chopped spinach to the hot soup, stir well, and cook for 15 minutes, or until the pasta is cooked through. Stir in the chopped basil and serve the soup in wide bowls, garnished with additional grated Parmesan, if desired.

- Heat the oil in a saucepan. Fry the onion and peppers for 7 mins, then stir through the garlic and chilli flakes and cook for 1 min. Add the tomatoes, giant couscous and veg stock and bring to a simmer.

- Meatballs:.
- Mix all meatball ingredients together.
- Form into marble-sized meatballs. Refrigerate until ready to use.
- Soup:.
- In a extra large saucepan or stock pot over medium heat, heat olive oil.
- Add onion and sauté until tender and translucent, about 5 minutes.
- Increase heat to HIGH and add diced tomatoes, broth, Parsley, and seasonings; and bring to a boil.
- Reduce heat to LOW and simmer for 15 minutes.
- Remove meatballs from refrigerator; gently slip each into soup mixture and simmer over MED-LOW heat until meatballs are cooked through, about 25 minutes.
- Increase temp to MED-HIGH; add rice; cook for about 15 minutes; then add spinach and continue cooking for another 3-4 minutes.
- Remove from heat.
- Check and adjust seasonings.
- To serve:.
- Ladle into warmed bowls and garnish with Parsley sprigs and a sprinkle of shredded Mozzarella Cheese.
